RECIPE: Vegetable Samosas (using filo pastry) Date:

Potato

1 tbsp Oil
1 tbsp Curry powder
3 tbsp Water
25g Peas
1 tbsp Fresh coriander, chopped
1 pack Filo pastry
25g Butter, melted
Method:
1. Preheat the oven to 200C or gas mark 6. 2. Peel and dice the potato and carrot (pea sized). 3. Par-boil for 5-8 minutes. 4. In a small saucepan, heat the oil and fry the onion for 4-5 minutes. 5. Add the curry powder and cook for 1 minute. 6. Drain the potatoes and carrot and add to the onion mixture; fry
gently for 5 minutes. 7. Add the peas and coriander. 8. Remove from heat. 9. Place butter in small bowl and heat in the microwave to melt. 10. Lay 1 sheet of filo pastry on the work surface. 11. Cut in half length-ways and brush with melted butter, using a
pastry brush. 12. Place 1 tbsp of filling in the bottom left-hand corner. Fold over to
make a triangle. Repeat this process (see diagram on left). 13. Brush the samosas with melted butter and bake for 10mins, until
until golden brown.
