Increasing temperatures areimpacting the production ofwine around the world.

Most grape growers will tell you theirgrowing seasons are getting warmer. Overthe past 50 years, growing season temper-atures have increased for most of the world’shigh-quality wine regions by an average of2ºC. Although that may not sound likemuch, grape growers are noticing the effectsand making necessary adjustments.

While some regions are becoming too hot togrow grapes, new wine regions in cooler lat-itudes are opening up. Australian winemakersare investing in land in Tasmania, a coolerisland south of Australia. French champagnemakers are buying land in southern England, and Spanish winemakers are moving theirvineyards from the valleys to the mountains.

While warmer climate vineyards will not bedisappearing anytime soon, vineyard ownersand wine makers are noticing the changesand are beginning to adapt. Vineyards areadjusting by implementing new plantingmethods or by changing the types of grapesthey grow. In the past, growers would plantand prune their grapes in ways that wouldallow maximum sunshine to penetrate thevines. Now, they are findings ways toincrease shade and minimize direct sunlight.

Pinot Noir and Pinot Grigio are grapes thatrequire mild summers and chilly nights. Whilewarmer temperatures have actually helpedimprove the quality of these wines in Oregonby providing higher yields and sugar levels, heat is causing challenges in regions furthersouth. In the Central Valley of California, forexample, these delicate grapes are becomingmore difficult to grow.

Warm sunny days, which allow the grapes toproduce sugar, and cool nights are essentialto produce great wine grapes. Sugar levelsdetermine the alcohol level, so grapes withhigher sugar levels will produce wine with ahigher alcohol content. Alcohol levels of at least 11% are important to the taste and thelongevity of a wine.

Cool nights allow the grapes to retain theiracidity and produce compounds that createsubtle flavors. Although important for mostgrapes, cool nights are essential for whitewines that are crisp or fruity such as Rieslingand Pinot Grigio. Places like Napa Valleyand Sonoma have not yet reported overallhigher temperatures, but they have noted thatnights are not as cool as in the past. Manywinemakers have adapted by replacing moredelicate grapes with fuller bodied wines thatdo better in warmer climates such as Syrah,Zinfandel and Tempranillo.

California has established quite a reputationfor big, bold red wines with high alcoholcontent, such as Monster zinfandels with analcohol content of about 16.5%. Additionally,Tempranillo, a grape that is used to baskingin the hot Spanish sun, has seen a surge inproduction in Australia and California.

We at Island Winery are very happy aboutthis, since we love Tempranillo. We justbottled our big bold 2012 vintage and it isavailable now.

Stop by Island Winery for a great selection ofwines, including vintages from across thecountry and around the world. Our friendlyand knowledgeable staff will be glad to offersuggestions to help expand your horizons.

The Importance of SALT MARSHESCourtesy of the Coastal Discovery Museum

Although mucky and smelly, the salt marsh is an important part ofthe Lowcountry.

In actuality, the salt marsh produces more food for the environmentthan rain forests. The green grass that dominates the marsh is calledsalt marsh cord grass or Spartina. When this cord grass dies eachwinter and decomposes, its nutrients are released into the marshmud, creeks, streams and even into the ocean. These nutrientsbegin the food chain for the entire Southeastern coastal area.

So, the next time you enjoy a meal of shrimp, mussels, oysters, bluecrab, stone crab or saltwater fish, thank the muddy salt marshes.

Caleb had just tossed the livemenhaden out, the rod immedi-ately bent double and the linesizzled off the reel.

Thirty yards behind the boat, thechrome-plated behemoth wentballistic, giving us a show ofacrobatics second to none. Andthen, in the blink of an eye, hewas gone.

Caleb looked at me with that“what happened” face. All I couldsay was, “That’s tarpon fishing, son!”

If there is a silver lining to the darkcloud of the dog days of latesummer fishing, it would be thesilver king or tarpon that invadeour local waters in full force inlate August and September.Averaging 80 to 120 pounds, there are few fish that can equalthe ferocity of the tarpon whenhooked up.

Keeping them on the hook is theproblem.

How many you “jump” asopposed to how many you catchis the normal conversationamongst anglers discussing theirday of tarpon fishing. With mouthslike cement, blistering runs andmultiple head-shaking aerialdisplays, sometimes you have tobe just plain lucky to keep thehook in. Super tight drags, notnormally recommended, seem toincrease your odds of a hook-up.

At both ends of the island, PortRoyal Sound to the north andCalibogue Sound to the south arebordered by sandbars that stretchseaward for miles. The big schoolsof menhaden washing in and out

with the tides often seek the shallow waters aroundthe bars, looking for sanctuary from the maraudingtarpon. Anglers usually concentrate their efforts alongthese sandbars, although many tarpon are caught indeeper holes too.

These big silver fish also can be found in local riversand creeks. More than once I have heard anglers tellof how they were reeling in a speckled trout back inthe creek only to have a tarpon take their trout andall of their line. Fishing the shallow edge of deepholes in creeks can be quite productive as tarpon areoften seen “rolling” in these spots.

As with most “ultimate gamefish,” a few seconds onthe rod -- and seeing the resulting show -- willencourage anglers to spend hours of waiting andanticipation, just to repeat the experience. Fishing fortarpon in the Lowcountry is an unforgettableexperience for anglers of all skill levels.

A one-word description of the tarpon? Awesome!

South Carolina has an abundantand diverse shrimp population. Both individuals and commercialfisheries harvest shrimp throughoutmost of the year in the SouthCarolina Lowcountry.

The Hilton Head Island area has three primaryspecies of edible shrimp: white, brown and pinkshrimp. The white shrimp are the mostabundant, being harvested August throughDecember and at times into January. Brownshrimp are harvested in the spring and earlysummer. Pink shrimp are far more scarce andare usually only found as by-catch of white andbrown harvests. Each of these species appearsto be quite similar, but they vary in body and tailcolors.

White shrimp are much lighter in color, andtheir tails are black near the base with brightgreen or yellow margins. Brown shrimp willhave notes of red, blue or dark green pigmentson their tail and body. Pink shrimp have anazure coloring on their tail as well as asignature dark red spot on their abdomen.

Shrimp have three major modes of locomotion. When resting or feeding, they travel shortdistances using their walking legs. Shrimp areknown to be omnivorous bottom feeders, whichmean they don’t have to travel far for food. Totravel long distance during migration, shrimphave swimming legs located under theirabdomen. These crustaceans have been known

to swim up to fivemiles in a singleday. Shrimp alsohave a form ofmovement knownas the tail flex, aquick contraction of the tail andabdomen whichpropels the shrimpbackwards. This motion is commonly used as aself-defense mechanism.

Shrimp typically spawn in ocean waters nearbeach areas and up to a few miles offshore. Asingle female may produce between 500,000and a million eggs, several times in a season.Less than two percent of these eggs will surviveto be adult shrimp.

After spawning, eggs sink to the ocean floor.Within 24 hours, the eggs hatch into shrimplarvae. The white shrimp spawn in the springand early summer, while brown shrimp spawn inthe fall. The young larvae pass through 10different stages before they head inland to theirnursery habitat. It is thought that an upwellingof warm water in late February and Marchcarries the shrimp larvae to the tops of saltmarsh estuaries with high tides. The post-larvalshrimp will stay in these areas for two to threemonths, eating and growing.

During high tide, the young shrimp feed amongthe marsh grass and then return to the estuarybed at low tide to elude predators. Every timethe young shrimp grow, they must molt toaccommodate their new body size. When theshrimp are about four inches long, they willreturn to the salty ocean to begin the spawningprocess again.

DID YOU KNOW?The largest white shrimp recorded in the state ofSouth Carolina was 10 inches long. It wasestimated to be 14 months old.

By Jessie Renew, Outside Hilton HeadSandbar Treasures

One of the best ways to get outside inthe Lowcountry is to search for shells andother wildlife on the sandbars, banks andbeaches in the area. The best time to gois at low tide, especially on a full or newmoon. The variety of species you can findis particularly good after a storm brings innew ocean currents. Our Atlantic beachesoffer excellent opportunities for collectingshells, however, the best place to see shellsin all stages of their life cycle is on tidalsandbars accessible only by boat.

There are numerous sandbars in thewaterways surrounding Hilton Head, both off the beach and in tidal rivers andinlets. Hire a guide and kayak out to JoinerBanks off the beach on the north end of theisland. If kayaking isn’t your thing, take apowerboat cruise to a sandbar off ofDaufuskie Island with great sightseeing anddolphin watching along the way. Once onthe sandbar, there is a lot to explore andlearn about in the water, on the sand andbelow the surface of the sand. Your captain orguide will point out different wildlife and itsrole in the unique sandbar ecosystem.

Each shell variety is created by a uniquespecies of animal. In the case of clams andsnails, the animal has specialized organs thatsecrete a chemical substance that creates theshell. The shell grows along with the animalinside it. Depending on which sandbar youvisit and the current conditions, you may seelive shells with their juicy inhabitants as wellas dead and empty shells you can collect. Ifyou’re lucky, you’ll even discover emptyshells, which are now home to hermit crabs.

Animals on the bottom of the food chain livebeneath the surface of the sand. These crea-ures include worms, clams and other bivalvesthat feed by sticking their proboscis (anappendage with a mouth at the end) abovethe surface of the sand, filtering plankton outof the water. The spawning season for thesespecies is mid-summer, when the gender-shifting adults spew millions of eggs andsperm into the water. Once fertilized, the tinyanimals begin to grow as suspended planktonbefore settling into their subterranean adultlife. The dense population of these animalssupports many of the other shelled species.

Wade out in the shallow waters surrounding the sandbar and look for live keyhole urchins, also known as sand dollars, as well as starfishand sea cucumbers. These animals have tinylegs they use to move across the ocean floor. In the case of starfish, the creature’s vascularsystem pushes water through the legs to move. The starfish also uses its legs to trap clamsand worms and ingest them through a mouthin the bottom center of their bodies.

Cruising the beach closest to the water, youwill see many sea snails sliming along. Thesespecies are unique in that they are adaptedto predation of other soft-bodied mollusks. They use their slimy, muscular foot to pryopen clam shells and then slurp away thebody of the inhabitant with specially adaptedteeth on their proboscis. One commonvariety of sea snail is the Lettered Olive, thestate shell of South Carolina, which has anelongated shell with a distinctive pattern ofbeiges and browns. Another common sandbardweller is the Whelk species, four varieties ofwhich are common in this area. Other sightson the sandbar include numerous fish, rays, small sharks, sea turtles, sponges, corals, shark teeth and much more.

How to increase your results on short shots andmaximize long shots.

Short Siding & Long SidingBy Doug Weaver, Palmetto Dunes Oceanfront Resort

What a tangled web we weave on the golfcourse! Even the most accomplishedgolfers put themselves in sticky situationson or near the green.

One of the stickiest situations golfers get ininvolves short siding, which typically occurswhen the pin is located close to the edge ofthe green where the golf shot is to be playedfrom, but there’s not much green the ball canland upon before rolling to the hole. Shortsiding means you’ve put yourself in a situa-tion where you have limited shot options, increased pressure and an elevated risk ofmaking a bad shot.

By any measure, short siding yourself is bad.It requires making tricky shots that involve ahigh degree of touch and feel. If you’re 10yards from the hole, with the ball stuck insome fringe rough, you have to use strategyto make the shot. We all know the feeling –you’re close to the hole and yet you feel sovery far away.

In a short siding situation, remember to hit tothe long side and keep your emotions undercontrol. Work on your short game withstrategic putting and chipping and rememberthat, when the pressure is on, you’ll need tobe extremely precise so you can chip the ballto land on the green.

If you choose to putt in a short siding situa-tion, you may have your work cut out for you,as you’ll have to make the ball traverse overrough grass. Over time, you’ll learn to judgehow the ball rolls across the fringe and on tothe short grass of the green.

By definition, long siding refers to a situationwhen the pin is located further away from theedge of the green where the shot is to beplayed from. In a long siding situation, there’s usually a fair amount of green for theball to land and roll to the hole.

In other words, the ball is further from thehole, but you have more of a clear, smoothshot. You can usually just relax, putt or chipand let the ball roll into the hole.

Whether you’re facing a short siding or longsiding situation, remember that a bad putt isusually better than a good chip. That’sbecause chips tend to be more erratic andapproximate. A good putt is smooth, con-trolled and precise. And, after all, when theball rolls right into the hole, that’s when golfgets really fun.

Your short game is where you have a greatopportunity to reduce your overall score byperfecting your shots on the green. I inviteyou to take my Shortgame 1 Class at thePalmetto Dunes Golf Academy, which willhelp you refine your skills. Practice reallydoes make perfect!

Enjoy your time on the golf course thismonth. Hilton Head Island is truly beautiful inSeptember, when the temperatures start tocool down and the conditions on the greenare ideal. We have some of the finestchampionship golf courses in the world. Takethe time to test your mettle and develop yourskill. I’ll see you out on the course!
