Homemade Twinkie with White Chocolate Marscapone
TWINKIE
1 cup all-purpose flour1 1/2 tsp. baking powder
1/4 cup milk1/4 cup butter
1 tsp. vanilla6 whole eggs, seperated
3/4 cup white sugarpinch of cream of tartar (optional)
Preheat oven to 350°, spray muffin pans and put asideSift flour and baking powder, put aside
Melt butter, add milk and vanilla, put asideWhisk egg whites with 1/2 of the sugar to medium peaks then remove and put aside
In the egg white bowl, place the yolks and the rest of the sugar and whisk until pale and fluffyFold in the whites, then fold in the flour and then fold in the butter mix
Pour mix into pans or moulds and bake for 12 minutes or longer if neededUntil cake springs back when gently touched
MARSCAPONE WHITECHOCOLATE FILLING
1/2 cup whipping cream1 oz. Godiva white choclate liquor
1/2 cup white chocolate 1/2 cup marscapone
Bring whipping cream up to medium stiff peaks, remove from bowl and set asideMelt white chocolate in a bowl over boiling water
In the whipping cream bowl, whisk marscapone and add white chocolate and liquorMix throughly and then fold in whipped cream and serve
Homemade Twinkie with White Chocolate Marscapone
STRAWBERRY COULIS
1 pint strawberries (hulled)1/4 cup water
1/4 cup white sugar1/2 lemon juiced
Place clean strawberries in a blender with water and sugarPuree until smooth
Pour in to a pot or pan and simmer until thickenedStrain if seeds are not desired
CHOCOLATE “LATTE”
3/4 cup dark chocolate1 cup 35% whipping cream
2T instant coffee
Bring cream to a simmerPour over dark chocolate and mix until smooth
Mix in instant coffee and serve
