So you’re a newbie to wine tasting, and you’venever set foot in a winery tasting room. Well, worrynot. A tasting room is an area set aside in a win-ery where visitors are encouraged to sample thevarious wines before purchasing. Tasting roomscan range from a grand space to an intimate,informal area set among casks of aging wine.

Most tasting rooms keep regular hours so you canjust show up whenever the wine sampling cravestrikes. Most people who work behind the “tastingbar” are friendly and eager to help you find thewine you love. Tell them what flavors you like orif you like sweet drinks. They will pour a series ofwines to suit your palette. There is no such thingas a dumb question in a tasting room, so don’t beshy about learning about the wines you are trying.

The tasting room staff will typically give you onefluid ounce of the wines you would like to taste,which is about 20 percent of a regular glass ofwine. Keep this in mind and be sure to pace your-self. You don’t want to be that guy or gal who hasa little too much fun at the wine tasting!

Most wineries have handy vessels where you candiscreetly spit out your wine samples to preventyou from becoming too intoxicated or if a partic-ular wine does not agree with your tastebuds.Don’t be shy about using these vessels. Of course,don’t be afraid to get a full wine experience eitherby swallowing your wine. Just know your limit,particularly if you are the designated driver.

Once your wine is poured, hold your glass upto the light. Examine the color. Don’t worry if youcan’t tell the difference between a ruby red and agarnet red. Just note the color so you can learnto spot a great wine in the future. Different wineshave a unique ideal color range. Looking at thecolor helps to make sure that there are no impu-rities, bits of cork or insects sharing your wine.

Next, give the wine a little swirl in the glass. Begentle and get a little air in there. You look like acool, savvy wine taster when you do this, so swish

away like you own the place. Then, place yournose in the glass and inhale. Put your face rightin there and try to get a good sniff. A great winealways smells fragrant. Smelling wine is a person-al affair, and everyone detects different “essences”in their glass. “Hints of raspberry” and “new wood”are more descriptive than “grapey,” but in the end,the whole thing is subjective.

Now, the moment of truth: the taste! Have just alittle sip; don’t chug it like a shot. You’re in a tast-ing room, not an ale house. Let the wine flowover every part of your tongue. A wine may besweet or dry. Since sweetness is detected at thetip of your tongue, this may be the first thing youwill note. Next, feel the wine roll to sides of thetongue. You taste sour notes here, so this is whereyou will detect any acidic notes.

Finally, you taste bitter notes at the back of yourmouth. This is where very young or over dry wineswill leave you with an unpleasant aftertaste. You’llfeel any alcohol as a slight tingle in the back ofyour throat. Using these basic sensory inputs, youcan then make a sophisticated analysis of a wine:“I tasted a semi-sweet, low acid wine with hintsof a gentle melon after-taste.”

After the tasting, you should have a sense of whatyou like and don’t like. Don’t expect to love allof the wines you sample, but a good tasting expe-rience will leave you with at least one wine you’dlike to purchase. If the winery you visit offers com-plimentary tastings, it is generally good etiquetteto purchase at least one bottle of wine. If you wereable to try 12 wines, the winery has poured theequivalent of a half a bottle of wine, so don’ttaste and waste.

Wine tasting for fun is far different than being aprofessional wine analyst for an auction house, sodon’t worry about getting all formal wine tastingsteps just right. The tasting room is a great placeto get started on a wine tasting journey. A goodtasting room staff will give you all the encourage-ment you need in finding your inner-wine critic.

Curb AppealIf your home is unkempt and unattractive onthe outside, chances are buyers will just keepon going. Get PackingRemember, once your home goes on the mar-ket, it really isn't your home anymore. It’s aproduct to be marketed. Don't wait till after youget an offer to start boxing items up. The Atlantic Horseshoe Crab

The Atlantic horseshoe crab, Limulus polyphemus,can be considered a living fossil. It has been inour geological records for more than 400 millionyears with almost no physical changes. However,these animals play an important role in the circleof life, providing food for other organisms andoffering humans medical benefits.

Despite the horseshoe crab's name, it is not, infact, a crab. The horseshoe crab is actually moreclosely related to spiders, ticks and scorpions. Asmooth shell called the carapace covers the mainbody of the horseshoe crab. The curved shape ofthe shell is most likely where the animal obtainedits name. These animals live on the ocean flooreating mollusks, worms and other invertebrates.

They spend most of their life in the deeper watersof the continental shelf. The rest of their lives arespent developing and breeding in shallow watersof estuary systems. Like other hard structures andsubstances in the ocean, the carapace of the horse-shoe crab may acquire other organisms such asbarnacles, algae, flat worms and mollusks.

Horseshoe crab bodies are divided into three parts;the prosoma (head), opisthosoma (abdomen) andtelson (tail). Horseshoe crabs have six pairs of legsand one pair of chelicerae, which are used to cap-ture and crush food before it is put into the mouth.The horseshoe crab has no jaw. Instead their mouthis located on the prosoma and surrounded by theirlegs and hair-like fibers that help break apart food.Hairs located on the legs also aid in breaking upfood before it gets to their mouth.

The opisthosoma contains flattened plates, calledbook gills, which aid in respiration. They can breatheon land for short periods of time, as long as thegills are moist. Finally, there is the telson, whichaids in steering underwater. If the horseshoe crabflips over it is able to use the telson to right itself.

If you were to look at the underside of a horseshoecrab, take note of the first set of legs. If it is afemale she will have claws. If it is a male, he willhave hook-shaped claspers. These claspers are

used to hold onto females during breeding.Males will grip onto the females and canstay attached for several months duringtheir spring reproduction. Multiple malesmay clasp onto a single female. At a hightide and usually at night, females will enterthe shallow water and lay up to 64,000 eggsin a season. While the female is laying hereggs the male(s) will fertilize them. Younghorseshoe crabs will hatch as free swim-ming larvae after about 10 days. They willeventually settle on the ocean floor andbegin their first molt (shedding of shell).

A horse shoe crab will not reach maturity until nineyears of age. It will have molted about 17 timesbefore it hits its maturity. Horseshoe crabs may liveto be 40 years old.

Horseshoe crabs are of great value to the medicalfield. Their blood has proven to hold great defensesagainst pathogens. Research institutes found thatthe horseshoe crab’s blood is able to detect anddefend against bacterial diseases. Astronauts havealso used it to discover bacteria and fungus onsurfaces in space. Experiments are ongoing toascertain if horseshoe crab blood can be usedas a natural antibiotic. Animals used for experi-mentation are returned to the ocean after a smallamount of blood has been taken. Blood volumewill return to normal within a week. Only threepercent of horseshoe crabs used in experimenta-tion are lost.

Horseshoe crabs are not endangered, but therehas been a slight decline in their overall num-bers due to habitat destruction and harvesting.Horseshoe crabs are used as bait when catchingeel, whelk and conch.

However, horseshoe crabs also serve as an impor-tant food resource for some endangered seacreatures. Loggerhead sea turtles eat the younghorseshoe crabs, while red knots eat their eggs.It has been found that 10 percent of horseshoecrabs die during mating, due to being flippedby rough surf. The Ecological Research andDevelopment Group, established in 1995, hascreated a “Just Flip ‘Em” campaign in order tolower this percentage.

Sounds of the Saltmarsh

I frequently say that venturing throughthe saltmarsh is a multi-sensory expe-rience. We can see it, smell it, feel it,taste it, and hear it. The saltmarshis truly a feast for the senses!

Imagine being guided through themeandering grass linedcreeks – in a boat, akayak, or on a stand-up paddleboard – withyour eyes closed. Whatdo you hear? Thebreath of the passingdolphin. The effortlesswing beats of the greatblue heron. The splashof the plungingpelican.

There are also twodistinctive sounds thatpenetrate the salt air. They are among myfavorite things to listen for when I’m out onthe water. The first is the melodic trill of theMarsh Wren, a little brown bird that anxiouslyflits from one grass top to another. This timeof the year, the males are busy courting andbuilding nests.

Woven from surrounding grasses, the maleMarsh Wren will build about half a dozen nestsin an attempt to attract his mate. She may likehim, but not his nest building abilities, so shewill simply weave her own nest in his territory.These nests are typically located near the topsof the grasses, and attached to the outer bladesin such a way as to allow the nest to rise up onexceptionally high tides.

The second sound is performed by the ClapperRail, a reclusive bird that is rarely seen butoften heard. This bird lives exclusively in thesaltmarsh, all along the eastern seaboard fromNew Jersey all the way south. Perhaps you’veheard him in your own neck of the woods. Hen-sized and rather drab in color, these birds wouldprefer to swim across the narrow creeks thanto fly. When in-flight, they appear rather fran-tic and awkward. Darting on foot through theclumps of cordgrass, they search for food,make their nests and raise their young.

Listen for the “clauk, clauk, clauk, clauk” ofthe Clapper Rail. Beginning with hesitation,their call eventually builds to a crescendo. Anindividual will call from one side of the creek,followed by a response from the other side.Soon, a wonderful cacophony of Clapper Railsong fills the air. In my opinion, this is the bestmusical performance of the saltmarsh.

Ironically, one of the best ways to improve yourputt is to close your eyes.

Putting with your eyes wide shut might sound crazy,but this is a savvy trick many professional golfers useto get in tune with their stroke on the green.

Australian golfer Peter O’Malley has said, “I’m puttingwith my eyes closed. Everyone laughs when I say it, butit’s true. It takes away the visual anxiety. When you getover those short putts and you can’t see what the putt’sdoing, it takes away the anxiety. With the eyes shut, I hitit more firmly than I probably would with my eyes open.”

PGA Tour golfers Colin Montgomerie and JohnnyMiller have each drawn attention from the media andfrom spectators alike for putting with their eyes closedin major tournaments. However, this technique canwork wonders for recreational golfers as well.

The eyes-closed strategy teaches you to feel the strokeand trust the mechanics of the putt. Once you developthe proper putting mechanics, you can get the ballin position, stand up tall and practice putting withyour eyes closed at various distances from the hole.

Remember, one of the biggest obstacles to puttingis the human mind. If you overthink the putt, you’llover involve your body. The putter should serve as apendulum, swinging back and forth and deliveringthe ball to the cup, plain and simple.

By closing your eyes, you’ll feel the stroke with yourbody and take your mind out of the equation. You’ll

phy also relax and focus more fully on the

task at hand. And, as Peter O’Malleysaid, you’ll reduce the anxiety associat-ed with trying to make the perfect putt.

You can try this drill over and over on thegolf course, moving the ball back a bitfurther each time. Remember that theputter knows what to do. You just needto encourage it to do it.

Another great putting drill involves keep-ing your eye on the back of the cup,rather than on the ball itself, during ashort putt. Gently putt the ball into thehole while keeping your eyes glued onthe back of the cup. Like putting with youreyes closed, this exercise also encouragesyou to relax, think less and have faith inthe simple physics of the putt.

If you incorporate this putting drill intoyour practice routine, you should beginto develop a better feel on the green. Byeliminating visual distraction, you canfocus on the feel of the putt, which iswhat really matters.

Above all, don’t let your mind hold youback on the golf course. Use these twosimple drills to increase your accuracyand refine your putt. You just may see amajor improvement in your performanceon the green.

Remember that May is a great month toplay golf on Hilton Head Island and anideal time to perfect your swing. Havefun on the course!

Harbour Town Lighthouse

The first privately financed lighthouse builtsince the early 1800s, construction of theHarbour Town Lighthouse was completed in1970.

Nicknamed “Fraser’s Folly,“ Charles Fraser,the visionary developer of The Sea Pines Resort,believed a distinctive landmark, along with aprofessional golf tournament, would arouseinterest in the fledgling seaside community.
