In the skin, glucose can react with proteins such as collagen fibers. This leads to the formation of new residues: Advanced Glycation End ( AGE )products that act as chemical bridges between collagen fibers.

This slow non enzymatic process is called glycation, causing skin proteins « caramelization » (including collagen fibers) at the origin of dull and yellow complexion seen in surface.

Glycation Is Also Induced by Exposure to UV raysExposure to the sun, known to prematurely age skin, has also been found to increase glycation. It was published that, even in young women more AGEs staining are observed in sun exposed skin than in sun protected skin suggesting that UV irradiation increases dermal glycation.

Glycation Increases with Age Glycation in the dermis generally begins after age 35 and increases rapidly with aging, and the amount of glycation-induced AGEs increase proportionately.
