Checklist for a Champion Bake SaleHere’s my secret recipe for making sure your Sport Relief bake sale is a surefire winner.

1. Get some friends to join you. The more you bake, the more you’ll make! You could even have your own ‘who can sell the most’ competition.

2. Pick a venue that you can get for free – work, local sports centre, place of worship, community hall (bribe them with a cake or two, if you have to).

3. Once you’ve got a venue, set the date immediately to avoid any double bookings.

4. Time your bake sale to coincide with rumbling bellies – elevenses? Afternoon tea at 3pm?

5. Tell everyone about your bake sale in advance! Have a look at the Promote your Fundraising Guide.

6. Aim to raise at least three times as much as you spend on ingredients.

7. Bring containers or paper bags for your customers to take your yummy bakes home in.

8. Eating cake is thirsty work, so make sure you sell some coffee and tea as well as soft drinks for the kiddies.

9. Provide a list of ingredients for people with allergies. You can use the cake tags in this kit.

10. Bring enough loose change for your customers. And make the cake prices round numbers, so you don’t lose valuable selling time looking for change.

Paul Hollywood’s Eccles Cake RecipeMakes 6 Eccles cakes

Ingredients

Rough Puff Pastry (or buy ready-made) 225g plain flour ½ tsp salt 200g chilled butter, cubed 180-200ml chilled water ½ lemon, juice only

Filling

115g currants 3 tbsp Pedro Ximenez sweet sherry A knob of unsalted butter 55g light muscovado sugar 30g mixed chopped peel ½ tsp ground cinnamon ¼ tsp freshly grated nutmeg ¼ tsp ground ginger Zest of 1 lemon 1 tsp lemon juice

To assemble 1 egg white A little caster sugar

Method For the pastry

• Sift the flour and salt into a large bowl and add the butter. Mix the butter around with a large metal spoon to coat it in flour. Be careful to keep the butter in lumps.

• Mix the water and lemon juice together in a jug and gradually pour it into the flour and butter mixture.

• Using a round-tipped knife, cut across the contents of the bowl several times, turning the bowl continuously as you chop the butter into the flour, until the dough comes together. The dough is very wet at this point.

• Tip it onto a lightly floured work surface and quickly shape it into a rectangle about 30cmx20cm.

• With the pastry vertically on the board in front of you, fold the bottom third of the pastry up onto the middle third, then the top third down onto the other thirds. This is called at turn.

• Wrap in cling film and chill for 10 minutes.

• Take out of fridge and with a rolling pin, roll into the original narrow rectangle and repeat as before. Do this three times in total.

For the filling

• Soak the currants in the Pedro Ximenez sweet sherry.

• Melt the butter in a saucepan and stir in all the other filling ingredients. Allow to cool.

To assemble

• Preheat the oven to 220°C.

• Roll the pastry to the thickness of 3mm. Cut 6 x 12.5cm rounds. Chill.

• Place a good teaspoon of filling in the centre of each pastry round. Pull the pastry around the filling and squeeze to seal. Trim away any excess pastry. Turn the balls over and place on a baking sheet. Flatten lightly with a rolling pin until the fruit begins to show through the pastry.

• Beat the egg white lightly with a fork, until frothy. Brush the tops of the cakes with this and sprinkle with sugar. With a sharp knife, make 3 small parallel cuts on the top.

• Bake for 20 minutes, or until the pastry is lightly browned and puffed up.

An extra serving of Fundraising cash

• If you’re particularly proud of a signature bake you’ve come up with, how about designing some recipe cards and selling them next to your bakes?

• Fill a cookie jar with cookies and sweets and get people to pay to guess how many are in it. Whoever wins gets the jar (and the cookies of course)

• Bake a rather big cake and get people to guess how much it weighs. This means the winner can have their cake and eat it!

• Let everyone know there’s a lucky cupcake among your bakes. Whoever picks it gets a prize (possibly the lucky cupcake?)

• I know it’s a bake sale but you could add on some other fundraising like a clothes swap.

• There’s a Sport Relief sweepstake poster available from sportrelief.com/sweepstake – put one up next to your bake sale and ask people to pay to play

• To encourage people to bake for you, hold a competition for the best bake submitted

• Cleanliness is next to godliness. Have a look at the Food Standards Agency’s tips on staying safe and hygienic in the kitchen at food.gov.uk

• If you’re holding your bake sale on private property, make sure to get permission from the owner first. Perhaps butter them up with a cupcake?

1. Fold over the tabs at the top and pass under some string or ribbon. Glue or tape it into place.

2. Attach as many bunting triangles as you need, then hang it all up around your bake sale.
