We know oysters.

As Boston’s first and only shellfish company specializing in oysters, we take great pride in our oyster selection. Our vast network of harvesters spans both coasts of the United States and Canada.

Over the years, we have built a huge library of oyster knowledge. In 2010, we pioneered the Oysterology® Program, an oyster profiling program designed to educate food preparers and consumers. We make all of our resources available to our customers to help you promote your oyster program.

We are on the Standish Shore Oyster Farm seven days a

week, all spring through fall if the weather allows. Our

oysters are bottom planted on the ocean floor, which allows

them to grow free and develop beautiful hearty shells.

We grow our own too.In 2010, we acquired our own oyster farm in Duxbury Bay, Massachusetts. Our Standish Shore Oysters are premium Duxbury oysters grown with lots of love and care. We cull each oyster by hand for quality and shape, and only the finest oysters make it into our

HOLLANDER & DE KONING “DUTCH-STYLE” MUSSELSAvailable in 10 lb bags; approx. 15 mussels/lb

Grown in the waters of Mount Desert Island, Maine, Hollander mussels are in a league of their own. Farmed, but bottom-grown naturally, these mussels are clean and have superior meat content. These are truly premium mussels, and we are proud to be distributing one of the best mussels in North America.

CONFEDERATION COVE PEI MUSSELSAvailable in 10 lb bags; approx. 20 mussels/lb

One of the best mussels out of Prince Edward Island, Confederation Cove mussels are consistently clean and beautiful. These rope-cultured mussels are must-haves on any seafood menu. Of all the PEI mussels available in the market, this is the one we stand by because we can count on its quality.

WILD CAPE BAY MUSSELSAvailable in 10 lb bags; approx. 10 mussels/lb

Harvested from Cape Cod Bay, our Cape Bay Mussels are large beauties that range from 3 to 4 inches in size and have full meats. This is a great wild and local option from Massachusetts. If you’re looking for a large mussel, these will not disappoint.

We have strong mussels.No shellfish program would be complete without Blue Mussels, the most widely

consumed mussel in North America. Our selection includes farmed and wild varieties to provide the best option for your needs.

Hollander & de Koning mussels are the only “Dutch-style” mussel grown in North

America. The de Koning family has been farming mussels for

six generations since 1776. Cultivated in the pristine waters

of Bar Harbor, Maine, the mussels have a fuller and richer

flavor than rope-grown and pole-grown mussels.

Clambakes have been a New England tradition for over 2,000 years. New England Native American tribes would cook their fresh seafood in large sand pits along the beach. Today, clambakes are the quintessential New England activity and a favorite summer pastime for many around the nation.

HARD SHELL CLAMSAvailable as Littleneck, Topneck, Cherrystone, and Quahog

Our hard shell clams are indigenous to the East Coast. We buy from cold New England waters, which means better shelf-life and superior flavor. Our hard shell clams are harvested primarily from Falmouth and Cape Cod, and these coastal ponds produce the sweetest clams we’ve ever tasted. The flesh is beautifully colored peach and full of tender meat. We supplement with clams of equal quality from other areas of Cape Cod, Buzzards Bay, and Rhode Island.

We keepour clamsin shape.As a New England shellfish company, high quality clams are a must. Most of our hard shell clams are wild and locally sourced. And when it comes to steamers, we built our own wet storage system just to keep them “Perfectly Purged” clean.

STEAMER CLAMSAvailable Perfectly Purged® or Rinsed

We buy high quality Maine steamer clams, pick out any broken or oversized product, and rinse them clean with very gentle care. Most of our customers prefer our Perfectly Purged® steamers, but we do set aside rinsed steamers for customers looking for a less expensive option. As the name implies, these clams are usually steamed open and taste especially delicious steamed in white wine.

Our signature Perfectly Purged® Steamers are wet-stored for a few days to purge out any sand or grit. After wet-storage, we rinse them again and do another quality check before packing them. We bubble wrap the bottom, middle, and top, and keep it cool with a gel pack. Packing is the most important step because it results in a 100% yield of the most tender and flavorful steamers shipped to you.

Shucked andready for you.As much as we like our shellfish raw on a half shell, we also enjoy them deep fried, baked, and stewed. That’s why we carry shucked shellfish year-round because we know we’re not the only ones who love them cooked.

SHUCKED WILLAPA BAY OYSTERSAvailable in 4 lb half gallons

We are so happy with the quality of this product that it is the only shucked oyster we carry. Willapa Bay oysters are the plumpest and sweetest shucked oysters we have ever tasted. They hold up amazingly well when deep fried or used in stews. They are also perfect for baking and broiling.

SHUCKED SURF CLAMS Available in 8 lb gallons; Strips or Chopped (see below)

Chopped Atlantic surf clams are most often used in chowders or soups, but they are also great for stuffing clams and making fritters. Clam strips are great fried in clam strip rolls or plates. We carry this item because of its consistent 6 lb meat yield per gallon.

SHUCKED FRYING CLAMSAvailable in 8 lb gallons

Fryers or “Whole Belly Clams” are shucked steamer clam meats. As the name implies, they are deep fried and usually served with tartar sauce along with French fries. They are a true Massachusetts summer tradition!

Our cockles are harvested from the wild beds of southern New Zealand. Southern cockles are our cockle of choice because of their superior quality due to the colder waters in the southern latitudes. Cockles have similar applications as Manila Clams

and are great in pastas and appetizers.

MANILA CLAMSAvailable in 10 lb bags

Our manila clams hail from the Pacific Northwest, and after a long flight from Seattle, Washington, they can get a bit tired. We wet-store them in our HACCP

certified seawater system to rejuvenate them and increase their shelf-life for you and your customers.

Expect a petite, tender, and sweet clam.

LIVE SEA SCALLOPSAvailable in Medium and Jumbo

Live sea scallops are specially ordered because our fishermen harvest them on day-boats in Cape Cod waters. They are live when we ship them, so they arrive to you fresh.

LIVE SURF CLAMSAvailable in Medium and Large

Our surf clams are harvested in Cape Cod Bay year-round. These are one of the most flavorful clams on the market. Their meats are used for sushi, clams strips and chopped clams.

LIVE SEA URCHINAvailable in 10 lb boxes

Harvested in Gloucester and surrounding towns, live sea urchins are a great fall item. Prized for their uni, urchins are harvested by diver from September to April.

CAPE BAY SCALLOPSAvailable by the pound

Also known as Nantucket Bay Scallops, fishermen drag these beauties up and shuck them the same day.

UNI TRAYSAvailable in 60 g trays

Harvested out of Gloucester where we also get live sea urchin, these ready-to-eat uni trays are great for sushi and many other raw preparations.
