The holidays come but once a year but they do come. And yet every time feels kind of new which, in the case of Seasonal Tastes restaurant at 7th fl. The Westin Grande Sukhumvit, Bangkok goes for the festive feasting too.

“We prepare the turkey and ham for Christmas every year because guests love them and we want to make sure everyone is happy dining with us,” says Executive Chef Peter Zimmermann, preparing for his third festive season in charge.

Nevertheless, these turkeys are no ordinary birds. The menu reads “Roasted whole US turkey, dried fruit & sage stuffing, bacon-wrapped chipolata sausages, glazed chestnuts, giblet gravy,” and the tasting underscores why Christmas isn’t Christmas without such a treat.

Note, moreover, that as much stuffing as possible is cooked inside the bird, where it colludes deliciously with the turkey juices: that’s why it’s called stuffing! Moreover, this is sumptuous stuffing, built from a base

of herby, home-baked focazzia bread, with al dente chestnuts, crunchy pistachios and smooth pumpkin. A true “turkey with all the trimmings” listing, equally indispensable buttered brussels sprouts and roasted pumpkin, root vegetables and cherry tomatoes are added.

designed for optimum guest interaction. Chefs constantly mill behind laden coun-ters in theatre kitchens rustling up dishes to guest specs and keeping good-to-go items refreshed and replenished.

A special addition for Christmas and New Year is a gourmet foie gras station. On Christmas Eve for instance, expect foie gras/honey-balsamic jus and rocket and for brunch on Christmas Day, a Sunday, pan-fried French foie gras, berry sauce.

The multi-cultural, artery-friendly exposé starts with appetizers. Headlin-ing the selections meticulously arrayed around Seasonal Tastes’ swirly central buffet island are prime and premium seafood selections. As it’s Christmas and New Year, luxury items loom large: shucked on-the-spot oysters from France, varieties of smoked and mari-nated salmon, king crab, snow crab, New Zealand mussels, grilled rock lobster, plump prawns — “pretty much all the favourites everybody asks for.” This in addition to BBQ cod fish on Christmas Eve and roasted salmon, white wine, poached egg, salmon caviar, along with steamed fresh cod fish chili lime sauce, on Christmas day. Then there’s humus, babaganoush and tzatziki dips from the

Levant, Italian salami, Parma ham, mor-tadella and on, and air-dried beef from Switzerland. Plus a top-notch salad bar suffused with Seasonal Tastes’ signature superfoods selections.

Almost opposite is another star draw — the Japanese counter entirely fran-chised to the hotel’s multi-award-win-ning Japanese restaurant, Kisso. Naturally the sashimi is superb and the sushi and maki mouth-watering but arguably the station’s biggest hit is its cheeky chilled soba noodles.

But don’t overdo it yet. You’ll want to trawl the live station line, segueing between the Italian section complete with roaring pizza and Italian breads oven, and multiple pasta and sauce options, includ-ing nice surprises like spaghetti with sweet potato and pumpkin ravioli, ready to go. The gastronomic world-tour con-tinues with in-house Chinese dim sums steaming away, and noodle soups from across Asia, “because everybody always has a bowl of noodles.” Next are spicy Thai salads, soups and curries. Heading on are shiny chafing dishes hiding  Chinese and other Asian dishes as well as several western selections, bringing one back to the groaning carvery.

Also traditionally Christmassy are the desserts and bakes arrayed at the entrance to the open plan restaurant. The berries for the Christmas pudding, stolen, minced pies and fruit cake have long been marinating in copious volumes of spicy liquor, as is proper. Final preparations, however, take place moments before serving, along with the cinnamon stars, Italian Panettone, yule logs, gingerbread and all the rest of the Christmas desserts pantheon. This in addition to Seasonal Tastes’ essential Mövenpick ice cream counter, a festive chocolate fountain with gingerbread and donuts to dunk, extrav-agant gateaux, and on.

BTW: the main thing that distin-guishes the Christmas and New Year blowouts is that, where possible, the products selected for the latter are yet more premium.

And as if all this were not enough to impart a warm glow, Seasonal Tastes will not only be concentrating on titillating taste buds but stimulating surges of dopa-mine and endorphins with the help of Santa Claus bearing gifts and carol singers with both Christmas buffets, a festive edi-tion Westin Kids Club with Christmas Day brunch, a New Year’s Eve cabaret — see them sashay down the spiral stairs! — and Cup Cake band on-song as ever.

Seasonal Tastes’ ham recipe — “wild-flower honey & grain mustard baked champagne ham” — also gets the gastric juices flowing.

And that’s not all. Peter explains:“Our gest profile for Christmas and New

Year is quite international. Because both are special eating occasions many people, regardless of religion or where they’re orig-inally from, are drawn to them.”

The Christmas and New Year are dis-tributed differently while overlapping. “In broad terms, Christmas attracts the local crowd, especially residents from countries where Christmas is the biggest celebration of the year. New Year draws a more cosmo-politan crowd.”

Not wishing to leave anyone out, Seasonal Tastes sets out to create more cuisine than just the clichés, meanwhile being ever-mindful that a pivotal point about the restaurant is a promise to deliver dishes both tasty and, wherever possible, healthy.

“This year our Christmas carvery will also have traditional German Christmas goose because we get a lot of guests from Germany and other European countries such as Italy.”

Ever-authentic, the geese arrive straight from Germany with fresh “beifuss” (mug-wort: an aromatic herb that besides fla-vouring food is used in Chinese, Japanese and Korean traditional medicine) with which the birds are seasoned while roast-ing. So look out for traditional German Christmas Goose with those trimmings too.

Another item expected by many accord-ing to their custom is a magnificent roast of beef. Again Seasonal Tastes has just the thing, with Australian prime rib, mustard and peppercorn sauce for Christmas Day Brunch, for instance, and 50-day grain fed Australian striploin for New Year.

ALL ARE WELL-COMEWith its cathedral-high, smooth-

ly-sculpted ceiling, morphing pastel shades spike the modern home-style restaurant etched in peaceful shades of green with a vaguely cosmic aura. Culinary artistry, Earth science and solid-state technology com-bine across minimalist yet elegant forms
