Mexican Baked Fish Recipe A cheesy baked cod with salsa. Ingredients: 1. 700g cod 2. 1 cup salsa 3. 1 cup sharp Cheddar cheese (shredded) 4. ½ cup corn chips (coarsely crushed) 5. 1 avocado (peeled, pitted and sliced) 6. ¼ cup sour cream Instructions: 1. Preheat oven to 400 degrees F (200 degrees C). 2. Grease a 8x12 inch baking dish lightly. 3. Rinse fish fillets under cold water, and pat dry with paper towels. 4. Lay fillets side by side in the prepared baking dish. 5. Pour the salsa over the top, and sprinkle evenly with the shredded cheese. 6. Top with the crushed corn chips.
