Do you have a favourite journey? Mine is a day trip to France from London that I have been taking for a couple of years now. The purpose of the trip is commercial. The brand of tobacco that I smoke is sold only in France. Plus, tobacco is much cheaper there than anywhere else I go, even counting travel costs.

The trip is an adventure. It begins with choosing a date for travel and then phoning the tabac in Calais, to order the supplies 10 days in advance. The shop is run by two cousins. Both are named Cousin. This makes the opening of the phone conversation easy. I say: “Monsieur Cousin?” and whoever it is, he replies “Oui”.

Then comes the tricky part. My French is rusty. Ordering large supplies of tobacco requires technical knowledge. My order is 75 packs, the arbitrary limit enforced by UK Customs goons. If I use the wrong word for pack, or carton, I could end up with a ton and a half of the stuff. After the call, I have a week and a half to worry about what I might actually have ordered.

Then comes the day itself. It’s a 12-hour round trip to the land of the cheese-eating surrender monkeys. It goes like this: a cab to the train station in London. An hour’s train ride to Dover, at the edge of England. The ferry that ploughs its way across the Channel’s shortest route for 75 minutes. A cab from Calais docks to the Cousinses. The loading of the bag with swag, and off to the restaurant where a late lunch is taken. Thence to the docks and the ferry and the train and the cab and home, sweet home.

That is my idea of travel. Some folk like to go to a beach, cover themselves in oils and roast. Others don scuba gear or skis and rush off to do things to break the dull monotony of their lives. I go to France for that very purpose. If you think that writing for a living, having sex with an endless array of beautiful women and holding forth in the company of wits and roustabouts is all fun, you’re dead wrong. Or, you might be. I wouldn’t know. I can tell you that sitting in a kitchen typing for a living requires the odd day out, lest one misplace one’s cool.

Before you write in to tell me to give up smoking: I like smoking. I smoke ‘em when I got ’em, and I always got ‘em. I’m hardened: bring me a baby and I’ll blow smoke right at it, so that when it encounters second-hand smoke later in life, it will be acclimatised. Also, it might become a smoker.

Call the gendarmes. You got me. I’m a villain. I’ll be in France next week. I’m spending a couple of days in Calais,

sitting in the public gardens smoking other brands, to see if there’s one I prefer. Ain’t life grand?

I recently participated in an educational seminar hosted by the Carolinas PGA Section. The guest speaker was Michael Breed, host on the Golf Channel’s The Golf Fix. If you get the chance to join one of Michael’s seminars, I recommend it, you won’t be disappointed. Michael is full of energy and provides a meaningful and entertaining presentation.

I share a passion with Michael and that is putting. I recently wrote on this topic, but after Michael’s seminar I felt it important enough to make it this month’s topic. Statistics say that golfers will take a putting lesson once every four years. Michael has spent countless hours studying the putting stroke and his findings are backed up and supported by many of the top putters in golf.

One of the most important aspects is the grip. I have always recommended that the putter should be held in the palms. Michael agrees, but uses a better explanation for positioning the grip. He suggests that the putter grip should rest in the life lines of your palms. The life line can be found by closing the thumb towards the base of the fingers. You will see the crease as it circles the base of the thumb. You can place a pencil in the creases of both hands and then lay the putter grip on top so that it parallels the direction of the pencil. Immediately you will see how the hands are underneath the putter grip. The grip will assist in stopping wrist hinge in the stroke.

Another interesting aspect in Michael’s teaching includes the reduction of loft on the putter. One of golf ’s best putters, Dave Stockton has always put lead lag or a forward press on his putter, (moving the hands forward causes reduced loft.) The result is a ball that stays on the green and rolls on one axis instead of hopping in the air with rotation on one axis and then rolling on the green with rotation on a new axis resulting in putts that roll off line. Stockton’s teaching is currently in use with Michelle Wie, J.B. Holmes and one of golf ’s best Phil Mickelson. The method may be most evident in Mickelson’s strokes from ten feet and in. You will recognize the movement when you watch the next televised event Mickelson plays.

Ball position should remain in line with your spine, or forward if you place more weight towards your front foot and farther back if you do the opposite. While it’s exciting to boom drives down the fairway, the real scoring is on the greens. Why not stop by your PGA Professional and find the best way to reduce your scores. Watch for Michael’s new Training Putter Grip this summer. The grip will have contours for your fingers and will position your hands in the correct manner.

The oLd recToryBroad Alley, St. George’s, behind St. Peter’s Church Built in 1699, this charming cottage on one of the numerous picturesque back streets in St. George’s is one of Bermuda’s oldest houses. Acquired in 1700 by Captain George Dew, an unsuccessful privateer who became a St. George’s assemblyman, The Old Rectory acquired its current name when it became the residence of the Rev. Alexander Richardson in the last quarter of the eighteenth century.

ToWn haLL and The sTaTe hoUseTown of St. George Town Hall, the handsome building commanding King’s Square and bearing the town crest was begun in 1802, a few years after the Corporation of St. George’s was founded in 1797. The State House, located up a gentle elevation behind Town Hall, is one of the island’s oldest, most historically important buildings. Erected around 1620 by Governor Nathaniel Butler, the State House is open to the public 10am-4pm on Wednesdays only.

The UnfInIshed chUrch Duke of Kent Street, St. George’s The impressive Gothic vestige that looms over the town of St. George’s was begun in 1870 as a replacement for St. Peter’s, which had fallen into a state of serious disrepair. Designed by William Hay, the Scottish-born architect who later drew the plans for Hamilton’s cathedral, the St. George’s church was abandoned in 1899 when near completion.

forT sT. caTherIne St. Catherine’s Point, St. George’s Fort St. Catherine stands on the site of one of the four towers that Governor Richard Moore erected along Bermuda’s coast around 1613. None oftheseoriginaltowers,thefirstEnglishfortsintheNewWorld,survive.Thepresent, completely restored structure dates from the mid-nineteenth century and is home to fascinating exhibits including military guns and weapons. Fresh tomato sauce chopped garlic, thyme, Oregano, basil and parsley

Add all ingredients in a large pot and bring to a boil. Then simmer for 30 minutes.

FAMOUS ROBIN HOOD BURGER Ingredients:

3 lbs certified Angus ground beef, 3 tbs chopped onion 1 tbs chopped garlic 1tbs chopped parsley 1tbs salt 1tbs ground black pepper        

Mix all the ingredients together in a bowl, make the patties and grill it. Preheat the grill to 350º. It’s that simple and top with your favorites and enjoy.

3. Reduce the heat under the skillet to medium-high,  then add the ginger garlic paste and all the spices. Add the tomato paste and crushed tomatoes, return the chicken to the skillet, pour the coconut milk into the mixture and bring to a  boil. Sprinkle the cilantro over the chicken, salt to taste. family drink 1 oz of peach schnapps 1 oz of Finlanda Vodka 8 oz of ginger beer Splash of grenadine Fill glass with ice. Add the peach schnapps & Finlandia Vodka. Fill glass to the top with Bermuda one & only ginger beer. Just a splash of grenadine. Garnish with an orange.

black & blue 1 oz Gosling’s Black Seal Rum    8 oz of PepsiFill highball glass with ice. Add 1 oz of Gosling’s Black Seal Rum. Fill to the top with Pepsi. Garnish with a lime or lemon.

Kite flying and snacks what a great combination, something right out of a great game day playbook. Here in Bermuda Good Friday is like a triple play in American baseball, you get to touch three bases, Church, kite flying and food. The two usual game day foods are Hot Cross Buns and Codfish Cakes. Of course there are the traditional recipes passed on from generation to generation, just like the stories of Mantle, Mays or the Babe himself; But new faces are dominating the game now like Gonzales or Inge, the Players Choice Award winners this past season and new recipes are becoming hits and I’m going to share some of those with you .

peanut butter White chocolate chip hot cross bunsMakes 16

For the buns:2 tablespoons instant dried yeast 1/2 cup sugar 1.5 cups lukewarm milk 4.5 cups plain flour 1 teaspoon salt 2 ounces butter melted 1 egg lightly beaten 1 teaspoon cinnamon 1.5 cups of Hershey’s white chocolate chips 1 cup peanut butter chips melted with 2 teaspoons

of ground cinnamon and chopped up)For glaze:

1/4 cup sugar 1/4 cup hot water 1 teaspoon gelatin or 1/2 gelatin leaf soaked in cold water

For crosses:2-1/2 ounces white chocolate

1. Mix yeast, sugar and warm milk in a bowl and stir to remove any lumps. Set aside for 15 minutes until it becomes frothy.

2. In a large bowl, or the bowl of your mixer, sift flour and salt. Make a well in the centre and mix in the yeast mixture, butter, egg, cinnamon and one third of the chocolate chips.

3. Knead dough for 5 minutes until elastic and place in a greased bowl covered with cling wrap in a warm area (or sit your bowl in a larger bowl of warm water). Leave for 1 hour to 1.5 hours until doubled in size.

4. Using your fist, punch down the dough and add the remaining cinnamon chocolate chips. Knead lightly and divide into 16 balls. Place close together on a lined or greased baking tray. Cover with cling wrap and allow to rise in a warm place for 20 minutes. Preheat the oven to 200C/400F.

5. Bake for 20-30 minutes until done. While it is baking, get the glaze ready. For the glaze, simply mix all three ingredients together shortly before the time is up on the buns.

6. When buns are ready, brush with glaze. I like to do this quite generously and glaze the sides too but this does make them quite sticky to handle.

7. Melt chocolate in a microwave proof bowl and spoon into a piping bag fitted with a small plain nozzle. Pipe lines across buns to make crosses. When chocolate has set, serve slathered with butter.

southern style fish cakes 6 Servings Size

Ingredients:6 mahi mahi fillets 1/2 medium onion, chopped 1 tbls jalapeño peppers, diced1/2 teaspoon salt 1/4 teaspoon pepper 1 lb sweet potato 1/2 cup milk 1 egg, beaten 1 tablespoon chopped fresh parsley 1 tablespoon chopped cilantro1/2 cup all-purpose flour Shortening, for deep frying

Directions:Prep Time: 10 minsTotal Time: 50 mins

1. Poach the fish in water with the onion, salt and pepper for about 20 minutes.

2. Peel the yams and chop roughly and cook 20 minutes in boiling water until tender.

3. Drain yams and mash until smooth. 4. Add milk to the mashed yams. 5 . Flake the fish and discard the skin. 6. Add fish to the yams. 7. Add beaten eggs, cilantro, parsley and jalapeño peppers, mixing well. 8. Divide mixture into 12 portions and form into fish cakes. 9. Place flour in a shallow bowl and coat cakes in flour. 10. Fry in hot oil, turning cakes to brown both sides. 11. Cook until browned and crisp.
