Full responsibility of beverage operations. Designing seasonal cocktail and wine lists utilising new
products and seasonal produce. Staff supervision. Staff training on various products explaining
production methods, history and points of difference. Designing in house promotions for various
liquor brands. Complete responsibility of ordering all beverages. Stock take. Roster Management.
Programing POS. Consulting of beverage operations of new venues opening within the group.
Hiring of managers and staff for group. Management of beverage for off-site catering events.
During 2015 and 2016 I took on all bar design and operational responsibilities of the new
Mercado Restaurant opening with in the group. These takes included: design/ergonomics with
architects. Costing and ordering of all supplies including utensils and glassware. Costing of
beverages and liaising with alcohol suppliers on agreements and contracts. Staff hiring, training
and roster management. Programing POS system for both beverage and food. Training and
operation of weekly alcohol stock take.
