Queen MargheritaThe pizza was invented in Naples during the 18th century. Originally, it was just a dry, flat bread and was considered food for poor people. During a tour of her country in 1889, Queen Margherita of Italy tried some of the flat bread. She liked it so much that she ordered her chef to prepare various types of pizza for her. He decided to make a pizza containing the three colours of the Italian flag with mozzarella cheese (white), tomato (red) and basil (green). He then named the pizza in her honour - Pizza Margherita. It became one of her favourite foods.

Italians like to enjoy full-course meals at lunch and dinner, and take their time to eat it slowly in order to appreciate it better. Not many people in Italy eat a sandwich for lunch or bring a lunch box along. In many Italian cities shops and offices still close between 1pm and 3pm to allow their owners and employees to go home, have lunch and get back to work. In Italy companies with a workforce above a certain size are required by law to provide employees with a cafeteria that serves them warm lunches, or either provide them with meal coupons that can be exchanged for a fixed-price lunch at some restaurants.
Italians are very keen on preserving culinary traditions of their own area. Recipes are passed down from mothers to daughters (and to sons as well), and a girl’s ability to cook is still valued as an asset when she is dating someone. In Italy cooking is regarded as a way to com-municate one’s feelings, and being unable to cook or having no inter-est in food is seen as a social impairment.
The traditional Italian meal begins with wine and bread accompanied by olive oil or butter. The first course, or il primo, is typically a pasta or risotto dish. The second course, secondo, is something more sub-stantial like a fish or meat dish accompanied by a side of vegetables. Salad is then served in order to cleanse the palate and help the diges-tive process by cutting through the fats in the meat or fish. Finally, the dessert, il dolce, is served, immediately followed by espresso or an after dinner drink like grappa. Italian meals are typically very long and slow, sometimes lasting more than five hours.
