Serves: 4 Ingredients 16 slices of eggplant cut to 1/2 cm thick 3 tablespoons of extra-virgin olive oil 1 garlic clove, bashed 500g of full fat ricotta 150g of baby spinach 1 egg 1/4 cup of freshly grated pecorino 2-3 tablespoons of chopped herbs (like parsley and basil) 1/4 teaspoon of freshly grated nutmeg salt and pepper for seasoning For the sauce 2 tablespoons of extra-virgin olive oil 1-2 garlic cloves, bashed 1/8 capsicum strip

Forthetopping

• 150gfreshmozzarella,cutintosmallpieces• 3-4tablespoonsoffreshlygratedpecorino• Freshlygroundpepper• Basilleaves

MethodHeatupagriddlepan.Brushtheeggplantslicesusingtwotablespoonsofoliveoil,thengrillonbothsides.Inthemeantime,makeyoursimpletomatosaucebyheatinguptheoilinapan,bashthegarlicwiththebackofaknifethenthrowinintothehotoil,skinandall.Addthepassata,thecapsicumandsimmerovermediumheatfor20minutes.Seasonwithsaltandpepper,discardthegarlicandthecapsicum.Turnofftheheatandthebasil.Setaside.Heattheovento200°C.Whiletheovenisheating,makethericottafilling.Heat1tablespoonofoilinapanaddthegarlic,thendropinallthespinach,coverwithalidandcookoverhighheatfor1-2minutesoruntilwilted.Draintheexcessliquidandsetaside.Mixthericottawithcheese,egg,herbs,choppedupcookedspinach,nutmegandseasonwithsaltandpepper.Smear1ladlefuloftomatosauceatthebaseofamediumsizedovendish.Put1tablespoonoffillinginthemiddleofeacheggplantslice,rollthemuptoencloseitandarrangeeachrollontotheovendishinonelayer.Drizzletherestofthepassataontop,addthetornmozzarellaandgratedcheeseandbakefor25-30minutesoruntilgoldenandbubbly.Restatroomtemperaturefor5minutesbeforeserving.Sprinkleplentyofbasilontopandservewithadrizzleofchilioil.
