In a mixing bowl, combine ground grass-fed beef, 2 tablespoonspureed chipotles and dry ranch dressing mix.

Shape into 2-ounce patties and grill into no longer pink throughout.Internal temperature should reach at least 160 degrees formedium-well done patties.

Heat olive oil in a saucepan over medium-high heat. Add groundbeef, creole seasoning, chili powder, cumin, salt and pepper.

Prepare:

Cook until browned, about 3-5 minutes, making sure to crumblethe beef as it cooks. Remove beef to drain fat and wipe pan cleanwith a dishcloth.

Turn heat down to medium and melt butter. Add diced onion andjalapenos; saute for 5 minutes, until onion is translucent. Addtomatoes and garlic and continue to sauté for another minute.

Sprinkle flour onto vegetable mixture, and mix together with awhisk.

Slowly add milk, stirring constantly after each addition, until all milkhas been incorporated and most lumps are gone.

Prepare:

Slowly add in cheese, one cup at a time, mixing and allowing tomelt before adding more cheese. Once all cheese is melted, addsour cream and stir.

Mix in cooked grass-fed ground beef to cheese sauce. Add moresalt and pepper if needed.
