I h a d n ev er been ou t of t h e cou n t ry when I decided to study abroad in the winter of 1965. I arrived in Paris and it was like magic to me. I was supposed to be taking a cours de civilisation at the Sorbonne, but I hardly ever went to class. I was too busy soaking up the civilization in other ways—sitting in cafés, listening to concerts, arguing about politics—but mostly by eating. From the student cafeteria to restaurants, to the market on rue Mouffetard—I ate so many things I had never tasted before. I began to appreciate how food anchored life to the land and the seasons, and I began to dream of sharing all this with my friends back in Berkeley...

By now, hundreds of people have worked at Chez Panisse, and there are uncountable stories to be told of what they’ve learned and what they’ve taught us and what they’ve gone on to do elsewhere. But this is my story, of how I learned what we need to do in order not just to survive, but to thrive: We must reconnect food and eating to agriculture and culture and get back to that place where meals mean more than merely refueling, and once more enrich the celebration of life. And in order to do this we need to reconnect food to the places we live, the seasons, and a humane agriculture that nourishes the earth instead of depleting it. If we do these things, we can locate these values buried beneath the speed, expediency, cynicism, and greed of the industrial food chain.

I will show how the seeds of these ideas were planted and how they have grown and blossomed and been propagated from a modest frame house in Berkeley back out into the wide world beyond.

Bone-in Belly = spare ribs and BaconWhen we do demos, we like to show how easy it is to take one cut and make it into two wildly divergent things. Bone-in belly is the perfect example, and our demo trick can easily be done at home. Many of our customers don’t realize that bacon is belly, hence the thick bands of fat and thinner stripes of meat. Our pigs are bred to be fatty and succulent, not waifish—a look that’s really only prized in the fashion industry. Nestled against the pig’s ample belly are the ribs—these are the spareribs, not baby backs, which are cut from the loin area. When and if we have baby backs in the case—and we usually don’t—it means then we’re also selling boneless pork chops. We love to nibble on the bone of our chops and assume our customers do as well, so we rarely take the ribs off the loin. Removing the ribs from the belly, on the other hand, leaves you with two of our favorite things: belly for bacon and spare ribs.

You should be able to get a bone-in belly from a good butcher shop or farmer. When you get your hands on one, just slide your 8-inch knife right under the bones to pull the ribs off the bacon. Make sure you keep your knife close to the bones—do it slowly and watch what you’re doing, so you don’t remove anything destined to become bacon. Once you’ve separated the two, it’s time to cook.

“The Valley” is what we in Texas call the Rio Grande Valley. It’s located on the southernmost tip of the state, bordering Mexico, and it’s where Sandy grew up. A melting pot of American and Mexican cultures, the Valley is known for its festivals, architecture, and cuisine. So when Sandy talks about comfort food, she thinks of dishes that are often heavily influenced by traditional Mexican flavors. Arroz Con Pollo (rice with chicken) is one of her favorites. Many countries—from Spain to Latin America—claim this dish, so there are many different ways to prepare it. This particular recipe is served up Valley style and is uniquely Texan.

Makes 6 to 8 servings

1 (3-pound) chicken, cut into 8 pieces, skin removed

2 teaspoons salt, plus more for chicken 2 teaspoons freshly ground black

pepper, plus more for chicken 3 tablespoons olive oil1 cup long-grain white rice 1 (141/2-ounce) can diced tomatoes 1 (8-ounce) can tomato sauce 1 cup finely chopped onion 1 cup finely chopped green bell

peppers 1 cup frozen peas 2 tablespoons tomato paste 3 garlic cloves, minced 3 bay leaves 2 teaspoon ground cumin1 (32-ounce) carton chicken broth

Preheat the oven to 350˚F.

Season the chicken with salt and pepper. Heat the olive oil in a large sauté pan set over high heat and add 4 pieces of the chicken. Fry the chicken until browned, about 5 minutes on each side. Transfer the chicken to a paper towel–lined plate and set aside. In small batches, continue to fry the remaining pieces of chicken.

Add the rice to the oil remaining in the pan and fry over medium-high heat until it is golden brown, about 10 minutes. Add the tomatoes, tomato sauce, onion, bell pepper, peas, tomato paste, garlic, bay leaves, cumin, 2 teaspoons of salt, 2 teaspoons of black pepper, and 21/2 cups of the broth to the rice. Bring to a boil then transfer to a 9 x 13-inch casserole dish.

Add the chicken to the casserole dish, nestling the white meat into the rice to prevent it from overcooking and placing the dark meat on top of the rice. Cover the dish with foil and bake until the rice is tender and the chicken is no longer pink, 40 to 50 minutes. If needed, add more chicken broth, 1 cup at a time, to the dish during baking to keep the chicken and rice moist.

Milton’s method: Thickly spread each slice of bread with peanut butter. Cover two slices with the mashed banana and drizzle with honey. Grill the bacon until crispy then place on top of the banana, dividing it between the two slices of bread. Top each sandwich with a second slice of bread. For extra calorific value (and authenticity), carefully fry each sandwich in butter. If this sandwich becomes a habit, get friendly with a cardiac surgeon. You may need one.

Red Velvet CupcakesMakes 16 cupcakes

Per cupcake: 190 calories, 8 grams fat

Red velvet cake has been around since the

1920s, its signature color ranging from bright

to brownish red. I use a natural red dye

(found in health food and gourmet stores) to

color these cupcakes, with beets and cocoa

added to boost both color and moisture. The

traditional creamy white frosting is made with

milk and flour, but I think cream cheese gives

the best flavor and texture. While many cakes

suffer under refrigeration, these remain moist

and the frosting soft and luscious.

Cupcakes11⁄2 cups cake flour1 tablespoon unsweetened Dutch-processed cocoa powder11⁄2 teaspoons baking powder1⁄2 teaspoon salt1⁄2 cup buttermilk1⁄3 cup canola oil2 tablespoons finely grated raw beet11⁄2 tablespoon natural red food coloring2 large eggs2 egg whites from large eggs1 cup granulated sugar

Frosting6 ounces (3⁄4 cup) reduced-fat cream cheese (Neufchâtel)3⁄4 cup powdered sugar1 vanilla bean, or 1 teaspoon pure vanilla extract

To make the cupcakes: Preheat the oven to 350°F. with a rack in the center position. Line 16 muffin cups with cupcake liners.

Sift the flour, cocoa, baking powder, and salt into a small bowl. Sift a second time to remove any lumps. In another small bowl, whisk together the buttermilk, oil, beets, and food coloring. Set the bowls aside.

In a large bowl, using an electric mixer, beat the eggs and egg whites on high until they are foamy. Gradually add the sugar and continue to beat for about 6 minutes longer, or until the mixture is thick and pale yellow. Use a spatula to gently fold the flour mixture into the eggs; then fold in the buttermilk mixture.

Divide the batter evenly among the prepared muffin cups and bake for 15 minutes, or until a wooden skewer inserted in the center of a cupcake comes out clean. Transfer the cupcakes in their liners to a wire rack to cool for at least 2 hours before frosting.

To make the frosting: Put the cream cheese into a medium bowl and sift in the powdered sugar. Use a paring knife to slit the vanilla bean lengthwise and scrape the seeds into the bowl, or add the vanilla extract. Beat with an electric mixer on medium speed until the frosting is completely smooth. (If using a standing mixer, use the paddle attachment.)

To finish: Frost the cooled cupcakes with a small icing spatula.

Refrigerate any leftover cupcakes in an airtight container for up to 3 days.

Preheat the oven to 425°F.

Line a large baking sheet with aluminum foil. Put the tortillas on the baking sheet. Spoon 2 tablespoons tomato sauce onto each tortilla. Using the back of a spoon, spread over the tortilla, leaving a 1/2-inch border. Sprinkle with the oregano.

Pull the mozzarella strings from each stick. Slightly curl the strings. Decoratively arrange at the top of the tortilla for the “hair.” Place 2 olive halves on each tortilla for “eyes,” 2 yellow bell pepper strips for each “eyebrow,” a red bell pepper strip for the “mouth,” and a mushroom half for the “nose.” Lightly spray the pizzas with cooking spray. Bake for 7 minutes, or until the mozzarella is melted.

Shrimp: Place the mangoes, cream of coconut, garlic, chipotle, lime juice, rum, ginger, Tabasco, coriander, cumin and salt in the bowl of a food processor and run until the marinade is smooth.

Pour the marinade into a resealable gallon-sized bag, then add the cilantro, seal, and shake to combine. Add the shrimp to the marinade, seal, and marinate in the refrigerator for at least 30 minutes or up to 2 hours.

Preheat the oven to 350°F. Remove the shrimp from the marinade, letting excess marinade drip back into the bag. Place the shrimp on a parchment paper-lined rimmed baking sheet so that they are all facing the same direction. Cook until the shrimp turn pink, about 15 minutes, and then set aside to cool completely.

Serve: Skewer each shrimp on a lollipop stick or a wooden skewer and serve on a platter. To serve the lollipops upright, fill a deep rectangular tray with dried black beans and insert the skewers.

Make Ahead: The mango marinade can be refrigerated for up to 4 days before using, or frozen for up to 1 month. The shrimp can be peeled 1 day before serving, and can be cooked and then refrigerated for up to 8 hours ahead of serving.

Tip: Set aside a few tablespoons of marinade before adding the shrimp. Brush a little on each shrimp after they’re skewered and just before serving for a glossy finish.

Mango-Shrimp LollipopsMakes 2 dozen lollipops

We served this twist on the classic shrimp cocktail at a party hosted by Will and Jada Smith. After the shrimp marinate in a sweet and spicy sauce made with mango, fresh ginger, lime juice, and chipotle chiles, they go for a quick turn in the oven where they naturally curl into a nice, round lollipop shape. We often pair these with Artichoke Lollipops for a great presentation.

2 very ripe mangoes, peeled and roughly chopped

1/2 cup Coco Lopez cream of coconut2 garlic cloves, roughly chopped1 canned chipotle chile pepper,

roughly chopped 2 tablespoons fresh lime juice1 tablespoon dark rum 1 tablespoon finely grated fresh ginger root

1 teaspoon Tabasco sauce1/2 teaspoon ground coriander1/2 teaspoon ground cumin1 teaspoon salt2 tablespoons finely chopped fresh cilantro24 large shrimp (21-25 shrimp per pound),
