WORK EXPERIENCE Research and development Executive for Pie Team Researcher for Bakery department on following benchmarks: Choco pie, Custard & Fresh Berry: - Formulating and improving the quality of product base on feedback from the market. - Research about the characteristic and function of ingredients used for Pie such as: shortening, flour, oil, flavor, emulsifiers, enzyme, preservatives. - Organize sensory evaluation for finished product which testing in the lab daily and factory sample after one week, one month of 2 factories to report for R&D manager about quality of product in the market. - Co-operate with MKT team and suppliers to survey the trend of market, get the feedback of sale mans & customer about the quality of product, find out the new ideas for improvement. - Give the solution to solve the quality problem in factory (machine, process, operation methods) - Develop and implement Standard Operating Procedures for laboratory and factory as well as HACCP, GMP, Food safety. - Conduct pilot trials, evaluate and give feedback on product test run, test for new ingredients and manufacturing processing to improve the quality of product. - Support technical for factory to ensure product is produced following the standard process - Localize raw materials and recipes from Korea to down cost of finished goods. - Work across functionally to write specifications for new product, new raw materials and manage existing specifications. - Check quality of ingredients by physical parameter (moisture, water activity, water absorption, analyzer texture) and chemical parameter (Protein content, fat content.) Research & Development staff Research for Food Solutions Category in Foods and Refreshment Department on following with benchmarks: Knorr meaty granule, Seasoning powder, Knorr Chicken powder - Responsible of all Shelf-life Test of Food Solutions - Conduct Sensory Evaluation Test of all session related to Food Solutions category. - Take part in activities of solving all of customer/consumer complaint. - Support category owner in checking/update Vietnam regulation - Food Solutions category in competitor monitoring activity. - Prepare Quality Declaration of Raw materials and Finished Goods. - Support pilot scale trials, shelf life study, organize sensory evaluation session with business team and fill data when complete.
