Beach season is in full swing on Hilton Head Island and there are countless cool ways to enjoy sizzling summer days.

Pick a prime spot along 12 miles of shoreline and ease into your vacation by splashing in the surf, searching for seashells or building castles in the sand. Head to the nearest marina and spend “A Day on the Water” look-ing for dolphins, fishing, kayaking, sailing, jet skiing, parasailing and tubing or simply set sail on a sunset cruise. Rent a bicycle and pedal more than 50 miles of paved public pathways, explore the Island’s unique natural and cultural history on a guided tour, play all day at area parks and playgrounds, sign up for a golf clinic or just relax poolside with an ice-cold drink in hand.

After time spent shopping at local boutiques, specialty shops and factory outlet stores, savor fresh seafood, All-American favorites, Mexican fare, Continental cuisine and signature cocktails at hun-dreds of local restaurants. Before or after dinner, enjoy an eve-ning of outdoor concerts and movies, gala productions, fireworks and family entertainment.

Southwestern Crab Cakes with Roasted Red Pepper Sauce

Ingredients for Crab Cakes:1 lb Jumbo Lump Crabmeat1 diced Onion (sauté in peanut oil)1 tbsp Garlic (sauté in peanut oil)1 Red Pepper, diced1 Yellow Pepper, diced1 Fresh Jalapeno, diced1 tbsp chopped Cilantro1 tbsp Old Bay® Seasoning1/2 cup Mayonnaise 1/2 cup Bread Crumbs

Ingredients for Red Pepper Sauce:1/2 Onion, diced3 large Bell Peppers1 tbsp Garlic6 oz Butter1/2 tbsp Shrimp Stock1 can Chicken Broth2 Chipotle Peppers

Method for Crab Cakes:• Form crab cakes.• Pan sear to a golden brown. • Place in an oven at 400° for 7-10 minutes or until hot.

Method for Red Pepper Sauce:• Put all of the ingredients in a stock pot.• Simmer until most of the mix has evaporated.

• Purée until smooth and add 1 cup heavy cream.

Serves 8

the combinations of different fruits, wines, liqueurs and spic-es, you can see how the possi-bilities are endless.

The same is true for a Mule.

The base ingredients are ginger and at least one citrus fruit (usu-ally lime) and, some may argue, the copper cup. Although vodka is required in the Moscow Mule, not all Mules need vodka. The Mule can go in so many differ-ent fruity and herbal directions; from tart with pomegranate, to sweet with strawberries or water-melon, to earthy with rosemary. Like Sangria, the versatility of this cocktail makes it truly an all- weather, all-occasion beverage.

One of my favorite Mule recipes uses white wine and takes advantage of fresh summer ber-ries. Add some sliced fresh straw-berries and the juice of one lime to two bottles of white wine—either Sauvignon Blanc, Pinot Grigio or Riesling—and refriger-ate, preferably overnight. To keep to the true Moscow tradi-tion, you can add a shot or two of vodka. When you are ready to serve, add 24 ounces of gin-ger beer and slightly muddled blackberries. Garnish with fresh mint leaves and serve over ice.

This recipe certainly fits the criteria for Sangria, as well. Unless, of course, it’s served in a copper cup.

The Moscow Mule, named such for its use of vodka, was created in the 1940s, when a vodka distributor and ginger beer maker joined forces to promote their otherwise unpopular beverages.

Esquire.com describes the scene of their birth at a pub where a marketer, who was having difficulties selling vodka to Americans, was airing his grievances to the pub owner, who was having trouble selling ginger beer. The two came up with a cocktail that would uti-lize both the vodka and the ginger beer. The beverage is typically served in a copper cup, which Esquire attributes to a third friend having difficulty selling his product, as well.

While the origin of the Mule drink is not very glamorous, the drink itself truly has sophisticated appeal.

A quick divergence to Sangria will help clarify the basics of a Mule drink, since there are a lot of similarities—the main one being that there are core ingredients which always must be added. Then, from that sturdy base, the drink can go in all different directions. The basics for Sangria are wine and fruit.

The wine can be either red or white and there must be at least two types of fruits: one citrus and the other non-citrus. Mix it up in a pitch-er and serve over ice with, perhaps, a splash of soda, and you could be done. Or, you can go a step further, by adding another alcoholic beverage such as cognac, brandy or fruit liqueurs and then, instead of using soda for bubbles, you can splash with spar-kling wine. The next step up would be to add bitters and aromatic spice such as cardamom, cloves, ginger or lavender. Thinking about

The towering 12-foot bronze statue of Neptune, which doubles as a larger-than-life

sundial, serves as an iconic symbol of Shelter Cove Harbour at Palmetto Dunes, welcoming visitors to the entrance of the popular waterfront dining and shopping location.

Designed and installed by sculptor Wayne Edwards, this much-loved statue serves as a tribute to Neptune, the Roman god of the sea. The King Neptune statue, which depicts a bearded Neptune holding his signature trident, serves as a popular centerpiece at Shelter Cove Harbour. The statue is strate-gically mounted on a circular base with numbers around the edge.

When the trident’s shadow falls across the 26-foot wide base, the numbers indicate the pre cise time. Hailed as the world’s largest figu-rative sundi al, the statue was origi nally cast at a foundry in Princeton, New Jersey and shipped by truck to Hilton Head Island in 1983. Engineers made meticulous measure ments before the one-ton statue was installed, ensuring that it would be located at the ideal angle to indicate the time.

They oriented the sculpture towards true south by aligning the constella-tion Ursa Major with the North Star.

An official dedication for the statue was held at Shelter Cove Harbour on August 11, 1983, attracting residents and visitors alike. Today, the King Neptune statue delights gen erations of visitors to Shelter Cove Harbour, impressing adults and children of all ages. Parking & Facilities: There are 23 metered spaces at Alder Lane; 54 metered spaces at Folly Field and 13 metered spaces at Burkes Beach Road. The parking fee is a QUARTER for each 15 minutes. Additionally, there are 207 spaces at Driessen Beach Park for long-term parking. The fee is a QUARTER for each 30 minutes during the week.

Parking spaces at Islanders Beach Park are ALWAYS reserved for annual beach passes. Parking at Driessen Beach Park for annual beach passes is reserved from 8 a.m. to 3 p.m. Parking is FREE at Fish Haul Park, Mitchelville Beach Park and Coligny Beach Park. Handicap parking is available at no fee at all parks.

Restrooms, changing areas, sand showers and vending machines are available.

Designated Swimming Areas: Official swimming areas have been desig nated for the Alder Lane, Coligny, Driessen, Folly Field

and Islanders Beach Parks. The boundaries will be clearly marked on the beach and in the water. Lifeguards are stationed at these designat-ed areas for assistance and beach information.

Beach Marker Signs: Hilton Head’s beaches are marked near the dune line with signs to let emergency responders know where assistance is needed. They are also useful as a reference point if you or your group should become lost.

Animals must be on leash or under positive voice control at all other times. Persons in control of animals on the beach are required to remove and properly dispose of excrement. RULES FOR THE ROAD:Please obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws.

Travel the pathways at speeds that allow for the safety of pedes trians and other users.

Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles.

Please do not ride on roads where a pathway is available.

Please ride single file and keep a safe distance from other bicyclists.

WATCH OUT FOR MOTORISTS! Motorists must yield to pedestrians and bicyclists within marked crossings, but they may not see you.

Please yield to pedestrians. When resting or stopped, please move off the pathway.

Most sections of the pathways are not illuminated. If you must bike at night, please wear light-colored clothing or carry a flash light. Bicycles must have a red rear reflector and a headlight when biking at night.

When approaching slower pathway users from behind, please sound your warning device, or call out, “Passing on your left.” Always pass on the left.

Bicyclists should always wear a helmet, especially children 12 and under.

Make eye contact and use hand signals. Assume other bicyclists and motorists don’t see you. Hand signals tell motorists and other path users what you intend to do and will ensure everyone’s safe enjoyment of the pathways.

Be courteous, alert and predictable.

At low tide, the Island’s 12 miles of beaches are ideal for biking. Public beaches are indicated on the Island

Events’ Island Map.

Our map also shows the existing public pathways. Many kiosks are located

along the pathways with an Island-wide map on one side, and a localized map of

the area on the other.

The water literally exploded.Ten feet in the air, shaking his bucket mouth, the silver king then reentered the water and went into overdrive. Line screamed off the reel and then…it was over. In local waters, this scenario is replayed again and again starting with the dog days of July and, some years, not ending until September. It is commonly referred to as “jumping a tarpon.”

With a mouth as hard as solid rock, getting a hook into a tarpon is not easy.

Factor in that most weigh anywhere between 50-100 pounds and are built for speed and acrobatic airborne maneuvers, keeping a hook in one can be even harder. Hooks usual-ly need sharpening—off the shelf just will not do—and drags tightened. Heavy action rods and reels that hold hundreds of yards of line will also increase your odds and boats that are hooked up generally pull anchor, just to keep the fish close.

Huge schools of menhaden flood the shoals and sandbars that reach for miles towards the ocean off both ends of the Island, and with them come marauding schools of tarpon. It is not uncommon to see dozens of huge tarpon rolling and exploding through the hapless bait schools. Oddly enough, it seems when you

see this scenario, you can’t get a bite. Often there is no visual presence when you catch—or more likely—jump a tarpon.

Also following the large bait schools are “teeth”—big sharks.

Big blacktip sharks offer aerial displays and tackle busting runs. The blacktips are not alone—lemons, bulls, tigers and hammer-heads are often caught by those fishing in the heat of summer when monster fishing is at its peak. If big sharks are your game, dropping bait behind a working shrimp boat will almost guarantee success.

July is a great month for fishing the “silver kings” or the “big teeth,” as well as many other species. King mackerel fishing has been better than it has been in many years, big jack crevalle are roaming the shoreline and the sounds with jumbo Spanish mackerel and an occasional cobia waiting to be caught.

Now is the time to treat yourself to some great fishing!

merican Alligators are ancient crea-tures. They have changed very little biologically in over 150 million years

and were able to avoid extinction 65 million years ago when the dinosaurs met their demise. During the mid-1900s they were almost hunted to extinction, but today can be found in abun-dance throughout the Southeastern United States and are considered a species of little concern.

Only found within the United States, American Alligators, Alligator mississippiensis, belong to the greater family of Crocodilians which includes alligators, crocodiles, caymans and gharials. There are only two varietal species of alligators: the American alligator and the Chinese alligator, which is critically endangered. Crocodiles are more commonly found throughout the world, however the only place to see this endangered species in the United States is in the Florida Everglades.

Great swimmers, alligators live in freshwater hab-itats such as ponds, lakes, rivers and swamps. They are often seen in the water or sunning on the sides of ponds and irrigational canals around Hilton Head. It is very uncommon to see them in salt water, but they can be found there on a few occasions. Alligators will enter salt water to cure algae and bacteria irritations in their skin and may also move through salt water as they travel from island to island looking for new habitats or mates. They have also been known to go into the salt water to hunt for food and then quickly return to their freshwater homes.

Most alligators are scared of humans; they will quickly hide underwater if they feel threatened. However, they are wild animals and can move very fast, so it is best to stay far away from them.

Alligators are cold blooded; this means that their body temperature is determined by the tempera-ture outside. During the winter months, their bod-ies shut down and they don’t eat for long periods of time and go into a dormancy until the weather warms up. Their body temperature must be at

least 60°F for them to digest food and explains why alligator sightings are more common during the summer months. The best time to go looking for alligators during the summer is in the morn-ings and evenings. Similar to humans, they can overheat and prefer to spend hot days in the water or in their dens.

Alligators can grow up to 15 feet long and can weight up to 1,000 pounds with males generally growing larger than females. At birth, alligator babies are six inches long and continue to grow up to a foot a year until they reach maturity. Around the age of seven, alligators begin to breed and their growth rate slows down. An easy way to determine the length of an alligator is to count the inches between the nose bump and eye bump; that number translates into feet. They can live to be 50 years old.

Once an alligator has reached maturity, it will find an area to claim as its territory. Territories usually consist of a dominant male and a number of different females, each living independently. They will then begin to build a den. Dens are open air cavities in the ground, usually with an underwater entrance. This decaying material in the ground helps to keep their body temperature regulated in both the summer and winter.

Alligators are definitely an apex predator. They will eat any animal, dead or alive, that they can get their jaws onto. Instead of chewing their food, they crunch down on it a few times and swallow it whole; this is partly why it takes them so long to digest their food. During the summer months, alligators eat about once every two weeks, depending on the size of the meal. The larger the meal, the less likely they will need to eat again in the near future.

As June draws to a close, one of the most exciting days of the Hilton Head calendar draws near—July 4th! Not only is it the best party of the year, it is also the pinnacle of our summer season; a reminder that there are only four more months of fun in the sun left before the sleepy, cool season.

The most difficult decision of the whole summer is what to do to on the Fourth of July. There are lots of great options for daytime and evening activities—all capped off by magnificent fireworks displays. For those wanting to experience a real Lowcountry Independence Day, get out on the water! Even if you’re not on the Island over the Fourth, there are weekly fireworks displays during HarbourFest at Shelter Cove every Tuesday through August 16 with similar tour offerings.

There are great options for water activities on July 4th, for all types of people and groups. For those who want a truly unique, adventurous experience, consider a Fireworks Kayak Tour. These are offered by most of the kayak outfitters on the Island—my choice would be to paddle on Broad Creek.

The trip will begin with about a 2-hour guided tour through the scenic creeks and marshes, while watch-ing the sun set over the water. Around dark, groups will pick a perfect viewing spot to see the fireworks displays, which are shot off from a barge in the mid-dle of Broad Creek. After the show, you paddle back into the marina and, from there, you can hit a nearby watering hole for more celebrating! For those who like the idea of watching the display out on the water, but aren’t so excited about kayak-ing, there are similar types of tours available on motor boats.

Boats can cover more ground than kayaks, so you will see more of the waterways, islands and marsh-es on the tour prior to the display. Your captain will then anchor the boat for the fireworks. If you can, choose to do this trip as a private charter, so it will be just your family and friends on board. On a pri-vate charter, you can also bring whatever snacks, drinks and decorations you like.

Want to be your own captain? Another great option is to rent a pontoon boat.

You can tour the waterways, fish, swim and have fun all day on your own private, floating living room! These boats are very safe and as easy to

drive as a car. You will be asked to bring the boat back to the marina before dark. From there, you can continue to hang out on the boat and watch the fireworks. It’s a great way to beat the crowds and have a comfort-able, exclusive experience. If you decide not to get out on the water, at least get close to it! Several waterfront restaurants across the Island—from Skull Creek, Broad Creek Marina and Palmetto Bay to Shelter Cove Harbour, Shelter Cove Towne Centre and Harbour Town—offer great views of the fireworks displays.

Whatever you choose to do this July 4th, keep in mind that the Island is very busy and that parking and traffic is gridlocked by early afternoon. Find your spot by midday and stay there until the show or travel by bike or foot. Also keep in mind the safety of your group; sun protection and hydration are a must!

This Independence Day, be sure to get out-side and enjoy the Lowcountry!

1 Golf carts have coolers on them. Items to put in the cart include: • Drinks with energy, electrolytes and vitamins • Small, damp towels that can be used to wipe your skin or place on your neck and face • Lotions and bug spray • A spray bottle with water for a quick refreshing spray 2 Wear loose-fitting clothing, preferably light in color. Long-sleeved shirts are a good idea.3 Sunscreen applied before and during the round will protect and cool your skin.4 Take your shoes off occasionally and wipe your feet down with the cool towel in the same way you wipe your hands, arms and neck. The cooling effect goes through the skin into your arteries and veins cooling blood circulating to other areas.5 Hit the ball into the shady areas. Oh, wait! Most of you already do that.6 Wear a hat with a wide brim. Some hats can be soaked in cool water without losing their shape.7 Avoid caffeine and alcohol while on the course, as these will promote dehydration.8 Bring a fan. OK, I am joking. Consider the moving cart a fan with gentle breezes to keep you cool.9 Eat a smart meal before the game. 10 During the round, enjoy small snacks of cold fruit or low-fat dairy products.11 Play early. There are tee times available at 6:45 a.m. allowing you to finish 18 holes by 10:45 a.m.12 Golf is much more fun as a family or with a group of friends. I suggest making lunch your big group meal. It is indoors, food digests better during the day and it allows for an early or late round of golf.13 Play late. Tee off between 4-5 p.m. to finish between 8-9 p.m. 14 Less is more. Staying cool is vital to a successful golf outing. Golf on Hilton Head Island is fun because of the game—it is social and it is outdoors.
