The Good Eats featured produce is Cranberries . Per Cranberries grew wild in North America, and are now farmed in northeast US and in Wisconsin. Some farmers flood cranberry beds to aid in harvest. They are packed with vitamin C and fiber, and are a holiday staple. Healthy Serving Ideas Add cranberries to what you’re already making to bring in more vitamins and a kick of flavor and fiber. You may enjoy dried cranberries in salads, or whole cranberries can be cooked into grain dishes, like wild rice or couscous. Some folks enjoy cranberries in their cereal too. Try adding cranberries to oatmeal or granola! Produce Tips Fresh cranberries should be round and bounce (not that you should try to do this at the store!). If you are buying dried cranberries or juice, check for added sugars. Some are sweetened with fruit juice, but many contain a lot of extra sweetening that is worth trying to avoid. In the kitchen: Cranberry Scones Ingredients 2 cups flour ½ cup sugar 1 Tbsp baking powder 2 tsp poppy seeds pinch of salt 1 stick butter 1 egg ¼ cup milk, and a splash ¾ cup cranberries coarse sugar for topping Combine flour, sugar, baking powder, poppy seeds and salt in a bowl. Cut in cold butter, add 1 beaten egg, ¼ cup milk, and cranberries. Shape into one big ½ inch thick disk on a baking sheet, score into 8 wedges. Brush with extra milk, sprinkle with coarse sugar.
