2011 Boys and Girls Club Co-ed Dodge Ball Tournament

Who: All 6th-8th grade boys and girls who would like to compete in the season’s co-ed dodge ball tournament. Your team will consist of 5 players, at least two girls need to play.

When: This tournament will be held on Saturday, March 26th from 10am-3pm

Where: Tournament and league will be held at Eastside Learning CenterYES locations. Registration forms are due by Monday, March 21st by 6:00

After a long Winter, most kids are ready to get outside and let some of that pent up energy loose. With Spring here and Sum-mer just around the corner, there are a variety of athletic camps available through the Avera Sports Institute.

“While our traditional training programs are six to eight weeks in length and consist of three 90-minute workouts per week, our staff can develop a training program to meet your needs andfityourschedule,”saysJasonAskew,AveraSportsInstituteManager.

One of the most popular training programs is The Athletic Republic program, which features off-season, high-intensity, performance-enhancing training for competitive athletes ages 12 through adult. Athletes completing the six to eight week program average improvements of .10 seconds in the 10-yard dash, .15 seconds in the ProAgility run and two inches in vertical jump.

The Avera Sports Institute is also home to the SEBA Baseball Academy. This is a development program aimed at Sioux Falls VFW and Legion Baseball players. A few months ago, while

having a disagreement, my

eldest daughter used some rather colorful

language in an effort to get across her feelings

toward me. These words were not met with

agreement and she and I, along with a bar of

Dove soap, had a discussion in the bathroom.

No more issues, until last night. While cleaning

up after dinner, she was telling a story about

something that had her fired up and the mother-

of-all swear words slipped out. She covered

her mouth in horror. While it was not in malice,

punishment was still warranted. We asked her

what she thought her punishment should be.

She sighed, “I’ll get the soap.” My husband and

I laughed and I made her fold a giant basket of

laundry instead. I guess I have her well-trained

at least.

I told my youngest boy Tyler(3) that I was going to be his teacher at daycare the next day and he looks at me all sad with tears welling up in his eyes and he says “ Then who will be my mom?!?!” It was so sad and funny that I laughed with tears in my eyes.

Breakfast RecipesHomemade DonutsIngredients 2 cans biscuitsGranulated sugarVegetable oil

DirectionsLine up biscuits assembly line style. Use a cap from a 20 oz soda to make a hole in the center of the biscuits. Heat 3 inches of oil on medium/high. Place donuts and donut holes in the oil for about a minute on each side, until golden brown. Remove from oil and place on a paper towl to soak up the excess oil. Give each child a small bag with some sugar in it, add the warm donuts to the bags and let them shake until donuts are coated.

Bacon & Egg QuesadillasIngredients6 strips of bacon6-8 eggs1 cup shredded cheese8 tortillassalsa

Directions Cook bacon, remove and place on paper towel to drain excess fat. Pour most of the fat out of the skillet. Scramble eggs in skillet that you cooked bacon in. Place tortilla on cookie sheet, top with scrambled eggs, bacon strips and cheese on top. Place another tortilla on top. Bake at 300* for 10 minutes, until cheese melts and tortillas are slightly crispy. Remove and slice quesadillas into quarters. Serve with salsa and fruit!

Easy Molasses Sticky BunsIngredients

2 loaves (16 0z.) frozen bread dough, thawed1/3 cup butter, softened1/2 cup sugar1 1/2 Tsp ground cinnamonMolasses Sauce:1 cup packed brown sugar1/2 cup butter, cubed1/2 cup water1/4 cup molasses

Directions Roll out each loaf of bread dough into a 10 in square. Spread with butter to within 1/2 in of edges. Combine sugar and cinnamon; sprinkle over butter. Roll up jelly roll style; pinch seams to seal. Cut each loaf into six slices. For sauce, in a small saucepan, bring the brown sugar, butter, water and molasses to a boil. Pour into a greased 13x9 baking dish. Place rolls, cut side down, in molasses sauce. Cover and let rise in a warm place until doubled, about 30 minutes.

Bake at 350* for 25-30 minutes or until golden brown. Cool in dish for 5 minutes; invert onto a serving platter. Serve warm.

Oatmeal in the Crock PotIngredients 1 cup steel cut oats2 cups water2 1/2 cups milk1 Tsp cinnamon

Directions Place the ingredients in a crock pot and stir to combine. Cook the oatmeal on low heat for 6-9 hours (the amount of time can vary depending on your crock pot. Some crock pots that don’t have non-stick surfaces can get hotter than others). Stir in desired accom-paniments and serve.

Directions Preheat oven to 350*. Whisk the first 3 ingredients in a bowl. In a separate bowl, whisk the peanut butter, egg, and sugar until combined, then whisk in milk until incorporated. Whisk the wet ingredients into the dry ingredients until just combined (you don’t want to over beat the mixture). Grease or line mini muffin tins and fill 2/3 of the way up with batter. Bake for 20 min or until toothpick comes out clean. Cool. Spread each cupcake with frosting.

BBQ Chicken QuesadillaIngredients 2 tsp canola oil2 Tbsp BBQ sauce6 - 10 inch flour tortillas2 cups shredded BBQ chicken, cooked2 cups shredded Mexican cheese blend

Directions Heat 1 tsp oil in a large skillet over medium heat. While oil is heating, spread 1 tsp of the BBQ sauce over each tortilla. Sprinkle 1/3 cup of the chicken and 1/3 cup of the cheese over half of each tortilla. Fold other tortilla half over the chicken cheese mixture. Place the quesa-dilla, one or two at a time, in the skillet. Pressing down lightly with a spatula, cook the quesadilla

for 1-2 minutes until golden brown. Flip with tongs, and cook on the other side for 1-2 minutes until the cheese is completely melted.

Banana Cream Cheese SammieIngredients4 slices whole wheat bread1/4 cup cream cheese, divided1 banana

DirectionsCut the banana in half for each sammie. Then cut each half into strips lengthwise (so the pieces are long and flat). Spread 2 tbsp of cream cheese on one side of the bread and top with one half of the banana slices. Place another piece of bread on top to make a sammie. Repeat with the remainder of the ingredients to make the second sammie.

Peanut Butter and Jelly PinwheelsIngredients1/4 cup regular or whipped cream cheese2 Tbsp jam or jelly1/3 cup peanut butter, dividedLavash (found in the bread sec-tion)

Gluten-Free Variation: use GF tortilla

Directions Place the cream cheese and jam in a bowl and combine until smooth. Spread 1/2 of the peanut butter on a piece of lavash and top with 1/2 of the cream cheese/jam mixture. Roll the lavash lengthwise into a roll and slice into bite-size wheels, about 1 inch each. Continue to make the second pinwheel sand-wich and slice.

English Muffin PizzasIngredients English muffin halves1 jar marinara sauce1 cup shredded Mozzarella cheese

Gluten-Free Variation: use GF english muffins

Directions Top english muffin halves with marinara sauce. Sprinkle shredded mozzarella cheese on top. Bake at 350* degrees for 5 minutes. Let cool, then wrap up.

PinwheelsDirections Preheat oven to 450*. Roll out pizza dough until 1/4 inch thick and the shape of a large rectangle. Evenly spread 2 tbsp of mustard on the dough. Sprinkle the ham and cheese on top of the dough. Start-ing with the end nearest you (the long end of the rectangle), roll the dough away from you, creating a cylinder. Lightly sprinkle flour on top of the roll to make it easier to cut. Use a serrated knife to cut the roll into 1/2 inch discs. Place pinwheels on parchment lined baking sheet and lightly press them with the palm of your hand to flatten and bake for 12-15 min.

Directions Pour yogurt into a mixing bowl. Peel and mince garlic; add garlic to the yogurt. Chop up a small amount of fresh parsley and add it to the yogurt. Add lemon juice. Mix together to combine. Rinse chicken and pat it dry. Sprinkle with (kosher) salt. In another bowl, place the bread crumbs. Sprinkle with salt and stir lightly. Butter a baking dish. With a pair of tongs, place the chicken, one piece at a time into the yogurt mixture. Turn it over thoroughly to coat. Then roll the chicken in Panko braed crumbs. Cover each piece thoroughly with bread crumbs and put in a baking dish. Place a slice of butter over the large part of each chicken piece. Cover with foil and bake in a 350* over for 1-1 1/4 hours, removing the foil for the last 15 minutes of cooking. When the chicken is nice and golden, remove from the oven and enjoy!Dinner Recipes

Wild West Sizzlin’ Chicken TacosIngredients 2 cups cooked chicken strips1/2 teaspoon ground cumin1/2 teaspoon paprika4 hard shell taco shells1 medium red bell pepper, cut into thin strips1 cup barbecue baked beans1 cup shredded Monterey Jack cheese4 slices bacon, crisply cooked, crumbled

Directions Heat oven to 400*. In small bowl, toss chicken strips with cumin and paprika to coat. In 8 inch square (2 quart) glass baking dish, stand taco shells side by side. Fill

each shell evenly with seasoned chicken. Divide pepper strips evenly over chicken. Top each with 1/4 cup baked beans and 1/4 cup cheese. Sprinkle with bacon. Bake 8 minutes or until thoroughly heated and cheese is melted.

Herbed MeatballsIngredients 1 lb ground chuck2 eggs 1 cup bread crumbs2 Tbsp italian seasoningssalt and pepper

Directions In a mixing bowl, combine the ground chuck, eggs, bread crumbs, Italian seasoning, salt and pepper. Form into 1” meatballs. Flash freeze and then transfer to a plastic freezer baggie. Or brown on all sides, then add spaghetti sauce and let simmer for 15-20 minutes, or until meatballs have cooked through. Serve over noodles or with side salad.

Southwest Turkey SoupIngredients 1 lb ground turkey1 Tbsp olive oil2 cans kidney beans, rinsed and drained2 cans chicken broth (14 oz each)2 cups frozen corn1 cup salsa1 can chopped green chilies (4 oz)1 Tbsp chili powder

Gluten-Free Variation: check label on chicken broth

Directions In a Dutch oven, brown 1 lb ground turkey in olive oil; drain.

Add 2 cans kidney beans, chicken broth, corn, salsa, green chilies and chili powder. Bring to a boil; cover and simmer for 10 min. Serve the soup topped with sour cream and fresh cilantro.

Crock Pot Macaroni and CheeseIngredients 1/2 lb elbow macaroni, cooked12 oz evaporated milk1 1/2 cups milk2 eggs, beaten4 cups shredded cheddar cheesesalt and pepper

Directions Coat the crock pot with non stick spray. Add all ingredients, saving 1 cup of cheese. Cook on low 4-5 hours. Sprinkle remaining cup of cheese over top a few minutes before serving.

Spread 1/4 - 1/3 of beef mixture on tortilla, then sprinkle with 1/2 cup cheese. Place second tortilla on top of cheese and repeat the beef/cheese/tortilla layering. The last layer should be a tortilla. Pour en-chilada sauce over top of “lasagna”. Bake at 350* for 30 minutes. Cut and serve with your choice of taco condiments: onion, tomato, lettuce, sour cream, black olives, etc. Din-ner Recies.Jiffy Ground Pork SkilletIngredients 1 1/2 cups uncooked penne pasta1 lb ground pork1/2 cup chopped onion1 can stewed tomatoes (14.5 oz)1 can tomato sauce (8 oz)1 tsp Italian seasoning1 medium zucchini, cut into 1/4 in slices

Directions Cook pasta according to package directions. Meanwhile, in a large skillet, cook pork and onion over medium heat until meat is no lon-ger pink; drain. Add the tomatoes, tomato sauce and Italian season-ing. Bring to a boil. Reduce heat; cover and cook for 5 minutes to allow flavors to blend. Drain pasta; add to skillet. Stir in zucchini. Cover and cook for 3-5 minutes or until zucchini is crisp-tender.

Directions Brown ground beef and drain. Add stewed tomatoes, tomato paste, and 1-2 cloves minced garlic. Simmer 20 minutes. In a separate bowl, combine ricotta cheese, beaten egg, parmesan and one clove minced garlic. Roll out dough onto pizza pan, spread on ricotta mixture. Spoon meat sauce mixture over ricotta, then spread shredded cheese over the top. Bake at 425* for 18-20 minutes.

Bangers and Mash Ingredients 3 potatoes, peeled and chopped1/4 cup milk, warmed1 1/2 Tbsp buttersalt and pepper1 pkg organic sausage (4 links)

DirectionsBring a large pot of salted water to a boil. Add the potatoes to the water, reduce heat to a simmer and cook for 12-15 minutes or until fork tender. Drain the potatoes and add to bowl with butter, milk, salt and pepper. Mash the potatoes with hand held masher until fluffy. Heat a lightly greased saute pan over medium heat. Poke sausage with a fork, add to the saute pan and cook for 7-8 minutes or until cooked through. Slice sausage. Place a heaping spoonful of potatoes on a plate and top with sliced sausage.

Directions Cook the spinach as directed on package and drain well. In a large skillet, add the olive oil, well drained spinach, diced tomato, and garlic. Add a few sprinkles of basil and salt and pepper. Saute for 5-7 minutes, or until fairly dry and liquid has steamed off. Pound out the chicken breast and place into a slightly greasted baking dish. Spoon the spinach and tomato mixture into the chicken breasts. Top with some shredded mozzarella and roll up. Repeat for all of the chicken breasts. Spoon any remaining spinahc around the chicken in the baking dish. Bake at 375 for 45-50 minutes. When finished, top with spaghetti sauce.

Lion & Lamb Paper Plate Project:

March comes in like a lion and goes out like a lamb, so why not track those weather days with this Lion and Lamb paper plate project!For our lion, we used an orange paper streamer to make this lion’s mane, but you can also use pieces of yarn if you have them.For the lamb my 2 year old had fun helping place these cotton balls around the outside of the plate. This gave our lamb its fuzzy look.

St. Patrick’s Day Projects

The end of the rainbow is where the Leprechaun hides with his pot of gold. We made this rainbow with part of a plate, some cotton ball clouds and some water color paint. You could also use crayons or glitter. What fun would a rainbow be without the pot of gold? We made ours with water color paints, crayons and we made the gold coins with school glue and glitter for some added sparkle.4 paper plates are used to make this Celtic spiral shamrock. We used a green crayon to draw some Celtic spiral shapes and then painted over them with water colors. The stem is cut from a paper plate as well. A little bit of school glue holds it all together. n

Exploring Celiac Disease with Nick & The Shrinking Inner Spaceship

When her son, Nick, was diagnosed with Celiac Disease, Marcia Schmitz was scared. There is currently no cure for Celiac Disease and they knew that their family was embarking on a life chang-ing journey. The more they educated themselves about Celiac Disease and how gluten affected Nick’s body, the less scary the disease seemed. The family wanted to share the same sense of manageable-ness with other families and came up with the idea for Nick & The Shrinking Inner Spaceship.
