{ EXPERTS WANTED } WORK WITH THE RINGEach year, The Wedding Ring is honouored to work with some of the most unique and talented experts in Southwestern Ontario, helping these professionals grow their wed-ding industry businesses. In that effort, we operate on the proven theory that Content is Queen!

At The Ring, we research, create and curate quality, need-to-know, wedding-changing, life-saving content, year-round, alongside our clients. We then deliver it all in print (The Wedding Ring Magazine) and online (www.TheWeddingRing.ca) formats to a geographically targeted bride and groom audience. As a result, our clients book more weddings and our bride and groom members find it easier to plan the ultimate local wedding.

And on the odd chance you ever find Jenn, Anne and the team at The Ring more than a few feet away from their wifi connections, it’s likely because you’re at one of The Ring’s Wedding Expo events which take place seasonally in Kitchener-Waterloo, London, Brant-ford, Newmarket and various other areas across Ontario. Couture bridal shows filled with over the top exhibits, live design palettes, and many, many engaged couples.

If you’re a wedding professional who offers products that every bride should have, raises the bar on service and rewrites the definition of couture, we’d love to work with you - online, in print, and/or in person. The Wedding Ring will help you reach your target brides, share (and show off) your expertise, grow your business and make headlines.

WHEN TO SEND OUT your wedding stationery

From customized invitations that are entirely tailored to your wedding day, to beautiful paper options for the perfect DIY project, Danika Kempel (left), owner of Uptown Designs (♥) has custom stationery options for every wedding theme, style, and budget. In this featured expert tip, Danika shares the answers to the question she is asked more than any other; “When do we send out our wedding stationery!?”

Stationery timeline? Okay. Danika totally gets that this topic isn’t exciting at first glance, but she can also tell you that it really is necessary information when you are planning your wedding! “Throughout my years in business, THE most popular question is; When should I send out my invitations?” And so to answer this,

Danika says, “I decided to put a handy little chart together [right] for all of you lovely couples who have this burning question! This chart will give you an overall idea of the timing for ordering and sending stationery related to your wedding.”

DANIKA MAKES A COUPLE OF ADDITIONAL SUGGESTIONS...1. If you are planning a destination wedding, sending out ‘Save The Date’ cards is essential! Guests will have to budget and plan ahead for this, so giving them as much time as possible is always in very good taste. 2. Even though the general rule is to send your invitations out 6 to 8 weeks before your wedding, there are exceptions. For example, if you are hosting a local wedding and have not sent out a Save The Date, you should give your guests a little extra time - 8 to 10 weeks ideally. And if you host your wedding on a long weekend, send your invites out 10 to 12 weeks ahead.

For a digital version of this timeline or if you have any questions about customized stationery, Danika invites you to drop her a line at [email protected], give her a call at 519-722-2462 or visit her online at www.uptowndesigns.ca. MAKING SURE YOU CHOOSE THE RIGHT DJ for your wedding With so many wedding DJ’s local to Southwestern Ontario, it can be difficult to wade through the options and find the right fit for your wedding day. From timelines to experience to their music reserve, asking key questions can be the difference between hiring a good DJ and a great DJ. Here are Music Central’s (www.musiccentral.ca) (♥) tips for choosing the right DJ for your wedding...

INDUSTRY AND VENUE KNOWLEDGE: Your DJ has likely played at your venue before and knows some important details about your venue that will help create a stress-free wedding day - from staff to logistics, nuances and acoustics. For example, Rob knows that he needs a 125 foot extension cord at certain locations, where to find that outlet hidden under the ivy at other locations, and he knows when he needs to bring a mat to cover the cord if it’s going to cross a walkway!

THE RIGHT DJ HAS EXCELLENT TIMING: A solid timeline will make for a seamless and stress-free wedding day. Your DJ can help you with your timeline which will dictate not only the tempo of the day, but also ensure that everything is in place before your guests even arrive.

EXPERIENCE IS EVERYTHING: An experienced DJ can set the tone for your reception. The more wedding experience your DJ has, the more likely they are to be prepared for any hiccups and last minute changes. An experienced DJ knows how to play to the crowd and can help create a memorable reception for you and your guests.

PASSION MAKES A BIG DIFFERENCE: A passionate DJ loves what they do and aims to create the best possible experience on your wedding day. Find out if your DJ is full time or if he/she approaches their business as more of “a part time gig” on the occasional Saturday.

LOOK FOR A LARGE, LEGAL MUSIC DATABASE: It’s all about the music! Ask yourself this: Does your DJ offer a massive reserve of (legal!) music? If they don’t have a specific song you’re looking for, will they be able and willing to find it for you? Your DJ should be willing to go the extra mile to make sure that your playlist is everything you hoped for on your wedding day.

EVERY GOOD DJ HAS A BACK UP PLAN: Your DJ should always have a back up plan in case of emergencies. This includes both back up equipment and back up DJ’s. Companies such as Music Central work as a team throughout every event

they take on, which includes having a Field Manager on staff. A Field Manager goes to all events in case any type of back up help is needed.

LOCATION, LOCATION, LOCATION! Your DJ should be positioned near the dance floor so they can easily interact with your guests. Some halls and caterers will place the DJ too far away from the main hub of activity so it’s important to know exactly where they’ll be positioned on your wedding day.

EXTRAS: Find out if your DJ offers fun extras such as photo booths, projected monograms for the wall or dance floor, and online music request tools. Additional options can include providing generators, slide show equipment and more. In the end, all of these can come together to add to the overall experience of your big day.

Owner of Music Central (www.musiccentral.ca), Rob Aitken, DJs events for his company fifty out of fifty-two weeks a year, allowing him to keep in tune with what services couples are looking for. Music Central is also fully staffed with an additional ten DJs - all trained, equipped and ready to provide music that’ll keep your guests dancing all night long!

IMAGE, above: taken via the Music Central Entertainment Open Air Photo Booth. Music Central offers Open Air Photo Booth services as an option that can be added to many of their DJ packages. These photo booths have become one of Music Central’s biggest requests. You can find more details on Music Central’s photo booths on their website at www.musiccentral.ca.

If you’ve ever considered making your own wine, this feature article, written by The Wedding Ring Magazine, alongside James Fields, Owner of Vintner’s Cellar Waterloo, will tell you everything you could possibly ever need to know about making your own wine. That said, it all boils down to the fact that at Vintner’s Cellar, it’s about ensuring your wine making experience is simple, easy and affordable. From liquor license to labels, here’s everything you need to know about making your own wine with Vintner’s Cellar Waterloo...

LOOKING AHEAD BEFORE GETTING STARTEDBefore you get started, you need to make sure you’re giving yourself enough time. After all, good wine doesn’t like to be rushed! James recommends that you start your wine at least six to nine months before your wedding date so that the wine can properly age in the bottle before being served.

IT’S EASIER THAN YOU THINKNever made your own wine before? No problem! Vintner's Cellar says that any bride and groom can make their own wine in three easy steps...

1) Choose the type of grape and the quality level of your wine.2) Add the yeast to the grape juice.3) Come back in six weeks and bottle your wine using state of the art equipment.

WHAT TO PLAN FORLiquor License: You will need to apply for a Special Occasion License if you intend to serve the wine at the wedding. No license is required if you intend to give the wine away as your wedding favours.

Is DIY Wine Allowed at the Venue? Confirm with the location you have chosen that they allow you to bring your own wine. If they do, you should find out if there is a corkage fee. A corkage fee is a service charge (charged per bottle) for serving the wine. If there is corkage fees, consider reducing this cost by using larger bottles.

Which Type of Wine Should You Choose? The type of wine you choose should pair well with the food you plan to serve. Vintner’s Cellar Waterloo can help you choose an appropriate wine for your special day. If it’s easier, you can look through Vintner’s Cellar Waterloo’s wine descriptions on their website for appropriate wine pairings.

LABELSVintner’s Cellar offers free customized label upgrades on any batch of wine that is to be used at a special event. You can view their customized labels at www.vintnercellarwaterloo.com.

BOTTLESBottles come in various sizes. Vintner’s Cellar offers;■ 375ml Ice Bottle - $2 each■ 750ml Clear Bottle - $1.15 each■ 750ml Green Bottle - $1.15 each■ 1500ml Green Bottle - $3 each

PRICING (AKA SAVINGS!)All of the kits at Vintner’s Cellar make approximately 30 bottles of wine. The average cost for 30 bottles from the LCBO will be about $450 in comparison to the prices below:■ Concentrate Kits (Cost is $157.82 with tax and 30 new 750ml bottles included)■ Supreme 100% Juice (Cost is $212.82 with tax and 30 new 750ml bottles included)■ Vintner’s Reserve (Cost is $252.82 with tax and 30 new 750ml bottles included)

QUALITY INFLUENCES FLAVOURThe quality of wine you choose influences the flavor. Vintner’s recommends the 100% Juice quality level for weddings because of it’s excellent value for the price...Quality Level Equivalent Bottle Cost at LCBOConcentrate $10 - $12100% Juice $15 - $25Vintner's Reserve $35 - 45

HOW TO DETERMINE THE QUANTITY YOU NEEDVintner’s Cellar offers an equation that makes it easy to determine how many bottles of wine you will need (750ml) for your reception...

(# of Guests - # of Non Drinkers ) X 2 Glasses per person------------------------ divided by ----------------------------

4 glasses per bottle= # of Bottles (750ml)

For Example: A wedding with 200 guests of which 10 are children would be calculated like this... 200 adults - 10 non-drinkers/children = 190. Multiply that by 2, resulting in 380 glasses of wine. Divide that by 4 glasses per bottle and you’ve got 95 bottles, which is either 3 batches (90 bottles) or 4 batches (120 bottles) or DIY wine. “The typical wedding is 4 batches of wine (120 bottles) with 2 batches of red wine and 2 batches of white wine,” explains James who adds that it’s always better to have more wine than you think you will need. Extra wine bottles can make excellent gifts for your guests and can be used for wedding showers and bachelor parties leading up to the wedding.

James Fields and the team at Vintner’s Cellar Waterloo can be reached in person at the store (283 Northfield Drive East, Waterloo), by phone (519-725-WINE), or online (www.vintnerscellarwaterloo.com). “We would be happy to discuss your options.” You can also read The Ring’s review on Vintner’s Cellar Waterloo at www.theweddingring.ca/reviews-in-the-ring/vintners-cellar-waterloo.

DOUBLETAKE INVITATIONS’ FAVOURITE THINGS

Tracy Schabl, owner of DoubleTake Invitations (♥), offers a fresh, unique approach to invitations, not to mention endless stock choices and competitive pricing (in Tracy’s own words, “custom doesn’t have to mean expensive!”). All of these factors come together to make up just a part of what Ontario brides love most about Tracy’s work. In this featured expert tip, Tracy shares some of her company’s favourite stationery suites from recent weddings...

RUSTIC TRENDS [IMAGE, below, 2nd from left] Rustic Invitations were a very popular choice for DoubleTake’s clients this year. The combination of a chalkboard design, textured chocolate “bark” pocketfold, pop of metallic blue and orange and mason jar elements helped to make this invitation suite stand out.

PERSONALIZE YOUR MESSAGE [IMAGE: www.2tonestudios.ca (♥)] With the option to personalize both sides of a reception table stationery piece, you can share two personal messages with guests. In this example, seen left, the bride and groom display a menu on one side and a thank you note on the other.

These were placed on each table throughout the reception, offering a warm welcome to readers.

SHAPING UP YOUR STATIONERY [IMAGE: www.2tonestudios.ca (♥)] The unique shape of this wedding invitation will make your quests take notice. Blue pops of colour add to the distinct design.

VINTAGE FALL FAIR MAKES FOR STYLISH INVITATIONS [IMAGE, below, far right] Fresh, fall colours work together to create a whimsical “Fall Fair” vintage style design, complete with Ferris wheel seal and coordinated seating chart - perfect for this couple’s “fall fair” themed wedding!

RAINBOWS & DAISIES [IMAGE: 2tonestudios.ca (♥)] Colourful daisies in rainbow colours make these booklet style wedding invitations romantic, memorable and fun.

Have a fun, experienced DJ with a great personality. “This will certainly win over a lot of wedding guests.”Make sure your DJ is a great public speaker. “Engaging your guests is just one of many skills that will help make for a most memorable reception. Just remember; great doesn’t mean overbearing...this wedding is ALL about you and your guests, not about the DJ.”Work with your DJ to design your ultimate wedding soundtrack. Since this is your day, you should play a part in choosing the music. “Let the DJ guide you, not direct you.”Your wedding DJ should never be drinking. Period. There's a lot of responsibility that comes along with being hired in this role, certainly more than enough to keep a pro on their toes while sober. “Besides which, DJs are hired as professionals to run the party, not to join it...who needs alcohol to have a good time anyway? Great music works much better than alcohol!!”Ensure your DJ has all of your ‘Do Not Play’ songs for your event in advance. “This is extremely important. Many times, a ‘Do

Not Play’ list for one event has songs that guests could possibly love and want to request but for your party you’d prefer not to have them. There is often a very personal reason for this; this is YOUR party so make it uniquely yours!”If you’re getting married, think outside the box! “Many of our couples do not want the same wedding traditions that have been present in most weddings for so many years. You do not need to have all of these traditions if you don’t want them! It’s YOUR day! We’re here to give you the absolute best advice for your wedding, always thinking about what you want and especially focusing on the flow of your event. The flow can’t be stressed enough! Think of your guests too, and they will love you even more for it!”Talk about timing with your DJ. “Let’s work together to create a wedding day timeline that works for you, your family and your guests. This is what we do! It’s probably the biggest struggle that our couples face, and so we utilize our resources to help out in this area. A little tip: most guest complaints surround around timeline issues!”Classy, yet fun should be the goal. “You can choose to have your wedding reception as interactive or non-interactive as you like. Interactive doesn’t mean you need to have cheesy games you don’t want. Let’s work together to get just what you what.”It's all about tempo and song choice! When selecting songs for your wedding dance party, listen to the songs you are considering and ask yourself two questions; "Can we dance to this song?” and “Will our guests recognize this song?” Mark explains, “The goal is to play music across all genres and decades, tailoring to people of all ages with songs that simply make guests want to shake their booty! We like to call it dancing through the decades.” ■

When you’re planning your dream wedding, location is everything. You likely want space yet privacy, plenty of gardens yet also plenty of parking, outdoor options and indoor ones, history and architecture yet modern amenities... That’s why scouting heritage properties can unveil that ultimate venue option you’ve been looking for. In this featured article, the team at The Ring spotlights two Heritage London properties; Elsie Perrin Williams Estate (♥) and Grosvenor Lodge (♥), two venues that London brides and grooms have fallen in love with...

ELSIE PERRIN WILLIAMS ESTATE Located in Northwest London, the estate, known as Windermere, was purchased by Daniel S. Perrin in 1894. Nine years later, Perrin presented the estate to his daughter Elsie as a wedding gift for her forthcoming marriage to Dr. Hadley Williams, a prominent London surgeon. While abroad during World War one, Elsie had the estate house demolished and the current house constructed.

The spacious estate house, now known as Elsie Perrin Williams Estate, was built by architect John Moore in the early 1900’s using sketches drawn by Mrs. Williams as the basis of his design. Stucco walls, wrought iron balconies, a red clay tile roof and beamed ceilings are only a few of the unique qualities that make the Elsie Perrin Williams Estate as timeless in design as it was years ago. On her death in 1934, Elsie Perrin Williams bequeathed the estate to the city with the provision that her housekeeper have lifetime use of the property. Following the housekeeper’s death, City Council approved Heritage London Foundation’s request to open the estate and grounds for public use. The home and surrounding parklands are, today, an elegant venue for wedding ceremonies and receptions, social gatherings, craft and trade shows, wedding shows and other corporate and private functions.

When you choose Elsie Perrin Williams Estate for your wedding day setting, you’re indulging in the luxury of having a century-old mansion to yourself for the entire day. It can accommodate up to 120 guests indoors and plays host to both indoor and outdoor weddings, on a sprawling, gorgeous property, located at 101 Windermere Rd in London. Elsie Perrin is reviewed (prices, details, references) in TheWeddingRing.ca and books quickly. To find out if your date is available, contact Jan Dickinson and the team at 519-432-6620, by email at [email protected] or online at elsieperrinwilliamsestate.com.

GROSVENOR LODGE Located just minutes from the heart of downtown London, Grosvenor Lodge is an English Tudor house built in 1853 as the country estate of London pioneer Samuel Peters and his wife, Anne. Peters was a prominent land surveyor, engineer, architect, and founder of Petersville, later known as London West.

The verandah gave the house a connecting link with the surrounding grounds and provided a place for the family to repose in the shade during the hot and humid summers (this stifling heat would have been a surprise to people coming from England’s gentler climate). There is a small summer house in the grounds which may well have been used for serving afternoon tea during Anne’s heyday as the chatelaine of Grosvenor Lodge.

The imposing house, designated as a heritage property in 1972, is an outstanding example of the Tudor Gothic style featuring stepped gables and massive chimneys. It remained in the Peters family for three generations. Heritage London Foundation took over the management of the Lodge in 1992 and it became the London Resource Centre for Heritage and the Environment. The resource centre provides a home with office support for heritage, environmental and other non-profit groups. The Society for Learning in Retirement joined the Lodge in 2013 and conducts a wide variety of study groups during the week, with weddings and corporate events taking place on evenings and weekends.

Today, Grosvenor offers local couples a 159 year old mansion in the heart of the city for their wedding, with lovely features such as a winding staircase, hardwood throughout, stained glass windows, beautiful gardens, the wrap-around porch (large enough to host guests’ tables!), the gazebo and countless other architectural highlights. One of our favourite features of the Lodge is the stained glass window over the front door that has the initials S and A, for Samuel and Anne, entwined in a Victorian love knot.

Grosvenor Lodge is reviewed (prices, details, references) in TheWeddingRing.ca and is located at 1017 Western Road in London. For other details, email Jan Dickinson and staff of Grosvenor Lodge at [email protected]. They can be reached by phone at 519-645-2845. Grosvenor Lodge can also be found on the web here: www.grosvenorlodge.com. ♥IM

WHY HERITAGE PROPERTIES MAKE SOME OF THE MOST FABULOUS WEDDING LOCATIONS

GET LOCAL. PLAN FABULOUS! • 15

Page 18: The Wedding Ring Magazine ONTARIO Spring Summer 2015

Wendy Bennewies, Owner of Devine Wedding Design (♥), believes in her heart that every couple deserves the ultimate wedding. So, whether you’re planning a small, intimate wedding or a large, grand affair, Wendy has made it her mission to turn your wedding dreams into a reality. In this featured expert tip, Wendy shares the right and very wrong way to DIY!

Recognize that DIY is more about personality and creativity than savings. It can cost more to buy various separate decor elements and assemble them than it would to just rent them as one piece. Also acknowledge that renting is almost always more cost effective then buying.

Not all savings are created equal. Cheap items can often look, well, cheap... It may be better to rent a quality product and put the project together yourself than to purchase a multitude of dollar store items to be “cost effective,” only to be embarrassed by the finished product when you look back at the photos.

Consider renting centrepiece elements from your decorator instead of purchasing vases and props at a retail location. At Devine Wedding Design, rental vases and related props are hot commodities because they allow clients to create their own arrangements without having to buy the items outright. Wendy gives an example, “Adding an inexpensive set of votive cups to a centrepiece is a cost effective way to enhance your centrepieces appearance without breaking the budget.”

If you’re going to take on a big DIY project such as the head table backdrop, source props through a decorator. At Devine Wedding Design, you can choose your various backdrop elements (flower accents, backdrop types, props such as window frames...). They will deliver the items to your venue so that you can play with it, get creative, and ultimately assemble your own look on site.

Want to polish the look of the entire room? Combine items such as metal buckets or black urns with simple, yet elegant faux flowers in various places throughout the room and/or entrance points. The cost is relatively low, allows you to get your hands dirty and they will work together to make a bigger impact overall!

Choose to rent instead of buy when it comes to items such as money/card containers and seating plans or easels. Your budget will go much farther and allow a higher end product this way. Then put any dollars saved toward another important element of your wedding.

Choosing the right linens to pair with your DIY centrepiece or other display/arrangement is essential... Guests spend a lot of time seated at your reception tables, making your linens the centre of their attention for an extended period of time. Adding the smallest of details to your guests’ tables can make a big impact. Consider adding small diamonds to the centre of your flowers, or small butterflies that sit on a flower or branch, faux diamonds strewn about the table top...

Focus your DIY details on the tables that your guests will “stop at” throughout the evening - the cake table, the registry table, the seating plan easel...

Devine Wedding Design carries everything from backdrops, ceiling drapery and centrepieces to the smaller details such as envelope containers, linens and chair covers that fit into a long list of colour schemes, styles and themes. They are based in Mitchell yet serve Southwestern Ontario. They can be reached by email ([email protected]), phone (519-348-4191) or online www.devineweddingdesign.ca. ■

HOW TO LOOK & FEEL HEALTHY when you walk down the aisle

DIRECTIONS:1. Sauté okra, celery and peppers for five minutes.2. Add salsa, broth and spices. Bring to a simmer and cook another twenty minutes.

LillyPad Connections (www.lillypadhwc.com) supports clients in their journey to better health. Their team provides the education and assistance you’ll need to help you achieve your weight loss goal and change your relationship with food. They do this through daily videos, recipes and sam-ples, monthly workshops and supplemental products. In this featured expert tip, owner Karen Lill shares her suggestions for looking and feeling healthy in time for your wedding...

❶ Wedding planning can be stressful! All the details and added excitement can wear you down, but it’s not just the never ending ‘To Do’ list at fault – what you eat during the planning process can crash your energy and mood. Avoid this pitfall by choosing healthier foods to snack on and reducing your processed carbs. Those handy bagels and muffins are not your friends.

❷ Having a good body composition (fat and muscle) is more important to your health and look than any of the numbers on your scale. If you’re trying to slim down for your special day, make sure you are losing fat, not the muscle you need to burn that fat. This means keeping up your protein intake even when you’re reducing other foods (like carbs and sugars). If you aren’t sure where you stand, LillyPad provides free initial Body Composition Analysis readings. Note: Anything above 31% body fat percentage for women can put them at risk for health problems. Men are at risk if they are above 25%.

❸ Avoid the blood sugar rollercoaster that will drop your energy and boost your cravings by making sure you get enough protein and reduce your carbohydrates. Why are we so down on carbs? Refined carbs and foods with added sugars have a more sudden effect on your blood sugar level, making it spike quickly. Your pancreas will respond just as suddenly by spiking your insulin, which can then crash your energy and cause carb cravings, sending you into an unhealthy cycle.

❹ Keeping a food journal can help you evaluate how you are really eating and feeling. You might be surprised by what you find when you look back on your eating patterns for the past few days/weeks/months.

❺ Make sure you’re getting the right amount of protein. How do you know if you’re getting the protein you need on a daily basis? Here’s how to calculate your goal amount:

❻ Lower your carbs by trying these simple substitutions: ◆ use cauliflower rice instead of white or brown rice◆ use raw spirolized zucchini noodles instead of regular pasta◆ mash turnip or celery root/celeriac as a side instead of potato

❼ If you need convenient snack or meal options while you’re on the go, LillyPad carries products that can help. Our low-carb, low-fat, low-sugar protein bars are delicious and not packed with the added sugars and carbs in bars designed for athletes. We also have similarly designed snack foods and meal replacement drinks.

❽ Don’t want to have to think about all this while planning your wedding and managing the rest of your daily life? Come in to see us for a free, no pressure, no commitment consultation to find out how our program can help you. We provide weekly one-on-one support with Body Composition Analysis, and offer a variety of other services which can include daily videos, workshops, recipes and samples, and so much more. Our program can help you burn fat, maintain muscle, and improve your energy levels.

This spicy soup will warm you up in a hurry with its healthy, low carb vegetables... Makes 2 Servings.

WHEN TO HIRE A CATERER FOR YOUR WEDDING (& what to expect when you do!)

North Moore Catering (www.northmoore.ca) is a boutique caterer, located at 196 Dundas Street in London, Ontario, who serves high quality, delicious, customized menus at many special events across Southwestern Ontario each year. This professional catering company has made a name for themselves by concentrating on providing new and exciting delicious food choices for their clients, as well as extraordinary service to go along with it all. Owner, Jess Jazey-Spoelstra explains her boutique approach, “We do not have set wedding menus or packages but instead customize a menu based on your likes, dislikes and budget so each wedding is unique and different. We do not do cookie cutter weddings.”

In this featured expert tip, Jess shares what she feels every bride or groom should know about hiring a caterer...

MORE THAN JUST FOODYou can certainly plan a customized, fantastic wedding menu, cocktail hour, and late night buffet or sweets table when you hire a professional event caterer such as North Moore Catering, but that’s not where the services end. For example, North Moore offers rentals, specialty linens, Smart Serve Bartenders, Valet Attendants, indoor/outdoor furniture rentals, even consulting and more. “We also have Pastry Chef, Michele Lenhardt, former owner of the Black Walnut and AGO in Toronto and we do fabulous wedding cakes, cupcakes, pastries...all made in house.”

TAKING YOUR WEDDING ANYWHERE YOUR HEART DESIRESIf you want a wedding that is truly unlike any other, then hiring a caterer opens the door to a host of unique venue choices! Your glamorous catered event can take place just about anywhere you like, when you’re working with a caterer who can travel to wherever you are - whether it’s a rustic chic barn, a private estate or an outdoor tent. And since unique venues come with unique requirements, a professional caterer can highlight (and likely help with) the things you’ll need to consider such as hydro, washroom facilities and the like. This tends to be where a true expert goes from caterer to life-saver!

ALLERGIES VS DIETARY RESTRICTIONSJess recommends finding out if your guests have food allergies. This is critical, because in some cases, food allergies can be fatal. Jess also recommends asking if anyone requires vegan or vegetarian meals. What you shouldn’t do, she says, is

ask for non-health-related dietary restrictions. “You may end up attempting to accomodate a dozen fad diets or your cousin’s dislike of all vegetables!” While it feels good to be able to meet your guests’ every need, you can feel safe in the knowledge that with a well planned menu, you will have something for everyone.

WHAT NOT TO DOWhen you hire a caterer, you’re putting your menu in their hands. Don’t ask to bring your own food or provide your own food for them to cook - not even just the appetizers. “There are a lot of health risks associated with providing your own food. Unfortunately, even if your dad owns a ranch, you wouldn’t provide provide the beef for your entrees. We can use beef from someone’s farm as long as it goes through the proper inspection channels and is up to our standards, however since you would still need to pay for the labour to clean and prep it, along with the sides and sauces, it is best to allow us to choose all ingredients.” Also, for the sake of insurance, health and reputation, the risks are just too high, making it difficult to find any professional caterer that would allow the use of outside ingredients or food.

Don’t make last minute changes without updating the caterer! Whether it’s timeline changes, the number of guests or any of a million other interchanging details, make sure you update your caterer when and if changes arrise.

THE KEY TO BUDGETING IS TO SHOP SMART, NOT CHEAPBy prioritizing what you want most on your dream wedding day, you’ll find it easier to budget for that dream. Do you and your soul mate consider yourselves true foodies, opting for lobster bisque over linens and lace? Perhaps the most important thing to you is having the wedding at your family’s cottage? If you know what you want, you’ll also know where you’re willing to trim.

“Not all deals are good deals,” warns Jess, who has heard her fair share of horror stories. “Just because that new, part time rental company is offering twenty percent off their chair rentals, doesn’t guarantee that you’re getting a great deal. Their sale price may be more than full price somewhere more reputable, or because they’re new, you could be risking late delivery, sloppy set-up or any number of other issues. If you shop smart, not cheap, you’ll dramatically increase the chance of getting the day you’re dreaming of. ■
