Hospital regulations require a wheel chair for pa-tients being discharged. However, while working as a student nurse, I found one elderly gentleman al-ready dressed and sitting on the bed with a suitcase

at his feet, who insisted he didn't need my help to leave the hospital.

After a chat about rules there being rules, he reluc-tantly let me wheel him to the elevator.

On the way down I asked him if his wife was meet-ing him.

1. Prepare rice as label directs.2. Meanwhile, in nonstick 12-inch skillet, heat oil over medium-

high heat until hot. Add vegetables and cook, stirring constantly, until evenly coated with oil. Cover skillet and cook 3 to 4 minutes longer or until vegetables are tender-crisp, stirring occasionally.

3. In 1-cup liquid measure, combine stir-fry sauce and corn-starch until well-mixed. Add shrimp, pineapple with its juice, and stir-fry-sauce mixture to vegetables in skillet; cook 4 to 5 minutes or just until shrimp turn opaque throughout, stirring occasionally.

4. To serve, spoon rice onto 4 dinner plates; top with shrimp mixture. Makes 4 main-dish servings.

Roasted Shrimp ScampiThis popular Italian restaurant pick gets a diet-friendly up-

grade: It uses olive oil instead of butter.

Salt 1 large lemon 1 pound asparagus, trimmed and cut into 1-inch pieces 4 teaspoons extra virgin olive oil 2 cloves garlic 1/4 cup packed fresh mint leaves 1/4 cup fresh basil leaves 12 ounces (26- to 30-count) shelled and deveined shrimp 1/8 teaspoon crushed red pepper 1 box (13.25-ounce) whole-grain-blend spaghetti

1. Preheat oven to 450 F. Heat large covered pot of water to boiling; add 1 teaspoon salt. From lemon, grate 1 teaspoon peel and squeeze 1/4 cup juice.

2. In bowl, toss asparagus, 2 teaspoons oil and 1/4 teaspoon salt. Place in 18-inch by 12-inch jelly-roll pan. Roast 5 min-utes.

3. Meanwhile, mince garlic, mint and basil. To same bowl, add shrimp, garlic, lemon peel, pepper and half of mint; stir to coat. Push asparagus to one side of pan; arrange shrimp on other side. Roast 5 minutes or until shrimp just turn opaque.

4. Cook pasta as label directs. Reserve 1/2 cup cooking water. Drain pasta; return to pot with asparagus, shrimp, lemon juice, basil, reserved cooking water, 2 teaspoons oil, 1/8 teaspoon salt and remaining mint; toss to coat. Serves 4.

• Each serving: About 455 calories, 8g total fat (1g saturated), 33g protein, 74g carbohydrate, 14g fiber, 129mg cholesterol, 465mg sodium.
