Prep Time: 15 minutes Makes: 8 ServingsIngredients: 1/2 cup H-E-B Sugar or 6 packets Hill Country Fare Substitute Sweetener

1 graham cracker pie crust OR refrigerated & baked pie crust 1 1/2 cups Hill Country Fare Whipped Topping

1/2 teaspoon pumpkin pie spice

1 (8 oz. ) package cream cheese

1 (14.5 oz.) can Hill Country Fare Solid Pack Pumpkin Instructions: Combine softened cream cheese, pumpkin, sugar, and pumpkin pie spice in a large mixing bow. Mixwith an electric mixer on high speed for 3 minutes or until mixture is smooth and creamy. Stir in the thawed whipped topping using a large spoon until the mixture is a pumpkin-gold color. Pour the pumpkin mixture into the prepared piecrust. Refrigerate for 1 hour or more until the pie is firm. Always refrigerate leftover cheesecake.

1 envelope Knox unflavored gelatin3/4 cup sugar

1/8 tsp. salt1 egg yolk

3/4 cup milk3 squares unsweetened chocolate

1 tsp. vanilla extract 1 cup cold evaporated milk, whipped

1 (9”in) pie shell

Mix gelatin, sugar & salt in sauce pan. Beat egg yolk & milk together. Add to gelatin mixture. Add chocolate. Cook over medium heat, stirringconstantly until chocolate is melted. Chill in refrigerator, stirring untilmixture mounds slightly when dropped from spoon. Fold in whippedevaporated milk & vanilla extract. Fold into a baked pie shell & chill until firm. Serve w/ whipped cream.

Mary’s Smoked Salmon Dill 1 8 oz. Package Philadelphia Cream Cheese½ cup Boar’s Head horseradish sauce1 tsp. Garlic salt1 8 oz. Package smoked salmon(cut into ruler width lengths)2 tsp. Chopped fresh dillCombine cream cheese, horseradish sauce garlic salt, and dill. Thinly spread cheese mixture onto salmon lengths. Jellyroll eachLength and freeze for two minutes.Slice diagonally (approx. one inch). Garnish with dill and lemon twists. Serves 8 - 10

A well -worn Christmas FavoriteBaked individually, these appealing little puddings go nicely with roast beast.And here’s good news– you can bakethem in advance! The batter for 8servingsFor 8 servings, place 5 large eggs in the bowl of a blender with ½ teaspoon of salt and whip for 3 minutes. Whip in 3/4 cup ofall-purpose flour, adding more by sprinkles to make a thick batter in the consistency of a heavy mayonnaise. Thin out with driblets of milk to the consistency of medium-light cream; whip another two minutes. Cover and refrigerate for at least one hour (or overnight). Baking: Set 8 heat-proof glass bowls of 1 ½ cup capacity on a baking sheet and place in the middle of the oven; pre-heat oven to 450 degrees. When oven is ready and bowels are sizzling hot, whip the batter another minute more, rapidly paint the inside of bowls with fat from the roast or clear melted butter and, as quickly as possible, put 1/3 cup of batter into each bowl; return immediately to the oven. Bake 12-15 minutes. The puddings will puff up around the edges and almost rise of the cups. Be sure they are nicely browned, crisp, and cooked through. As long as individual Yorkshire puddings. Meal ordered:Smothered grilled chicken topped with grilled mush-rooms and onions, mashed potatoes, grilled veggies and cornbread for $8.00 Service: I was greeted with a smile. I was ask if I would mind while they cleared off a table for me. I said I didn’t mind of course. I was seated within three minutes. The service was good. It took a bit longer for the food to come out of the kitchen than if you were a big food chain restaurant. But it is well worth the wait. Everything is cooked fresh and from scratch. Atmosphere: The establishment was filled to brim with what appeared to be very satisfied customers. As I gazed at the décor I felt very comfortable and was also very pleased to take a sneak peek at the food as it came out of the kitchen. It looked heavenly and smelt better. The food was fresh not canned and the dishes reminded of the wonderful food that my grand mother and great grand mother would have made. I watched one table that had ordered the fried jalapeño poppers ( armadillo eggs) and the home made potato chips. They were raving over how good they were. They devoured them and no crumb was left . My meal was amazing. The chicken was so tender I could cut it with a fork. The plate was perfectly balanced and the grilled veggies were just right. Not over done and not to greasy. The corn bread was not dry and reminded me of when I was a child. The Café at the Ridge reminds me of my grand mothers kitchen and as at my grandmothers there were wonderful pies…...from scratch. I opted for the apple pie. I was not disappointed. As I sat and watched and listened I heard many of the guest say that this was either their first time and will return or that they have been here before and would continue to return. This restaurant is a gem hidden in the hills in the heart of the hill country. Thanks for the walk down memory lane. I look forward to returning again soon. NOTE: They are opening a full plant nursery in the fall. A must see!
