Potato Fritters with Smoked Salmon By CooksUnited.co.uk Ingredients for 4 portions: 1 kg potatoes, peeled and grated 1 onion, peeled and grated 2 tbsp plain flour 2 eggs 2 tbsp oil 200 g smoked salmon 150 g sour cream salt and pepper, to taste Method: In a bowl, add to the potatoes onion, eggs and flour. Season with salt and pepper and mix until well combined. Heat oil in a frying pan and spoon ever some of the potato mixture into the pan. Flatten slightly and fry from both sides over medium heat until golden brown and done. Keep warm. Repeat until all is used up. Drain on kitchen paper, then serve on plates, topped with salmon and a dollop of sour cream. Serves 4 as a main dish and approximately 10 as a starter.
