Sometimes they actually ask for healthier options that really nourish them. This is one of the recipes my boys clamor for and it’s great if you’d like to expand your recipe repertoire. I love it because it looks and tastes like a meal you’d enjoy at a restaurant, yet you get to enjoy it in the comfort of your own home! This recipe calls for one pound of chicken thighs, but you can easily double it for a larger crowd. To make it even more delicious, fill your bowl with your choice of greens, lentils, brown rice, quinoa, feta, tzatziki, hummus, olives, cucumbers or tomatoes. However you choose to make this delicious Mediterranean Chicken, make it your own with your choice of additions to your bowls. Enjoy! Mediterranean Chicken INGREDIENTS: 1 pound boneless skinless chicken thighs ¼ cup plain greek yogurt 1 T. olive oil 1 T. red wine vinegar ½ t. garlic powder 1 t. ground oregano ½ t. ground tumeric ½ t. dried thyme ½ t. Kosher salt ¼ t. black pepper DIRECTIONS: 1. In a bowl whisk together all the ingredients from the yogurt through the black pepper. 2. Chop chicken into 1 inch slices and place in the bowl, mixing to get the marinade all over. Allow to sit covered in the fridge for one hour or up to eight hours. 4. When you’re ready to cook the chicken, heat 2 teaspoons of olive oil in a nonstick pan and saute the chicken until cooked, about 3-5 minutes per side. W hen it comes to comfort food my family doesn’t always crave a big bowl of stew or a

hearty bowl of pasta. Sometimes they actually ask for healthier options that really nourish them.
