INGREDIENTS 6 mature big and beefy tomatoes 2 green peppers 1 red pepper 1 cucumber 1 heart of big onion, 1 (optional)

clove of garlic 2 slices of bread of the previous

day without the crust salt, virgin extra olive oil, vinegar

PREPARATION Cut the bread in slices and dip

in water Peel the tomatoes, the peppers,

the cucumber, the onion and the garlic, remove the seeds and cut in cubes.

Mix them and mash with the electrical mixer add the bread with the water, oil, salt and vinegar

Strain the mixture to eliminate the rest of vegetable skin 

Add more water if it was necessary to obtain a texture of liquid cream 

 Serve it cool

INGREDIENTS Garlic 2 glasses of water 2 glasses of sweet

INGREDIENTS Rice, 600 grams Clams, 500 grams Prawns, 300 grams 2 tomatoes Green Pepper Garlic Parsley Chicken, 800 grams Squid, 200 grams 1 Small onion Peas, 150 grams Saffron Salt Olive oil

PREPARATION Wash the clams in cold salted water, open

them in a saucepan with water, strain and reserve the clams and broth separately

Wash the peppers, remove the seeds and chop them. Wash the chicken and cut it. Wash the squid and cut into strips.

Peel the prawns and cook the shells and heads for 10 minutes, strain and

reserve the broth Heat oil in a frying pan and fry the chicken,

add the squid, sauté a couple of minutes and add the diced onion, peppers, peas and peeled tomatoes. Sauté for 15 minutes.

Add rice, stir and pour the hot broth and clam shrimp (over water),

calculating the volume twice that of the rice.

Make a paste with garlic cloves, parsley and saffron and add to the pan,

season and add food coloring. Reduce heat and cook for 6-7 minutes add

the shrimps and clams. Let stand 3-4 minutes and serve

INGREDIENTS Spaghetti 5 Large cloves of garlic, minced 1/2 Cup of extra virgin olive oil 1/4 Cup of fresh parsley, finely

chopped 3 Dry hot red chili peppers,

crushed Salt as needed

35 minutesPREPARATION Cook the spaghetti in the salted

boiling water Meanwhile, heat the oil in a saucepan Fry the garlic and chili peppers When the pasta is cooked al dente,

take out a small cup of pasta water and

drain the pasta. Transfer the pasta to a pot and add

garlic, chili oil to it. Mix well on medium flame until it is

hot, add a little pasta water if the mixture

seems dry Add parsley, mix properly and serve.

INGREDIENTS Olive oil, 4 tablespoons of unsalted butter Flour 1/2 cup of whole milk Cured ham, finely chopped Salt 2 eggs 2 tablespoons of fine dried bread

crumbs

PREPARATION Heat 2 tablespoons of olive oil and the butter over

medium heat When the butter has melted, add the flour and

mix well. Stir or whisk until the flour is well blended. Add 1/2 cup of milk and increase the heat to

medium-high. Cook, stirring constantly until the mixture begins

to thicken. Add the cured ham and salt stir until evenly

distributed. Cook for 1 minute longer and then pour on a pan.

Spread the mixture evenly. Let cool down for a bit and then cover and refrigerate for at least 2 hours.

Beat the eggs lightly until blended. Spread the bread crumbs on a plate.

With 2 spoons, shape the mixture into croquettes. Roll each croquette in the bread crumbs, dip into the beaten egg, coating evenly.

Fry the croquettes and serve immediately

INGREDIENTS 375-400 g of French pastry Cream 900 ml of milk 115 g of starch 6 eggs 250 g of sugar 1 teaspoonful of vanilla

extract

PREPARATION Divide the mass in two equal parts.

Stretching two square leaves of 25 cm. Cut a leaf into 12 equal rectangles

Bake in the oven at190 º C approximately 12-15 minutes.

In a pot set the sugar, eggs, starch of maize and a few spoonfuls of cold milk and cook it.

When the mixture begins to thicken withdraw of the fire, add the vanilla extract

Place the mass and add the warm cream on it, smooth the surface with a spatula or a knife.

Serve cool

PREPARATION Preheat the oven Mix all the ingredients, starting

with the flour, eggs and butter Grease a cake pan with a little

butter and pour the mixture Bake in a medium oven for 30

minutes Remove and let cool (optional) After cooling and

demolding, can be cut horizontally and spread with melted chocolate

I grew up eating this dessert and it’s one of my favourites. It is called arequipe in the region of Antioquia, Colombia, Manjar Blanco in other parts of the country and in the rest of South America it has different names such as dulce de leche, manjar Blanco and cajeta. In Colombia we serve arequipe with obleas or saltine crackers or just as a base for some typical desserts.

INGREDIENTS 96 oz whole milk 11/2 pounds sugar ½ teaspoon baking soda ¼ teaspoon salt 1 cinnamon stick

PREPARATION Mix all the ingredients in a bowl and boil

them. Reduce the heat to medium-low, stirring

often with a wooden spoon for about 3 hours or until the colour changes to caramel and the mixture is thick as a pudding. Let it cool.

Pour into a glass container and cover. You can refrigerate it up to a week.

INGREDIENTS 1 liter of milk 50 grams of cornstarch 50 grams of wheat flour Cinnamon and a slice of

lemon peel 125 grams of sugar

PREPARATION Cast in a bowl together all the

ingredients except the milk and move it round.

Pour the milk and boil the mixture during 10 minutes.

Place in a large bowl and let it cool in the refrigerator 6-12 hours.

Cut the mass in cubes, cover with egg and flour and fry it.

Coat with sugar and cinnamon.

powdered sugar
