Costing and ordering of all supplies including utensils and glassware. Costing of beverages and liaising with alcohol suppliers on agreements and contracts. Staff hiring, training and roster management. Programing POS system for both beverage and food. Training and operation of weekly alcohol stock take. Restaurant Manager, MERMAID CAFE, DUBLIN 2009-2009 Full responsibility of restaurant operations. Staff supervision.
