Unleaved barley bread description

● One of Estonia's dessert items is this cake-like

barley bread. The recipe is hundreds of years

old and was forgotten for a long time. It is now

making its way back. The recipe is easy and

the taste is simple but different, soft and

delicious. This is what Estonia’s wealthier

ancestors ate for special occasions.Serve it

hot with this cranberry cream sauce. This

serving will be enough for 10 – 12 people.

Ingredients

● 500 g sour cream

● 1 egg

● ½ teaspoon

● 3 tablespoon sugar

● 60 g butter, melted

● 100 g whole wheat flour

● 200 g barley flour

● ½ teaspoon baking soda

● 150 g carrot (grated finely)

● 20 g butter, for sautéing

Directions

● Grate the carrot, sauté with butter on a pan, and let it cool.

● Mix soda and flours.

● Beat the eggs up, add sour cream, sugar, salt.

● Now in this mixture, add the flour mixture.

● In the end, add melted butter and carrots and mix very

well.

● Pour the whole mixture in a baking dish and bake at 180°C

for 35 – 40 minutes.

Pasha description

● Pasha is a traditional Easter dessert. It is

traditionally baked in a special wooden mold that

has the orthodox Easter symbols carved into the

sides so that they are impressed on the dessert

when it is unmolded. For the clearest impression of

the designs when using a pasha mold, use no more

than two layers of cheesecloth. If you don't have a

pasha mold, a clean five to six inch clay or plastic

flower pot with drain holes on the bottom makes a

rather pretty substitute.

● 200 g butter

● 750 g milk curds

● 3 eggs

● 200 ml whipped cream

● 50 ml sugar

● 100 ml raisins

● 50 ml candied citrus zest

● 50 ml slivered almonds

● 2.5 ml ground ginger

● 2.5 ml ground cloves

● 2.5 ml ground cinnamon

● 10 ml lemon juice

Directions

● Whip the cream with the sugar until it holds stiff peaks.

● Melt the butter; when it is hot, combine it with the milk

curds and eggs; add all the remaining ingredients; let cool;

● Gently fold the whipped cream into this mixture;

● Line a pasha mold with thin gauze or cheesecloth; place

the mixture into the mold; let drain for a day, pressing

down on it from time to time; keep in a cool place or in the

crisper of the refrigerator;
