Spring is here, I really love this time of year, the weather is warming up and days are getting longer. I have always thought that East London

has the perfect weather, just when it starts getting too cold, winter is over and summer only leaves us with a few scorching hot days but mostly quite manageable.

I know that this time of year can also get a little intense as the pressure is on everyone and sometimes the kids too, so give your family some extra love and patience to help them through the last few months of the year.

As Christmas is around the corner we now have to start thinking about shopping if you want to have a stress free festive season. We have an article inside to give you a few tips on how to start planning your Christmas lists.

I hope you enjoy the magazine, thank you for your support and feedback - we have an exciting edition for you and the kids - so many competitions inside, so please make sure to enter all of them. • 1 Cup uncooked whole wheat couscous (makes about 2.5 cups after it’s cooked)• 1 Cup of grape tomatoes• 1 Zucchini, cut into 1 inch pieces• 3/4 Yellow onion, cut into large, bite size chunks• 2-3 Tablespoons of olive oil• 1/2 Lemon, juiced• 1/3 Cup fresh basil, chopped (plus extra for garnish)• 1/4 Cup crumbled feta cheese (plus extra for garnish)• 1 Teaspoon red pepper flakes (optional)• Salt and pepperPreheat oven to 250 degrees.

Prep veggies by cutting them into large, bite size chunks so they all cook evenly. Arrange the veggies in a single layer

on a baking sheet. Drizzle olive oil over veggies, and then mix with your hands until all of the veggies are evenly coated (depending on how many veggies you are roasting, you may have to add more or less olive oil). Place in the oven for 40 minutes to 1 hour. The veggies are done once they start to caramelize and brown.In a separate pot, cook the couscous according to the directions on the box. Put the cooked couscous in a large bowl. Add the roasted veggies, lemon juice, feta, basil, and red pepper flakes. Mix everything together. Add salt and pepper to taste. Serve while warm, and top off each place with some more crumbled feta and fresh basil!

There are a number of factors that contribute to a child experiencing headaches i.e. allergic reactions or food

sensitivities, stress at school or in the home, sporting demands, injuries sustained in sport and peer pressure.

Our children are having to deal with the demands of life from a very young age, but for some, the stress goes beyond their limit of adaptability.

I recently attended to 7 year old David. His mom had to carry him in to my office, so intense was his migraine, together with stomach and leg pains. His history included contracting viral meningitis twice in a 9 month period, was in a car accident, although no injuries sustained, parents sadly divorced, had to undergo plastic surgery due to a bad dog bite and then was diagnosed with ADHD. His teacher complained often about his inability to concentrate. David’s headaches started this year, even though he has been taking a cocktail of meds that most adults would take for migraines, but to no avail. His mother reported that most days he was not interested in playing and would prefer to lie on the couch or his bed.

I am happy to report that after 4 sessions of Body Stress Release, David has virtually no headaches, the tummy ache occurs occasionally

(due to a particular medicine he has to take) and leg pains have decreased. Mom also mentioned that there have been no complaints from his teacher!

It is possible, that with his turbulent history, David’s body was not able to deal with the stress positively and thus manifested in his symptoms.

Ingredients• 500g pasta rice• 750ml mayonnaise• 500ml plain yoghurt• 750ml peas• 2 avocados, diced• squeeze lemon juice• handful basil

Method1. Cook pasta according to packet instructions. Drain and allow to cool before mixing in the mayo and yoghurt.2. Cook peas in salted boiling water for about 3 minutes until cooked. Drain and add to the pasta. Sprinkle lemon juice over the diced avocado and season. Add to the pasta, along with the basil.

Tip: The sauce might seem too much in comparison to the pasta, but it will get absorbed as it stands.

1. Prepare your salonLay out beach towels so each girl has her own “salon bed”. Sometimes its nice to put out umbrellas next to their towels to pretend they are at the beach or at an outdoor spa.

2. Select nail polishHave each girl pick out their preferred polish colour for their nails and their toes.

3. Make lemonade or ice teaYour little spa girls will want to sip on a beverage as they relax before, during or after their treatments, make them fancy with cocktail umbrellas and fruit skewers.

4. Make a homemade facial maskOur favorite mask is a simple combination of avocado, oatmeal and honey but there are so many nice natural recipes you can find on the internet.

5. Put on relaxing music6. Apply face masksThe girls may choose to apply the masks to each other, or you can apply it for them.

7. Massage feet and handsUsing a nice lotion, massage the girls’ hands and feet while their masks dry.

Sharing and taking turns are skills that develop slowly. Toddlers are in a highly egotistical phase of life, when it’s all about ‘me’ and ‘mine’. Pre-schooler’s start getting the idea, and primary school kids mostly get it right.

TIPS TO HELP YOUR CHILD LEARN TO SHARE• Prepare your child for situ-ations where he will have to share or take turns.• Not everything is up for grabs. Let your child choose toys he wants you to put away when friends come to play, this way he is in control.

• Show sharing by example. Give her a bite of your sand-wich, or a blob of your hand cream. Share your Smarties, ‘One for you, one for me.’• Encourage play with toys that are more fun for two, like playing house or kick-ing a ball. This gives posi-tive experiences of sharing.• Explain the notion that some things are his, some belong to another person, and some are for everyone to enjoy (like the slide in the park).

Don’t overreact and shame the child. He’s not selfish and greedy – he’s still learn-ing to share.

This delicious recipe is both low calorie and delicious - not to mention vegetarian!INGREDIENTS• 2 large brinjals, thinly sliced (2 – 3mm thick)• 1 onion, finely chopped• 3 garlic cloves, crushed• 100g mixed baby spinach, rocket and basil leaves• 125ml whole-wheat breadcrumbs• 200g ricotta, crumbled• 2 eggs• 125ml Pecorino cheese• 80ml sun-dried tomato pesto• 100g mozzarella, finely sliced

METHOD1. Pre-heat the oven to 200°C.Pack the brinjal slices out on a baking tray and bake until cooked and soft. Season.2. Sauté the onion, garlic and spinach mixture. Take off the heat and mix the breadcrumbs, ricotta, eggs and Pecorino through. Season.3. Add a heaped teaspoonful of the spinach and ricotta mixture to the middle of the brinjal slices. Top with half a teaspoon of sun-dried tomato pesto and roll up. Arrange the rolls in an oven proof serving dish and top with mozza-rella slices. This is such a common parent-child struggle that I'd say 90 percent of kids and toddlers do this. If you think about it, dressing is a good arena in which to assert one's indepen-dence, something your child is learning to do right now. And when a toddler knows his mom or dad wants him to do something urgently, that's exactly when he's going to resist doing that very thing.

Instead of letting him see that his behaviour is ruffling your feathers, stay calm. One strategy that works well is to give your child no more than two choices — say he can

wear either his fun red overalls or his sporty sweatshirt and pants. Another thing you can address is his feeling of not wanting to get changed or leave the house; some toddlers detest transitions, and what you're proposing is exactly that.

Toddlers also don't respond well to being hurried, so if it's at all possible, try not to make mornings a big rush. Instead, you may want to wake up half an hour earlier or choose outfits the night before so you don't waste time with that decision in the morning.

It also doesn't hurt to let your toddler be in charge of

what he wears sometimes. If he insists on wearing his py-jamas, then take him to school in pj's and bring a change of clothes in case he changes his mind during the day. If all he wants to wear is his karate uniform, let him, as long as the school doesn't mind. A sense of humor helps in these situations. Of course you wish your child looked as put together as one of those tots in the clothing ads, but if you step back and look at the big picture it really doesn't matter if he's mismatched from head to toe. As long as he's adequately dressed for the weather, he'll be fine.

Christmas shopping doesn't have to be last-minute. If you have a plan set you can be more effective, save money, and enjoy the Christmas sea-son a little more this year.Know who you are buying gifts for. Make a list. Some people only shop for close family and friends. Other people put together Christ-mas presents for co-workers, teachers, the dog walker, hairdresser, plumber, poker buddies, and more. ents. Instead, put aside one period of time, like a weekend or a special shopping trip. Keep track of presents. Have a designated area for pres-ents, a section of your cup-board or attic. Write the name of the designated gift-receiv-er on a removable sticker or piece of tape. That way you'll remember who you bought it for. If you change your mind, it's easy to re-designate. Cross their name off the list as soon as possible to avoid forget-ting that you already bought them something.Hide the gifts well. Hiding is the hardest part of buying a gift early, but it's perfectly possible.Know what you're having for the Christmas meal at least a month in advance.

This will allow you to start buying the foodstuffs and drinks that are on sale and aren't perishable. Ingredients• 430ml (1¾ cups) self-raising flour• 3ml (½ t) salt• 30ml (2T) castor sugar• 125g cold butter, cubed• 5ml (1t) vanilla essence• 80ml milk• 250ml apricot jam

For the sauce• 250ml (1 cup) water• 125ml (½ cup) sugar• 15ml (1T) apricot jam• squeeze lemon juicecustard, to serve

Method1. Preheat oven to 200°C. Grease a 24cm heatproof bowl. Sift the flour, salt and sugar together. Rub the butter into the flour with your fingertips until it re-sembles breadcrumbs.

2. Combine the vanilla and milk. Mix the wet ingredi-ents into the dry ingredients until a soft but roll-able

dough forms. Roll the dough out on a lightly floured sur-face into a 5mm-thick rectangle. Spread with the jam, then roll up into a long log. Cut into 4cm-thick rings and pack, cut side up, into the prepared dish.

3. For the sauce, stir all the ingredients on medium high until the sugar has dissolved. Bring to boil and pour half over the pudding. Bake for about 40 minutes until gold-en and cooked. Pour the rest of the sauce over the warm pudding. Serve with custard.www.yourfamiliy.co.za

If you are looking at getting a pet then do your research thoroughly. You must be realistic about what type of pet you can include in your family lifestyle and wheth-er the necessary space, time, energy and finances are available.

methodIn a large mixing bowl sift the flour and salt to-gether, add the corn, cayenne pepper and spring onions.In a jug combine the egg and the milk. Add to dry ingredients and mix till you have a batter.Preheat oil in pan enough to shallow fry the frit-ters. Drop spoonfuls of mixture into pan and cook until golden brown on one side, turn and fry on the other side. Drain on absorbent paper towel.Good for breakfast, brunch or served as a side dish for dinner.

Good old Mac with a twist or two! You can make it as kiddie-friendly or adult-sophisticated as you wish by choosing your cheese accordingly: from mild-sweet Gouda for the kiddie version to a strong, mature and aged cheddar. And if you are in the mood to flash a bit of cash, add some real Parmesan and substitute the ham for pukka Italian pancetta. As too the white sauce, you can make it thicker or thinner or make even more sauce.Ingredients• 250 g spiral pasta or elbow macaroni • salt or any garlic & herb salt mix that you fancy• 180 ml spring onion white tops, thinly sliced • 80 g cheddar cheese, cut into 1-cm size dice • 80 g smoked or plain mozzarella, cut into 1-cm dice • 15 ml olive oil and a nugget of butter• 2 chicken breast fillets, cut into short, thin strips (about 1 cm x 5 cm)

• 6 thick slices tasty ham, cut into small dice • 250 ml Rosa tomatoes, cut into small dice • 1,250 litres prepared White Sauce • for topping: a little grated mozzarel-la cheese and more Rosa tomatoes, cut into halves or quarters MethodBring a large pot of well-salted water to the boil and add the pasta. Cook according to pack instructions, but remove it from the heat 2 minutes before the end of the specified cook-ing time. The reason is that the pasta will cook some more in the oven and if you start with too-soft pasta, you may end with a stodgy result. Drain the pasta and rinse under cold water, drain again, pat dry and place in a large mixing bowl. Splash in a little olive oil, add the spring onion

and cheeses and mix lightly. Cover and set aside until required. Heat the 15 ml oil and butter in a large frying pan and add the chicken strips. Stir-fry on high for a minute or so until the chicken turns white, no longer. Season the chicken to taste then add it to the pasta mixture to-gether with the ham and the 250 ml tomato dice.Pour in the white sauce and mix lightly but well. Make sure the mix-ture is seasoned well then pour it into a large oven dish that has been sprayed with non-stick spray. Sprin-kle the top with a little bit of grated mozzarella cheese and push in the extra Rosa tomato halves or quarters.Bake in the oven preheated to 200 C just until it's piping hot and the sauce bubbles through the surface, no lon-ger.Remove from the oven and serve with a crisp, fresh salad.Serves 6 generously. www.ilovecooking.co.za
