Rocky Road ice cream cake Ingredients:

• 2 litres – of your favourite vanilla ice cream

• 4 Mars bars cut into 1cm pieces

• 1 pkt marshmallows 250g cut into quarters

• 1 cup peanuts (un-salted)

• 1 bottle ice magic

• 2 violet crumble bars roughly broken into pieces

You will also need:

• Large mixing bowl

• Spring foam tin

• Metal spoon

• Foil

• Cake Knife

Steps:

• Let ice cream soften for about 10-20 mins. While you wait cut and break up all other ingredients and set aside. Once the ice cream is soft (not runny) empty into mixing bowl, add all chopped ingredients and stir through roughly. Add more or less as you feel necessary. Then squeeze entire bottle of ice magic, working quickly. Once you are happy with the consistency, pore and flatten into tin, cover with foil and re-freeze overnight.

• When you are ready to serve remove from freezer, either allow to soften or dip large cake knife in hot water and loosen from tin, remove from spring and cut wedge and serve.
