Preheat oven to 200C or 180C fan-forced..(makes 12 standard cupcake-sized muffins) 2. Line the cupcake pans with paper cases. 3. Sift the plain flour, baking powder and cinnamon together into a large bowl. 4. Stir in the brown sugar and apples until well combined. 5. Whisk together the butter or margarine, eggs and milk until well combined. 6. Add wet mixture to the dry mixture and stir until just combined. * important that the ingredients are only just combined. If the mixture is over-mixed, the cooked muffins will have a tough texture. 7. Spoon the mixture evenly into the muffin pans. 8. APPLE CINNAMON MUFFINSINGREDIENTS

Melted butter (optional), for greasing

300g (2 cups) plain flour

1 tablespoon baking powder

2 teaspoons ground cinnamon

2/3 cup brown sugar, firmly packed

2 medium (about 375g) Granny Smith apples,

peeled & chopped into 1-2cm pieces

125g butter, melted, cooled

2 eggs, lightly whisked

180ml (3/4 cup) milk

METHOD

1. Preheat oven to 200C or 180C fan-forced..(makes 12 standard cupcake-sized muffins)

2. Line the cupcake pans with paper cases.

3. Sift the plain flour, baking powder and cinnamon together into a large bowl.

4. Stir in the brown sugar and apples until well combined.

5. Whisk together the butter or margarine, eggs and milk until well combined.

6. Add wet mixture to the dry mixture and stir until just combined.

* important that the ingredients are only just combined. If the mixture is over-mixed, the cooked muffins

will have a tough texture.

7. Spoon the mixture evenly into the muffin pans.

8. Bake the muffins in preheated oven for 20 minutes or until golden and cooked through. To test if they are cooked, insert a skewer into the centre of one - if it comes out clean, it is ready. When cooked, remove from oven and stand for 2-3 minutes before turning onto a wire rack. 

9. Combine a small amount of caster sugar and cinnamon in a bowl, dip muffin tops into the cinnamon sugar to coat.
