While each season has its appeal, there’s something

about Spring that creates a space within us, opens our

hearts and minds, invites us to welcome the promise of

something new, something unknown.

Spring brings with it the hopeful possibility of what’s to

come. If you’re a gardener, watching new growth emerge

from the soil creates quiet anticipation: What will that

seedling become? A volunteer that will grow to be a

welcome surprise? An invasive weed that will strangle your

flower bed? A new perennial — a gift from another you

planted long ago that faithfully returns year after year?

How long should I wait before making that determination?

The season challenges us to embrace that unknown and

asks us to consider if what are being presented with, what

we are uncertain of, might not be better than what we

already have had. While it is certainly “safer” to remain

with what we already know — yank out that new growth

and maintain our established design — to do so somehow

feels like a rejection of the season. And so we embark on

a journey, however briefly, into the unknown… in a month

or so we’ll know if we have made the right choice or not.

Such is the spirit in which we deliver to you our latest

issue of Portfolio. We invite you to the hopeful possibilities

of what’s to come whether that means finding a new

home, a new community, or just a new foodie hot spot.

This issue highlights a number of these including some

It may be the Old World charm look or the sweet aroma wafting through open doors that brings customers into Antoinette Boulangerie, the French bakery in Red Bank,

but it’s the kitchen where the magic happens.

In the expansive kitchen, with a large window for observation, the bakers work their craft, whipping up sweets and intricately icing cakes on long marble tables. It’s here they create the flavorful pastries, artisan breads, cookies, cakes and tarts for Antoinette Boulangerie.

Co-founders Ayca User (above left) and Zeynep Ozdemir (above right), sisters in life, partners in business, introduced the French bakery to Red Bank two years ago and have been filling the sweet tooth of local residents and those who travel from afar ever since.

Antoinette Boulangerie is known for its deliciously fresh wares baked on the premises: handmade pastries, breads, cookies, cakes and tarts, as well as specialty items and custom cakes, especially wedding cakes.

They also offer a large variety of gluten-free items made from scratch as everything else. “French Macarons and Coconut Macaroons which are gluten free and our almond croissants are really popular,” said Zeynep.

The duo takes particular pride in producing everything handmade, including the tart shells. “This way we can have control over the quality of our goods — from start to finish,” she said.

A few years ago the sisters, originally from Turkey, and their husbands thought about opening a bakery. The partnership was a natural fit: Zeynep with her culinary skills and Ayca with her business acumen.

Zeynep, executive chef, crafted her baking and cake decorating skills at the School of Baking and Pastry Arts of the New York Institute of Culinary Education (ICE). She also holds an MBA in Marketing Management from Pace University and a Master’s of Science in Clinical Nutrition from New York University.

As general manager, Ayca, who says she enjoys cooking more than baking, spent 10 years working on Wall Street and volunteering in various nonprofits and organizations honing her skills in management, financial, budget and human resources.

Zeynep’s husband, also in finance, added some advice and Ayca’s husband, who has his own design firm in New York City, designed the Antoinette Boulangerie logo, all of their marketing materials and the website. They named the bakery Marie Antoinette, after the notorious queen of France, and it’s proved to be a popular and memorable name.

“We were interested in the Red Bank area,” said Ayca, who now lives in Atlantic Highlands. “We loved the scenery, the theater – and especially the people. We knew from the beginning there’s potential here, I think we complement what Red Bank has been trying to do. And we have definitely raised the bar.”

Housed on the ground floor of the former Red Bank Borough Hall on Monmouth Street, the space was retrofitted and decorated like a French patisserie. Although it’s only been open two years, Antoinette Boulangerie is a bustling business, with 15 employees.

With a loyal customer base, patrons can be found trickling

in and out through the day: visitors grab breakfast gourmet coffee and croissants on the way to work; lunching diners pick up a quiche or sandwich; students stop in for an after-school treat; and then customers pick up bread and pastries on the way home for dinner.

Ayca estimates half of their business is made up of walk-in customers. In addition, they supply delectable goods to area restaurants and country clubs. They also spend much of their time and talent catering events, including weddings,

birthday parties, christenings and more.

Wedding cakes, especially, are extremely popular as Zeynep, who has twin 7-year-old daughters and lives in Rumson, creates originally designed wedding and custom cakes.

Throughout the year, the artisans of Antoinette Boulangerie fill the confectionary

needs of area residents for holidays, including Easter, Thanksgiving, Christmas, and especially

the chocolate-dipped strawberries and heart-shaped treats for the ever-popular Valentine’s Day.

“It’s been an exciting journey,” said Ayca of finding a home for Antoinette Boulangerie in Red Bank. “I see the positive side of living in a small town like Red Bank. Among the shop owners, we all know each other and we can help each other out. We’ve always felt really welcome in Red Bank.”

Michael Wu is a member of the American Institute of Architects, formerly the Nova Scotia Society of Architects, and certified by the National Council of Architectural Registration Boards. He has designed and built homes both locally and beyond for the past 33 years and has had offices in Manhattan, Westchester County, and currently in the restored and expanded 1879 James Lewis house on Clay Pitt Creek in the Locust Historic District that he shares with his wife, Kate Ketchem. We recently caught up with him to get a better sense of his approach to home design.

Tell us about your business.I run a small boutique architecture firm specializing in the design of custom single family homes, additions, and alterations… from small additions to large estates. Common to all of my clients is the desire for a thoughtfully designed home that satisfies their functional needs, enhances their quality of life through good design, and meets their financial objectives. My designs reflect the stylistic preference of each client, the existing structure, and the project site.

Have you designed homes outside of Monmouth County?Many of my clients have commissioned me to design their second homes in other states. Currently, I’m licensed in New Jersey, New York, Connecticut, Massachusetts, and South Carolina. In addition to homes in these states, I have designed residences in Florida, California, and Nova Scotia.

Do you have a particular style?Simply put, my style is to produce distinctive homes based upon a high quality of Architectural Design. Rather than working in a specific Architectural vocabulary, my designs reflect the character and life style of each client which results in each house being unique rather than a derivative or re-use of the same forms over and over again. I enjoy working in different styles; it keeps the design work exciting.

What’s most important to you personally in designing a house?Architects have strong egos; most believe that their way of doing things is right; I take a different approach. I believe for a design to be successful it must not only satisfy the easy function-related requirements such as number of bedrooms, how large a cooktop, but also satisfy and enhance the life style and character of the owner. It’s best if the Architect remembers that he’s designing a custom home for the owner and not himself. The second important thing is to ask a lot of questions and listen to the owner’s thoughts.

Are materials an important factor for you?Materials are an integral part of the design. The character of the house is made up of the shapes, organization of spaces, scale, and surface material. During the design process, I review materials and texture options for all of the house finishes. During construction I review how the various materials are assembled to achieve a well constructed home.

What is most satisfying to you about designing homes?I often run into my clients about town. It is extremely satisfying to hear that they enjoy living in the house, how the light changes during the day, how the dining room butler’s pantry layout works so well when they entertain, or the surprise and delights they experience in one part of the house or another. It’s very satisfying to know that my past clients continue to recommend my Architectural services to their friends and neighbors.

How has designing luxury homes changed in the past ten years?Over the last ten years, two recessions have changed how people define and view their living needs. Although costs have always been part of the design process, in the past, given a choice, bigger has always won over smaller. Today, regardless of the project budget, costs have taken a more prominent position in the design process as homeowners weigh the budget against what’s needed, what’s enough, and what’s elaborate. Often times the desire for larger more costly spaces in one area results in less elaborate detailing in other areas to maintain the overall project budget. Today more than ever, clients are balancing amenities verses costs to find the right level of “house” needed to satisfy their life style.

The second change in home design over the last ten years is technical in nature. New products that improve energy consumption, are more durable, or provide a more cost effective way to achieve the same end has

led to improved maintenance and significantly lower operating costs. Smart home systems integrating sound, lighting, computer/communication/data, security, and environmental controls are now affordable, common and expected. The demise of incandescent light continues to drive the rapid development of LED lighting.

What does luxury mean to you as it pertains to your business?I have done all sizes of projects. One of my first commissions in Bedford, NY, called for the rearrangement of a very small kitchen so that a larger refrigerator could be accommodated within the same amount of floor area. The owner thought the improved layout was so “luxurious.” Luxury doesn’t mean big, huge, or over the top. Luxury means making living easier, more pleasant, and more satisfying.

Are there specific considerations a home buyer should be aware of when designing a new home?

One of the most overlooked, but extremely important factor governing the design of a home is the amount of time the home owner intends to stay in the house. A home initially designed for a young household might not function as well when the children become teenagers driving cars, living more independent lives, and wanting to watch different television shows. Life evolves and the house design should be able to accommodate the entire time frame the owner intends to occupy the home.

Another major factor is the site. The sun orientation and natural lighting preferences often dictate the placement of breakfast areas and bedrooms. Drive access, topography, and views are all elements that should be exploited to maximize the site’s potential. Proximity to traffic and neighbors can help establish the overall massing of the house.

Do you have any heroes in the world of architecture & design?I completed my architectural apprenticeship in New York working at a large 170 man firm that by necessity needed to have an oeuvre of large scale projects and work at high level of professionalism. I worked on

projects for Phillip Morris, Mobil Chemical, and a few office buildings. One of the firms’ partners, Herb Beckhard liked my pencil line work and sketches. He always did a house or two a year to ground his design work and after time, asked me to work solely with him on houses in Connecticut and Fisher’s Island, NY. Through this one on one relationship, I learned much about design, construction, and the professional aspects of architectural practice. I often refer to the work of Sanford White, have an affinity for the simplicity of Shaker buildings, delight in the ingenuity of Robert Stern’s residential floor plans, in awe of Michelangelo and Palladio, and strive to see more of the work of Le Corbusier and Louis I. Kahn. Although each of these Architects have incredibly different “styles”, they share a common thread is simply “good design.”

Is there a particularly impressive or memorable project you’ve worked on?

The largest residential project that I have undertaken is 22,000 square feet in Connecticut. The project is comprised of three buildings and garden terraces on four contiguous sites. I have worked on and off on the project for same owner over the last 25 years.
