8 th Gluten Workshop 8 – 10 September 2003, Viterbo, Italy After more than 250 years of research on gluten proteins intensive studies are still being carried out on this subject, which are far from being complete. Current research is fo- cusing on gaining further insights in composition and mutu- al interactions of gluten constituents and the potential of the genetic manipulation of gluten. Also, classical and/or novel approaches are being investigated in order to shed light on the molecular basis of the unique visco-elastic properties of gluten. Finally, many activities are targeted on technologi- cal properties of flour and semolina in view of industrial pro- cessing and expansion of the wheat market. The 8 th Gluten Workshop, organised by the University of Tuscan Studies, is intended to gather interested scientists Symposia and Congresses to discuss recent achievements and to present novel re- sults concerning this protein complex. The organisers count on the participation of research specialists and pro- fessionals of the food sector as well. The workshop follows the 10 th International Wheat Genet- ics Symposium, held at Paestum, Southern Italy, from 1 to 6 September 2003. To those interested in attending both events a free shuttle service to Viterbo is scheduled for 7 September in the morning. Hotel reservation and prices: rooms in different categories (four and three stars) will be reserved for delegates; prices: e 55 to e 80 for single rooms, e 80 to e 100 for double rooms, cheaper accom- modation is available in a range of e 35 to e 50.
