8th Gluten Workshop8 – 10 September 2003, Viterbo, Italy
After more than 250 years of research on gluten proteinsintensive studies are still being carried out on this subject,which are far from being complete. Current research is fo-cusing on gaining further insights in composition and mutu-al interactions of gluten constituents and the potential of thegenetic manipulation of gluten. Also, classical and/or novelapproaches are being investigated in order to shed light onthe molecular basis of the unique visco-elastic properties ofgluten. Finally, many activities are targeted on technologi-cal properties of flour and semolina in view of industrial pro-cessing and expansion of the wheat market.

The workshop follows the 10th International Wheat Genet-ics Symposium, held at Paestum, Southern Italy, from 1 to6 September 2003.
