town talk tidbitsthe Sovereign’s birthday the Queen’s birthday has been celebrated in Canada since the reign of Queen Victoria (1837-1901). an amendment to the Statutes of Canada in 1952 established the celebration of Victoria Day on the Monday preceding May 25. this year, that date is May 21, also known as May 2-4, and the unofficial start to summer. What are your plans?

Can i eat this? Some foods are safe to eat long past their expiry dates. Milk, for example, is usually good for one week after the best before date, whereas ketchup is edible for six months once opened. Start some fridge spring cleaning and find out what to toss and which to save at Stilltasty.com.

rec by the #saccording to our township’s website, Uxbridge is home to:» 9 baseball diamonds» 5 public tennis courts» 2 squash courts » 2 soccer fields» 2 ice pads» 1 swimming pool (25 metres long, 6 lanes, 83°F)» 1 curling club» 1 lawn bowling centre

Calling all fall fair fansEach September a dedicated group of residents put on our spec-tacular Fall Fair – and they need our help. From set up to clean up, volunteers are needed to keep this weekend-long celebration of food, games, dance, farming, animals, smashing cars and pulling trac-tors. Meetings start May 1 at 7:30 p.m. in Elgin park, Main Street just south of Elgin pond. Email [email protected] for more info.

the Uxbridge Countryside preserve is billed as the place “Where the Countryside Comes to town” and this is certainly a great description for this nature sanctuary on the edge of town. Located directly behind Walmart on Welwood Drive, you feel that you have escaped into the country as soon as you venture down one of the trails.

according to local birding expert Derek Connolly, it is possible to see between 30-50 species of birds in a day at the Countryside preserve from april to June, with morning being the best time to see many of them.

i set out to see for myself, visiting one recent sunny spring morning to discover this unique locale from the perspective of bird watchers; i have spent many hours walking in the preserve, but had never gone specifically to look for birds.

the Countryside preserve consists of 140 acres of mixed terrain on the oak ridges Moraine, and has 6 kms of well-marked trails. it is very accessible and is a popular spot for hikers, runners and people walking their dogs to get out in nature. there are some moderate slopes and uneven terrain, but overall, walking through

the preserve is quite easy. i was amazed at the number of different birds i heard and spot-

ted in a short period of time: tree swallows, chickadees, robins, red-winged blackbirds, sparrows, a mallard duck and a hawk. there were many more birds that i was not able to identify, and some that seemed determined to stay out of my sight.

Connolly says keen observers may also encounter american goldfinches, blue jays, starlings, grackles, crows, wood and pine warblers, chirping and song sparrows, northern orioles, woodcocks, rose breasted grosbeaks, a variety of woodpeckers including the downy, hairy, northern flicker and pileated, as well as savannah, field, grasshopper and clay coloured sparrows. The broad winged hawk and turkey vulture are often seen soaring over the fields.

the diversity of habitats in the preserve – meadows, wood-lands, wetlands and creeks – is one of the benefits. With a bit of patience and luck, you are able to find many different types of birds. in the spring, the Countryside preserve provides important nesting areas for many birds, including warblers, woodpeckers, wrens and swallows.

the nesting boxes set up throughout the preserve are used

primarily by tree swallows, house wrens and the occasional Eastern bluebird. tree swallows can be fairly aggressive birds and will chase away other birds from a box they have claimed as their own. however, if two boxes are placed in close proximity to each other, they will only defend one. For this reason, the nesting boxes in the Countryside preserve have been placed in pairs, several feet away from each other, ensuring there are still plenty of boxes available for nesting bluebirds and other birds.

if you go to the Countryside Preserve to do some bird watching or hiking, please be sure to follow the trail rules, including:

• Do not create new trails• Do not feed or aggressively approach wildlife, including birds• Carry out all garbage and litter• Respect the sounds of nature and avoid loud noises

if you are interested in monitoring a bird box in the preserve and being a “bird family caretaker” you can contact Derek Connolly at 905 852 5432.

Cosmos, the Township of Uxbridge flower, is a bright, easy-to-grow alternative for gardens. this hardy annual is native to Central and South america, and was cultivated by the early Spanish priests in their mission gardens in Mexico. Due to its evenly spaced petals they christened the flower “Cosmos,” from the greek word kosmos, which means “an orderly harmo-nious systematic universe.”

this light, feathery plant is delicate looking, but decep-tively hardy. it’s heritage and old fashioned look is the reason it was chosen to represent Uxbridge, says Mayor gerri Lynn o’Connor.

“the Cosmos was picked because it stands so tall, and is an old flower,” she says, adding its varying colour palette is really appealing. “i thought it really represented our heritage and his-tory.”

Quakers from Catawissa, pennsylvania began settling in Uxbridge in 1806.

in 1997 the township and its Uxbridge Blooms commit-tee asked the public for suggestions for a community flower. Several were put forth, with samples of each brought to council by then goodwood gardens owner David gribble, Mayor o’Connor remembers. the Cosmos was suggested by Ux-bridge resident John taylor, a member of the Uxbridge horticul-tural Society at the time.

gifts for Mom’s DayStory // CarLy FoStEr Cosmos belongs to the family of plants known as Composi-

tae, and consists of more than 20 species. the most common are easy to spot: C. sulphureus are shades of yellow, orange and red, with leaves that are long, with narrow lobes and hairy margins. The flowers of C. bipinnatus vary from the palest white to solid or variegated shades of pink to dark rose. the leaves are finely cut, and are similar in appearance to dill or ferns.

in contrast to many other annuals, Cosmos prefer hot, dry sites and poorer soils. purchase boxed plants at your local nursery, or sow seeds directly into the garden in april or May directly. Consistent with the site selection, do not over-water or over-fertilize the plants, as this will result in tall “leggy” plants with decreased flower production.

there are no diseases or pests that affect Cosmos, so care is easy: simply deadhead the spent flowers and they will continue to bloom well into the fall. allow some of the seeds to fall in your garden, as they will readily self-seed for the next year.

Celebrate the township of Uxbridge in your garden this year!

Losing Micky so suddenly and tragically has been a lot to deal with and the past three years have been a huge adjust-ment for Dorothy. Love and support has come from many sources – some of them unexpected. For instance, she has formed a friendship with the wife of the other man killed in the plane crash, and even visited her and their children at their home in South africa. Dorothy she has been fortunate to have had such amazing sup-port from her church, family, staff and others in the community. Everyone rallied around her and their love and support was evident. She never felt like she was alone, and cannot imagine what it would be like to go through this experience without all of the support she has received.

Dorothy returned to work at Uxbridge travel almost immedi-ately after Micky’s death, as it felt like a safe place for her. her staff is like family to her, and it was comforting to be with them. She remembers how people in the community made her feel loved. Still being rather numb from the shock of the accident, she would walk down the street in town and other business owners would come up to her and give her a hug. it is clear that this kindness still touches Dorothy’s heart.

one of Dorothy’s greatest passions in life is playing the piano. She started taking piano lessons at the age of six, and has been playing ever since. While she does not view herself as a performer, Dorothy greatly enjoys accompanying others and plays at church services. She also plays accompaniment to the Monday Morning Singers in town, and to vocalists performing at the Sunderland Music Festival.

Faith continues to remain very important to Dorothy, and she firmly believes that every person is special and deserves to be loved. She has volunteered at the Central East prison in Lindsay for the past six years, by helping to provide a weekly Christian service for prisoners. this is something she and Micky used to do together, and she has continued to do it for the simple reason that she wants to share faith and love.

Dorothy values the time she spends with her parents, children and grandchildren, and is happy to be part of such a caring community.

She recently sold greenbank airport, and is also looking for-ward to upcoming renovations to Uxbridge travel that are being planned for this summer.

the respect and admiration Dorothy Jovkovic has for her community is evident right from the start.

Dorothy has lived in Uxbridge all her life. in fact, she was the first baby born at Uxbridge Cottage Hospital, shortly after it opened. She jokes that there was a bit of a rivalry among the women who were in the maternity ward at the same time as her mother to see who would deliver their baby first.

While there have obviously been changes as the town has grown over the years, Dorothy believes that Uxbridge has been able to retain its small town feel. one of the things she loves most about living here is the real sense of community, with people caring about each other and looking out for one another. She appreciates and respects all of the good work being done by businesses, organizations and hard-working volunteers in town, and says it is apparent that Uxbridge residents genuinely want to see the community do well. She thinks it is a great place to raise a family.

Dorothy has been the owner operator of Uxbridge travel for the past 25 years. Most of the travel business comes through referrals and word of mouth, and she is proud of her staff and the service they provide to clients.

Dorothy and her husband Micky owned greenbank airport for many years. Micky was a people person in every sense of the word. he was outgoing, friendly and loved to meet people. Faith was important to both of them, and he and Dorothy used to operate a fly-in church service out of the airport hangar in the summer months. Pilots would fly their small aircraft to the airport on Sundays, and the families shared fellowship and meals. the Jovkovics believed that church is more about people coming together than the physical building itself. in July of 2008, they were interviewed at the airport by 100 huntley Street about their unique church service. Five days later, Micky was tragically killed when his small aircraft crashed shortly after takeoff. it was a shock to the entire community.

i love granola. it’s stuffed with heart-healthy fats, whole grains and a touch of sweetness, and stays nice and crunchy in milk – one bowl keeps you filled all morning. It’s also fantastic on top of yogurt and an energy-inducing on-the-go snack for grown ups and kids alike. its versatility means you can toss in whatever sweeteners and nuts that make you smile. this recipe is also gluten-free, super fun for the kids to measure out and stir, and would make a lovely edible Mother’s Day gift.

Spread mix over foil- or parchment-lined cookie pans, spread-ing out evenly.

Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even colour and toastiness.

Let cool, then add dried fruit. this recipe is easily doubled, and freezes well. I store it in a mason jar with a tight-fitting lid.
