INTRODUCTION

Microorganisms live in every part of the biosphere, and some of them are even capable of growing at low temperatures, including those below the freezing point. These microorganisms live in the sea or in high mountains, but unfortunately also in the refrigerators, where they may spoil or, as pathogens, contaminate foods. Therefore, although storing foods in the refrigerator is the best way to keep them safe from bacterial contamination, there are also types of bacteria that can grow in cold temperature as well as inside the refrigerators.

Most of these microorganisms are well able to grow below temperatures of 00-20C. They can enter the refrigerator through raw and improperly packaged foods or even through an open refrigerator door by poorly cleaned refrigerator seals, or are already growing from lack of proper sanitation or warm temperature. If ingested, they can cause dangerous foodborne illnesses.

Normal daily cleaning of cooker hoods, kitchens, cold stores and freezers is not enough to remove deeper dirt. Stubborn dust nests, fats, insects, fungi and invisible) bacteriological contamination accumulate in places you normally cannot reach.

APPLICATION

Preventing mould growth in cold rooms and galley is acieved by controlling condensation, moisture and removing materials contributing to mould growth. Regular cleaning schedules for cold rooms prevent mould or contamination issues. Good housekeeping should help to discourage pest and vermin, but routine inspections should be carried out. For example the following have to be cleaned regularly:1. Dismantle the appliances prior to immersing their components in a dip tank filled with hot water and a suitable degreaser.

Components than can be dipped include: - Grease filters - Oven trays - Range tops and rings - Fryer pans - Grill trays - and other grease encrusted items

2. Pull equipment out so that you can clean both behind and beneath it3. Prior to cleaning the kitchen at shelf, isolate all electrical items and protect exposed switches with waterproof covering4. Remove excess grease from internal areas using wire brushes or scrapers prior to applying an appropriate cleaning solution to

the surfaces5. Steam clean walls and ceilings before returning equipment to their positions6. Sanitise cooking and preparation areas7. Steam clean and wet vacuum floor areas

IMPLEMENTATION

To implement the deep cleansing services, the following is included:1. A team of cleansing experts to travel to the vessel (supervisor and cleansing personnel)2. Due to differentiating timescales and changing scope of works, these works to be done by T&M rates3. A maximum period of four weeks (number of personnel can be increased to complete the scope of work within the

time frame where/if required)4. Personnel will work according pre-defined cleansing procedures5. Supervisor to coordinate and maintain the quality of the work consistent to requirements6. Including required cleansing equipment, materials and consumables7. Works to be inspected and signed by a designated client representative8. Report with conclusions and recommendations will be issued after completion of works
