APPELLATION: Cava

VARIETALS: 40% Xarello, 40% Macabeo & 20% Parellada

AGEING: 9 months in the bottle

TECHNICAL: 12.5% Alc. / 5 g/l

TASTING NOTESIntriguing bouquet that opens up to reveal touches of white asparagus and dried herbs. The palate is nicely balanced with subtle citrus notes complemented by dried apricot and a touch of quince. It leads to a precise finish that could do with more length, but it is still an interesting Cava, one that is full of personality.

ANNUAL PRODUCTION: 120,000 btls.

EL XAMFRÁ

Founded in 1987 and now managed by oenologist Francisco Domínguez Ruiz, the son of the founders. Located in downtown Sant Sadurní, but in the process of moving to an old paper mill built in 1872 to expand production thanks to worldwide demand.

ABOUT CAVA

While Cava can be made in several regions throughout Spain, 95% is made with grapes from the limestone soils of Penedés D.O. (45 minutes southwest of Barcelona) with vines planted as high up as 2,800 feet. Cava grapes at those altitudes can be intensely tart, more akin to the structure of Champagne than the fat–styled sparkling wines California tends to produce. Unlike other sparkling wines like Prosecco, Cava is always produced using the Champagnois Method, where the secondary fermentation takes place in the bottle.

TASTING NOTES

Made in the northern part of La Mancha, in the province of Toledo using the revolutionary “flash-détente” technology. Albardiales is a young, fruit-driven wine, offering bright red berry and raspberry aromas, deep, vibrant and lively flavors on the palate, well balanced and quite refreshing on the finish. An outstanding value from an up-and-coming region.

ANNUAL PRODUCTION: 500,000 btls.

BODEGAS SAN ANTONIO ABAD

San Antonio Abad is a cooperative located in the province of Toledo, Castilla La Mancha with 450 members that together harvest over 2,000 hectares of vineyards. San Antonio is one of the very few wineries in Spain (and the world) using the flash-détente technology, an expensive piece of equipment that yields fresh, fruit-forward wines by heating the grapes and then sending them to a vacuum chamber to be cooled. This technology increases extraction from red grapes while minimizing bitter seed tannin and pyrazine (vegetal) odors. Read more.

THE LAND

Extreme continental climate, ranging from the 5ºF in the winter to 115ºF in the summer. Dryness is one of its most distinct characteristics, since its micro-climate prevents the entry of moist winds, presenting a low rainfall (300 to 400 mm per year), thus La Mancha is primarily a dry flat, farming plateau with over 3,000 hours of sunshine a year that yield beautifully-ripened fruit.

THE LAND

The warm location of the lands protects the area from the hot and humid Mediterranean winds which give a continental climate to the area with cold winters and hot summers with cool nights. The rains are very scarce, taking place in Spring and Fall. Everything favors the stress of the vineyard in the final stage of ripening. LA GRILLE & PIERRE LIEUBEAU

With his 85 hectare (200 acre) estate at La Fruitière, Pierre Lieubeau is one of the first serious independent producers to have planned an early move from ‘sur lie’ to ‘simple’ Muscadet as a means of offering fresher and more fruit-driven wines. Today he complements his classically mineral 'Sur Lie' Sèvre et Maine wines with this cuvée, specially made for the La Grille range, from the estate's younger - earlier ripening - vines.

ABOUT THE LOIRE VALLEY

Muscadet is the key appellation of the western Loire Valley around Nantes. The name covers exclusively white wines made from Melon de Bourgogne - the variety that was traditionally called Muscadet. The similarity between the name Muscadet and that of the Muscat grape family is sometimes the cause of confusion, but a single taste of a crisp, dry Muscadet wine will confirm that it is definitely not made from Muscat grapes. Muscadet has long been the go-to wine of choice for pairing with seafood.

Pouilly-Fumé is one of the Loire wine region's most famous appellations. The “Fumé” in the title actually means 'smoky' and refers to the gunflint character of the appellation's Sauvignon Blanc. There is a reliable fruity element in almost all Pouilly-Fumé wines. This tends towards gooseberry and citrus characters, which work in harmony with the wines’ high acidity, complementing the minerality rather than dominating it.
