The exact causes of food losses vary throughout the world and are very much dependent on the specific conditions and local situation in a given country (FAO, 2014). These losses vary between 30 and 40% and it occurs during the different stages of the food supply chain. There are not systematic studies in Mexico focused to estimate post- harvest losses in major crops since forty years ago. Therefore, the objectives of the present study consist of the design of methodologies for identify the critical points in the postharvest chain and perform the strategies for correcting the practices and controlling the factors that increase postharvest losses of citrus and coffee in field and the Central Market of San Luis Potosi city.
