Gluten-Free Egg Bread 2 cups brown rice flour 1 ¾ cup tapioca starch 1 ½ tsp salt 1 Tbsp xanthan gum Mix these dry ingredients in a bowl. 1 ½ Tbsp dry active yeast Sprinkle yeast on top of the flour mixture in the bowl (DO NOT MIX). Set aside. ¼ cup oil ¼ cup honey 1 tsp apple cider vinegar 1 2/3 cup warm water Mix all wet ingredients in a separate bowl until honey is dissolved. Then pour on top of flour mixture and yeast (DO NOT MIX). Let sit for about 5 minutes until foamy. Then mix wet ingredients and dry ingredients together. 3 whole eggs and 2 egg yolks Mix eggs into all ingredients in the bowl. Using a rubber spatula, divide the dough into two greased bread pans. Cover with a wet dish cloth and let rise for 30 minutes in a warm place. Bake at 375 for 30-35 minutes. For breadsticks, place dough in a zip-lock bag and snip off the bottom corner of the bag. Squeeze out dough in the shape of breadsticks onto a grease baking pan. Cover and rise for 15 minutes. Bake at 350 for 13-15 minutes.
