Black eyed peas are very healthy and tasty. It is mildly flavored with lemon and spices. It is easy to carry in lunch boxes or can be taken as quick dish for a breather break. This recipe is a perfect combination of health and spices which can be eaten as an evening snack.

Lemon Tea Bag : 1 bagBlack Eyed Peas : 2 cupsWater : 1 cupGinger :1 tspGarlic :1 tspSalt : As requiredGreen Chilly : 1 chopped finelyOnion : 1 medium sizedCoriander : 2 tbsp finely choppedPepper Powder : 1 tspOil :1 tsp
Preparation
Soak Black eyed peas overnight and cook for 2 whistles.
Bring 1 cup of water to boil. Off the flame and infuse Lemon tea bag in water and make decoction. Do not dip for more than 1 and ½ minute in water. Heat oil in a kadai and fry ginger, garlic and green
chilly Until pungent smell subsides.
Add black eyed peas to this mixture and mix well. Cook this mixture for 3-4 mins. Add 1 cup of lemon tea water and combine all the ingredients. Ensure that all the peas are coated well. Simmer
This mixture for 8-10 mins by covering with a lid. After 8-10 mins, add the remaining spices. Off the flame. Serve with onion and chopped coriander.
