Hi Mix magazine readers, I’m Zane. I’ve been working here in the Red Sea resort of Sharm el Sheikh as a tour guide for many years. My job means I am responsible for ensuring my guests take home the best possible memories of our beloved Sharm. I have been kindly asked by Mix magazine to share some of these insights with you. So here goes…

Below is a quick and easy guide to make sure your holiday runs smoothly, trouble free and most impor-tantly enjoyable!

Travelling:-The safest way to reach Naama Bay, Old Market or any other destination is to use your hotel’s shuttle bus. However, when shuttle buses are not available there are three alternative ways of travelling:

Rent a Car – you can rent a car by day, week or month and with or without a driver. Rates start from 150 EGP per day depending on the rental company, the car’s kilometer limit, make/model of the car and the rental period. International companies are usu-ally more expensive than the local ones, but please always ensure if using a local company, that the car is fully insured. This option is best for those who like to discover the area by themselves and are aware of the driving style in Egypt.

Cars drive on the right hand side. Please put on your seatbelt at all times although it is only compulsory for the driver and the front seat passenger. The speed limit is 60 km around town. Don’t use a mobile phone whilst driving and stay fully focused as the behaviour of other drivers in Egypt can be rather erratic!

Taxis – blue and white saloon cars holding a licence number are the official taxis licensed to carry foreign passengers. They are meant to have a working me-ter but I wouldn’t count on it! Thus, the best practise is to agree on a price before you get in. There is a minimum charge of 10 EGP. Going from Naama Bay to Old Market (approx. 5 km) costs a maximum of 15 EGP and never agree on an AC supplement. Once you agree on the price and reach your destination, leave the taxi first and then hand the money over through the window. Try to carry small notes such as 10 or 20 EGP to avoid waiting or negotiating for change. I don’t advise ladies to sit in the front pas-senger seat and if alone, always sit in the back and try not to answer any questions concerning your name, marriage status or nationality etc. Never accept a lift from a private car even if the driver offers you a taxi service.

Mini-bus – also blue and white. They go up and down the main Peace Road for as little as 1le. They must be hailed from the roadside as there are no designated “bus stops”. The Mini-buses go all the way to Old Town Sharm and then onwards to Hadaba. On the in-ward bound trip they go from Hadaba direct to Naama Bay and onwards towards Sharks Bay, the Airport and Nabq. The Mini-buses are generally used by the Egyptian staff but tourists can still use them. Expect each bus to be full by the end of the journey. Please dress appropriately as you will need to bend to get in and out. Simply shout ‘Henna Kwais’ (“here’s good”) when you need the Mini-bus driver to stop anywhere along the route.

The PeoPle:-Take a look around you. You will notice more Egyp-tian men than women living in Sharm. This is because most of the men’s wives and families live in Cairo, Alexandria, or the country. Sinai is home to many Bedouins. These people are historically nomadic and have a rich culture different from Egyptians. The Egyptian and Bedouin societies are conservative when it comes to dress sense and public behaviour. Women will wear clothes to cover themselves, some-times wearing a head scarf (hegab). Even the men are fairly covered, sometimes wearing a Galabeyia (an ankle length long cotton shirt).

love and romance:-Oh the bliss of a holiday romance – but here are just a couple of tips which might help. First, if you meet an Egyptian local and fall head over heels, you can-not simply head off into the sunset. Egyptian law states that an unmarried Egyptian cannot share a hotel room with you unless he/she can present your marriage papers.

STreeT SmarT:-If you don‘t want attention or stares... Bikinis and speedos are for the beach and the pool, not the street. Hot pants, minis, and barely there tops are for clubbing, not the Souq (shopping areas). Don’t walk along the street or go to the supermarket in swimwear – take a sarong with you and wrap up.

SimPle ruleS:-Just think before you drink when walking in the street. Egypt is not a drinking nation; however alcohol is ac-ceptable in bars and clubs. Public displays of affec-tion: Egyptian men often greet each other by giving a kiss on each cheek; this is usually for family and close friends and is culturally acceptable. However, it is unacceptable for couples to have an amorous kiss, grope or clinch on the street or the back of a taxi. Get a room!

mobile and inTerneT:-There are three main telecommunication companies in Egypt which provide both telephone services and internet services. These are Vodafone (with the red logo), Mobinil (written in orange) and Etisalat (which is branded with a lime green sign). Whilst on holiday, instead of using your foreign sim card which may have extraordinary high rates, you can simply buy an Egyptian sim card and credit (this way you can eas-ily manage your expenditure rather than receiving a large mobile phone bill when you arrive home).

If you want to stay in touch online you can buy a pre-paid USB modem from any of these companies for only 99 EGP. Simply plug it in your laptop, recharge using a top-up card and surf away. Credit costs around 30pst / MB and all three companies have competitive rates and good coverage in and around sharm. Please note you will need to take your pass-port with you when purchasing a sim card or USB in order for your number to be properly registered. This way, it will stay connected even if you only use it once a year whilst on holiday! If you are not asked for your ID, this means you are probably not getting the stand-ard charges.

All three companies have branches in Sharm, how-ever they also have many franchises. In order to get the best service and standardised rates, it is best to go to the actual branches, all of which can be found at the shopping district of Il Mercato (Hadaba). Please note the franchise store will take a fee when you buy a top-up card. They can charge up to 50% more than the credit you will receive! Whereas at the companies’ own stores, a 10le credit costs 10le!

money:-Monetary unit: Egyptian Pound (LE or EGP) 1 pound (LE) is worth 100 piasters. Notes come in 0.10, 0.25,

0.50, 1, 5, 10 (two different versions), 20, 50 (two different versions), 100, and 200 denominations. Coins come in 0.25, 0.50 and 1 LE. The 0.50 pias-ters and 50 pounds notes can be mistaken and easily confused. To avoid handing over too much money, please memorise them.

Currency Exchange Currency can be exchanged at the airport, banks, exchange offices and some ATM’s. Major credit cards and well known brands of travellers cheques (preferably in US dollars, sterling or Euro) are honored almost everywhere. ATM machines are abundant and you can withdraw money using your credit card or international ATM cards.

ShoPPing:-Sharm el Sheikh offers a wide choice of shopping dis-tricts where you can find bazaars and also branded shops. The most popular are Old Market and Naama Bay. In most bazaars and shops you must ask for the price. Egyptians are excellent in judging the value of your wallet and therefore the first price will be at least triple the value of the product. Offer 30% of this first price and if you hear “no” just leave the shop. The shop assistant will then probably follow you and eventually say “yes”. If not, simply try in another shop where you are highly likely to find identical items.

There are also shops with fixed prices where you can buy not only typical bazaar products but also local

artists’ small and large masterpieces. Fixed prices are found in all of the branded shops in Il Mercato (Hadaba) and also Soho Square (White Knight Bay). These locations are recommended for “no hassle” shopping where you can also enjoy a nice ambiance and a great dining experience. When going to the Old Market area, I highly recommend you avoid wearing provocative clothing such as miniskirts, shorts, trans-parent tops and uncovered arms as this will help you enjoy hassle free shopping!

Pay attention to the quality of the souvenirs. For ex-ample, for the light papyrus to be an original, you should see a crisscross pattern when looking at it under the light; whereas the darker one with no criss-cross pattern will not be an original.

For grocery shoppers, I recommend local supermar-ket chains such as 247, Metro, Carrefour and Sheikh Abdullah. Prices are fixed and you can find plenty of imported products but also good quality locally sourced items. Here would be the best place to buy Egyptian delicacies such as tahina paste, sweets, dates etc. If you are a fruit lover you must visit Old Market and its “Veggie” stores to try the rare, fresh and chemical free fruits such as mango, guava, dates, caca, green melon, water melon and many more.

luca’s “What to do? What to see?”

Yo yo yo, Luca here! Goodness what a month! I came to Sharm on a one week’s diving holiday and do you know what? Exactly 29 days later and I’m still here… oops! It’s been crazy; I have met so many great people and have done so many cool things. I thought Sharm was just sun, sea, sand and fish! But there are loads of activities for all ages in this city I call “Sharm el Fun”! Ok - I don’t actually say that but… it’s true!

moTor SPorTS:-Please stand up, turn your back to the sea, and what do you see? Desert and mountains. Experience the desert at its best while off-roading in or on the vehicle of your choice, be it a motor bike, quad bike or 4x4 jeep. I took a wicked day trip exploring the desert one late afternoon. We then chilled and enjoyed the sun-set followed by a show and dinner. There are many different companies providing desert excursions as an alternative to your travel reps selection, but as my buddy Zane always says: check they have insurance or that your holiday insurance fully covers your trip. Oh, and make sure you get a receipt when booking any trips! Believe me… running around town trying

to find “Mohamed” to get a refund for an excursion that he never picked you up for is not fun; been there, done that, never again ;-)

You can learn to wake board, water ski or kite surf, go parasailing, try a banana boat, or if you prefer to stay dry, how about a cruise or a glassbottom boat trip. In one of the holiest parts of the building is the Chapel of the Burning Bush where a living bush, said to have come from the bush that Moses saw burning, still grows today.

Page 12: Mix Magazine - May Issue

Many of us who visit Sharm el Sheikh come sim-ply to spend seven days under the sun’s rays venturing off our comfortable sun loungers merely to take a cooling swim in the hotel pool or grab a quick snorkel in the Red Sea; a vaca-tion to Sharm however really does have so much more to offer. Our towns leading tour operators and excursion companies have a plentiful selec-tion of trips to suit our inner adventurer. Cautious as you may be, given the recent reports of prob-lems on the highway and troubles between local Bedouin tribes, extra precautions are in place and the Desert of the Sinai Peninsula still sits peace-fully awaiting your senses.

The Sinai Peninsula is a triangular peninsula linking Africa with Asia and occupying an area of 23,500 square miles (61,000 square km). The Sinai Desert, as the peninsula’s arid expanse is called, is sepa-rated by the Gulf of Suez and the Suez Canal from the Eastern Desert of Egypt, but its desert splendour continues eastward into the Negev desert without marked change of beauty. So what’s the easiest and most accessible way for us to explore this wonder for which our hotels reside?

The first and arguably most popular program is to combine Mount Sinai with a visit to St. Catherine’s Monastery. The pickup from your hotel is usually around 10pm in the evening, followed by a drive to St. Catherine’s situated 270km away. The journey takes 3 or so hours, its best to use this time to take a nap before the real adventure begins. Arriving at the cafeteria at the monastery or a similar refreshment stop, it’s time to prepare for the climb to the top of the mountain. Mount Sinai in the heart of the Sinai desert is inextricably linked to the story of Moses and the Ten Commandments and is mentioned in the Bible. It also has religious significance to Islam as the place where Mohammed’s horse, Boraq, ascended to heav-en. The 7,497 foot mountain has 3,750 stone steps made by the monks of St Catherine’s Monastery.

The climb for which most tours undertake comprises of a 7km stretch of mountain road plus 750 stone steps to reach the top. The journey requires deter-mination and endurance but the 2 to 3 hour climb is worth every step. As at the top of the mountain the sunrise is waiting for you, a sunrise which Mix mag-azine believes to be the best in the world, a breath taking sight, the memory of which will stay with you forever.

After taking in the awe-inspiring sunrise it’s time to climb back down the mountain, for a breakfast rest before visiting St. Catherine’s Monastery. St. Cath-erine’s Monastery is a UNESCO World Heritage Site, run by Eastern Orthodox monks and one of the old-

est Christian monasteries in the world. It was built be-tween 527 and 565AD. In one of the holiest parts of the building is the Chapel of the Burning Bush where a living bush, said to have come from the bush that Moses saw burning, still grows today.

The Monastery is only open a few hours each morn-ing for visitors so expect to return to your hotel early afternoon, in time for a hearty lunch and a well de-served rest.

TIPS AND HINTS

You need to have covered shoulders and knees in-side the monastery. Mix does advise this trip is not suitable for young children. It’s very cold on the moun-tain “especially in winter” so wear plenty of layers, take plenty of water and order a breakfast box from your hotel to take along with you.

The two separate elements of this trip can also easily be arranged separately, for those favouring just the mountain climb or a morning at St Catherine. Anoth-er interesting desert based excursion package is St Catherine and Firan Oasis.

After an early start and coach ride you begin with a morning visit to St. Catherine’s Monastery, then a lunch stop in the midst of the beautiful desert land-scape. The afternoon is then spent exploring the lesser known Monastery of Firan Oasis or Wadi Firan. Dubbed the “Pearl of Sinai” by Victorian explorers,

Simply Desert! KN

mix - May ‘12 - June ‘1210

Page 13: Mix Magazine - May Issue

Wadi Firan is a hospitable place, guarded by nearby Serbal, an imposing mountain. Inside Wadi Firan is a chapel dedicated to Prophet Moses. The Wadi is mentioned in the book of Genesis (21:21) “as the place where Hagar dwelt with her son after Abraham sent her away”. As late as the 7th century, Firan was a city and an important Christian centre, with its own bishop.

The first Christians to make their way into the green wadi created a monastic city at Firan in the fourth century, building huts and enlarging the caves in the wadi walls. These caves, resembling mouse holes from the valley floor, may have given the place its name: apparently “Wadi Firan” meant “Valley of the Mice”. Today, a large community of Gabaliya (which stand for “mountain people”) Bedouins live in the wadi. Surprisingly, both Firan and Serbal still remain “off the beaten track”, perhaps this is the very reason why they retain their untouched charm.

The duration of the trip is usually about 12 hours, get-ting back to your hotel in plenty of time to take dinner.

DESERT SAFARI

For those wanting a sportier feel to your desert ad-venture why not book a Desert Safari, which can also be combined with an afternoon in Dahab, wondering the town or diving or snorkelling at the towns most famous dive site, the Blue Hole.

Most daily excursions tend to leave early and this one is no different, expect a 6 or 7 am pick up from your hotel. You will then drive deep into the desert, where fun can be had on foot, by jeep, by camel… Offers vary from operator to operator. The most popular sand dunes are “Safra” and “Heduda”, you may also be taken to Makhroum mountain. Being surrounded by hundreds of miles of desert and mountains is an experience not to pass by and combined with a blast of adrenaline, a desert safari sure beats another day face down in your paperback book lying on your hotel sun lounger that’s for sure.

Mix Pet Corner Aquariums!

AquAriuMs beFore AND AquAriuMs NowMany years ago, the aquariums system, set up and af-ter care used to be very complicated. Nowadays Aquar-ium suppliers have improved a lot of their techniques, from the efficient filter system to the simple easy clean gravels, and even artificial coloured sand that makes it easy to keep your tank clean. All you need to do these days is plug in your tank and enjoy.

TANk serViCe AND CLeANiNgAvoid sitting your fish tank in direct sun light. Sunlight will cause green algae which is not easy to get rid of and will continue to form as long as your tank is in the light.

Ensure that your tank filter ‘mechanic or biological’ is powerful enough to circulate all the tanks water volume in one hour.

Make sure that you keep your tank filter on 24/7.

Turn on your tank light only during day light hours, to allow fish to rest and sleep at night.

If your fish tank is sat in your children’s room, you can put the tank light on at night, as it’s a great night light and soothing for children. but consequently, you will need to turn off the light all day, also ensuring your stop all other light sources, such as windows to allow your fish to rest and sleep. Allowing your fish to have suf-ficient sleep will prolong their life span.

CHANgiNg THe wATer oF your TANkThis issue is misunderstood by many people. you may only need to change all the water of your tank once

every 6 months, although you will need to clean the fil-ter media once a month, maximum every two weeks. in fact in big tanks with good pumps and filters, you may not need to change all the water at all.

The key secret of any successful aquarium is the food. Never over feed your fish. Over feeding can be tempt-ing especially as fish food is very cheap.

How To kNow THAT you FisH is siCkIf you notice any of the below fish behaviour ask your aquarist for advice on the best treatment. Fish diseas-es are easy to cure and medicine is also very cheap.

1. Your fish is hiding in a corner of your tank2. Your fish have some white spots on its body3. Your fish has rotten fins4. Your fish is wounded 5. Your fish has white, black, or red patches on its body 6. Your fish is missing gills or fins 7. Your fish hangs upside down with a big balloon belly 8. Your fish is gasping air from the surface 9. Your fish is scratching its body against objects or stones in its tank10. Studies going back as far as the late 80’s have shown that gazing at aquarium fish reduces stress and subsequently lowers blood pressure. seniors who were provided with an aquarium filled with fish had sig-nificant blood pressure reduction.

Watching fish has been shown to calm children who suffer from hyperactivity disorders. Dental patients who were subjected to hypnosis vs. an aquarium experi-enced the same or greater benefit from the aquarium. other studies have shown that dental patients required less pain medication after having watched fish in the office. It’s little wonder that physician offices, dental clinics, and even waiting rooms for counsellors have traditionally kept an aquarium.

studies have also shown that seniors who have Alz-heimer’s experience a variety of health benefits from watching an aquarium. Alzheimer patients ate more, and required fewer supplements after an aquarium was placed in the dining room. They also exhibited less physically aggressive behaviours.

Thirty-four members of Harbury RFC Rugby Un-ion Club Warwickshire hit the tarmac of Sharm el Sheikh Airport on Thursday 5th May. The men of Harbury RFC checked straight into their hotel, the Aqua Blue in Hadaba and dressed in their ob-ligatory tour uniform of matching orange and pink swimming shorts and white polo shirts, fuelled by tour excitement and beer, walked the few yards to the Champions Pub where their host Rugby Club, the Sharm Sharks and Mix magazine were there to welcome them.

Having been told a few weeks previous that the eng-lish touring team were coming to play Mix magazine’s beloved local team, Mix was equipped with questions and waited eagerly at the bar for harbury’s Captain, Matthew knight.

Founded in 1962, harbury rFC is in the process of celebrating its 50th anniversary, the tour had been or-ganised as part of their “Jubilee” anniversary celebra-tions. The craziest thing about the five day tour was that only three out of the thirty-four men actually knew where the tour was taking them. equipped with their passports and anticipation, they had met at the airport with the simple knowledge that they were off to sunny climes to celebrate and play a little rugby.

Matthew had simply “googled” rugby in egypt and had found the contact details for Alun evans, the sharm sharks Legendary Coach. Together with a little help from both club’s presidents they had arranged what was to be one hell of a tour.

knowing that the two teams were playing each other the following evening, Mix was keen to find out just how good Harbury rFC were, the answer, very! win-ners of the warwickshire Cup, past experiences of playing at Twickenham, and having three qualifiers for this summer’s Olympics within their club members were stats that proved their capabilities.

harbury rFC’s greatest strengths however were the members’ friendships, showmanship and heritage. The sharm sharks rugby team has only been running for the last year and having Harbury over from the uk was a great experience for all involved.

So the Match. harbury rFC won 49-0. but the Sharks did themselves proud and played strong; giving the Harbury guys a run for their money. in the words of one of the younger Harbury players later that evening during the post match party at T2 he told me “rugby was the winner of the night” and Mix magazine could not agree more.

The atmosphere at T2 was one of jubilation from all; new friendships were formed as copious quantities of alcohol were consumed in true british rugby fashion. gifts were exchanged by both teams and Alun evans crowned Devin Mergl man of the match.

The Harbury rFC sharm tour continued successfully, they enjoyed quad biking, a boat trip and a fancy dress karaoke night at the Tavern bar. The slogan on Har-bury rFC’s website states “50 years of passion”, well Mix magazine personally wants to thank Harbury rFC for bringing their passion to sharm.

It has been a hard year for the women of Sharm. With the tourism trade, the backbone of all com-mercial business in town struggling in response to the political instability of Egypt, Sharm’s wom-en have had to work even harder to ensure their families and their businesses survive through this troubled period. in busy times yes we all managed to take a shower and grab a clean pair of jeans but with less disposable income in our pockets, many of us have forgone the luxury of a blow dry or a little manicure. with the help of Elia and Anne from beauty pro salon we are giving all the women in sharm el sheikh the opportunity to have a makeover and photo shoot.

in honour of harbruy rFC rugby club touring all the way from England to play our local sharm sharks team and the forthcoming Diamond Jubilee, mark-ing 60 years of the British Queen’s reign. Mix maga-zine thought we should share some classic English “high tea” sandwich recipes with our readers. we guarantee all those at Buckingham palace during the Jubilee weekend of the 2nd–5th June will be tucking into great quantities of these delicious tri-angle treats. so why not join them and have a little afternoon tea of your own!

Goat’s cheese, walnut & pepper 200g soft goat’s cheese 100g cream cheese 10 slices white bread 2 red peppers 25g walnuts

150le Set Menu @ the Mexican Bar and restaurant!if you think “Mexican”, you think sombreros, te-quila, chillies, and nachos. these are all happy thoughts. if you think “Mexican in sharm” you might draw a blank...Read on to find out about our Mexican Bar and restaurant, which is part of the tropitel naama Bay hotel.

sitting next to little buddha in the epicentre of naama bay, the restaurant can be recognised by its wooden cladding and revolving mexican man who stands proudly on the restaurant’s roof overlooking the warmly furnished outdoor dining area and a ranch-style indoor restaurant with an open kitchen.

after a little research mix discovered the venue is known for its high quality but also as one of the more pricey restaurants in naama bay. we are on a mission to disperse this myth as with a set menu running daily for just 150le which includes three courses and one free drink (local alcohol - spirits, beer and wine). Value and quality is what the mexican bar and restaurant of 2012 stands for.

Mexican cuisine is known for its varied flavours, colour-ful decoration and variety of spices and ingredients, most of which are native to the country. the cuisine of mexico has evolved through thousands of years of blending indigenous cultures, with european elements being added after the 16th century. the menu at the mexican bar and restaurant here in sharm is a mix

of traditional mexican dishes and mexican inspired op-tions.

In november 2010, mexican cuisine was actually added by unesco to its lists of the world’s “intangible cultural heritage”. and after dining at sharm’s mexican bar and Restaurant, Mix magazine officially adds it to our list of recommended eateries.

so how was the set menu? In true mix fashion we tried and tested everything. the menu starts with a “mixed appetiser” which includes buffalo wings, Fried cheese and nachos. the restau-rant is more than happy to substitute or exchange any of the elements to your preference but we reckon their choice pretty much covers all the foodie bases.

our appetisers were superb. the cheese topped na-chos were delicious, the Fried mozzarella was coated with just enough breadcrumbs, and the buffalo wings were already juicy alone yet divine with the spicy tex-mex marinade.

so for the main course set menu options. chicken or beef Fajitas served with Flour tortillas, cheese, pico de Gallo and Guacamole. or Grilled steak served with garlic mash and veggies.

our dishes arrived promptly, piping hot and well pre-sented. the centimetre and a half thick medium-cooked

150le Set Menu @ the Mexican Bar and restaurant!

beef fillet was exceptionally succulent, a fine cut of meat, the garlic mash was creamy and yummy and the vegetables char grilled and cooked to perfection. the fajitas are always a favourite especially if dining with children or if indeed you are a child at heart. combining grilled chicken, caramelised onions, lettuce, guacamole and grated cheese inside warm tortillas is simply food heaven.

For Dessert it’s “warm chocolate brownie served with Vanilla Ice Cream”. But again the menu is flexible so if you’re not a chocolate lover, you are ill! no, you can choose an alternative. even though we were almost full, we still could not pass up on a piece of dessert. Force feeding ourselves the crumbly yet moist brownie we decided the mexican bar and restaurant at tropitel naama bay hotel screams quality and value.

though, there are big screen tV’s showing all live sports programs, we did not bother to watch as being there was entertaining already, as there is a live guitarist or singer performing daily from 8pm. budding singers should also head along on wednesdays as the venue hosts a kara-oke night and a mexican party every monday. the res-taurant and bar also runs a happy hour daily from 2pm till 7pm – the deal is buy one get one free for all beer, soft Drinks and local wine, and buy two get one free on all Imported alcohol and cocktails. In addition they offer an all Inclusive Drinks package for just 90le.

Bordered by several countries, Egypt’s table has been influenced by its neighbouring cousins. And as tourism is one of the country’s main sources of income, international fare is not uncommon. From pizza, burgers to curries, you name it, Egypt has it. But Mix magazine believes it’s a real shame if you visit sharm and simply feast on only what you know, in the same way as staying in your all inclu-sive hotel without stepping out of the gates and en-joying the delights of sharm is simply a crime!

so in order to encourage and aid your culinary adven-ture here is a brief guide to some of egypt’s best foodie treats.

The main staple is the flat Egyptian bread, a softer lebanese bread. whether your meal comes with rice, French fries, potatoes or pasta expect to get a basket of bread. the locals use it to scoop dips, mezze and tagines. a carbohydrate over load? yes. but who cares you’re on vacation!

KosharI – a combination of macaroni pasta, spaghet-ti, noodles, rice and chick peas, topped with bountiful fried onions mixed all together in tomato sauce, chilli sauce and the special ingredient which gives the bowl its wonderful flavour is the garlicky vinegar. Give the bowl numerous drops and you’re up for a delicious treat.

moloKhIyya soup - Is made of green leafy veggies that are slimy in texture. It is considered as the most popular dish of the country. It is an acquired taste but fret not, try a little by dipping your bread into the soup for your first taste and if pleasantly surprised, follow by pouring over your rice. popularly, it accompanies grilled chicken or shrimp in mediterranean coastal cities of egypt.

ta’amIyya or FalaFel - mashed beans with some spices deep fried and shaped into balls. It’s addictive even if there’s no meat in it. you would see this typi-cally on breakfast tables of the locals. this is also avail-able as mezze.

Fuul - mashed beans slow-cooked in garlic, cumin and other spices sprinkled with lemon. also a staple item on an egyptian breakfast table. unfortunately this national dish is only for the harder of stomachs but can be a great dish to keep you full for a trip up to st. cath-erine’s or a day’s diving.

mashI - stuffed vine leaves, veggies or rolled white cabbage usually with rice, minced meat and fresh herbs and spices... baked in a tomato puree stock and served hot. (similar to Greeks’ dolmades)

chIcKen lIVer alexanDrIan style - cooked in cumin, garlic lime and coriander. It’s cooked in wok style but with herby taste.

baba GhanouG - mashed eggplant paste with garlic. recipes vary, mix magazine likes it when the eggplant is smoked and still has good chunks in it. some restau-rant will also spice it up with chilli.

tahInI - mashed chick peas, versions vary in thickness but this creamy dip makes the perfect accompaniment to Egyptian flat bread. Add some salad and you also have the perfect sandwich.

hamam - pigeons stuffed with rice and frik, green wheat as well as herbs wherein coriander is dominant. may look a little scary, as european’s we are not used to eating “whole” things but really this dish is super deli-cious!

egypt is also known for their tagines just like morocco. tagines are earthware where the dishes are cooked long and keeping all the taste and flavour intact. It’s the old version of a pressure cooker but the conventional way has always its own charm.

camel meat taGIne – yes camel, not widely avail-able but for the more curious diner, the camel meat is less succulent than beef but still tender enough. strong-er taste than beef but not as powerful as mutton.

taGIn bamya bIl mozza - stewed lamb shanks with okra, tomatoes, onions, garlic and cumin, a pure heav-enly delight. some egyptian tagines/stews can be a bit on the oily side but full of flavour. The meat is so tender that it just melts in your mouth. okras are typical ingre-dients in tagine dishes in egypt.

mIxeD Kebabs - Just like the turkish, egyptians like grilled items too. the most famous is Kofta, minced lamb and shaped into sausage and grilled. herby and smoky taste combined can never go wrong.

For the sweet tooth, egypt is the place to be. all their desserts are very sweet but delicious!

FetIr - egyptian pancake which is made of layers of filo topped with nuts, tasting similar to Greek Baklava. this is usually eaten with honey (the normal honey or the famous black honey in arab countries) and cream. mix magazine recommends you mix the black honey with the sesame dip, to give the pancakes its sweet and sour taste.

other famous desserts are ruz bI laban - sticky rice in milk cream aka rice pudding and mix magazine per-sonal favourite omm alI - layers of pastry soaked in cream and milk sometimes with nuts and baked in the oven.

DrInKInG tea (shaI) is a past time here in egypt. hot tea with mint is popular and Karkadai, hibiscus tea which is served either hot or cold. with the weather here, a cold glass is a must.

you want to dine like locals? smoKe sheesha after a meal (well, egyptians do it even before breakfast) the Apple flavour is the best seller.

most restaurants add 10% sales tax and baksheesh; a tip of a few egyptian pounds wouldn’t hurt.
