Finding Your FocusLet your wedding season inspire your celebration

Some brides have had their wedding day vision since the moment they pulled their moth-er’s gown from the dress-up box, put on her high heels and looked in the mirror... thenthere is everyone else! Many brides come to me and don’t have their “perfect vision”pulled together. They know the basics involved in a great wedding: the venue, the food, themusic and the people. But it is pulling all of these elements together to create a theme –a vision that represents the couple and their love story, that is sometimes the hardest part.

Story by Katie O’Malley, Katie O’ Weddings & Events

So where do you start? Once you have the basics figured out, a greatfirst step in establishing your theme is considering seasonality – thetime of year you are getting married.

Every season in the Saratoga-Adirondack region bringsnew atmosphere, color and imagery. Incorporating theseason in your design can be the perfect way to getstarted and inspired!

Start with your venue:What do you love about the venue and want to highlight? Bring out the best elements of your venue for the time of year you

are hosting the wedding. Draw inspiration from the stonework in anelegant castle-like venue, or from the rustic charm of a barn for the fallor spring. Why not embrace the colors and environment of the oceanfor a lakeside wedding in the summer?

Décor Once you have settled on the perfect location, you can

have fun with adding your specialtouches through the design and décor.

Winter weddings are becoming increas-ingly popular, especially for couples that arewatching their budget or keeping their sum-mer free for vacation. There are so manyamazing venues in our region that radiate amagical winter feel on their own, but you’llwant your décor to contribute.

Sparkle is always a unique way to bring thesnowy feel from the outside in. Crystals hang-ing alongside votives from curly willowbranches add a touch of brilliance that createsa warm glow. Soft, romantic colors like blush, ivory, silver and champagne are fantasticoptions for winter brides.

Fashion can be really fun in the winter, too!Try a soft mink stole to keep the chill out ofyour bridal ensemble, or fun snow boots forthe bridal party!

Spring is such a delightful time for a wed-ding celebration, especially in upstate NewYork – the bitter winter is over and the sum-mertime triple Hs (hazy, hot and humid!) arestill months away.

In the spring you can incorporate manyvibrant colors or you can tone them down fora more ‘blush’ palette with a non-Easter egg

It helps to look beyond the obvious and dig a lit-tle bit deeper. A December wedding doesn’t haveto mean snowflakes and icicles, just like anOctober occasion can exclude token fall elementslike baskets of apples and burnt red leaves.

8 | Enchanted Wedding SaratogaTodayNewspaper.com

feel! Consider grass green, yellow, pink and Robin’s egg blue.Tulips, daffodils and daises are fun accents to bring into your décorand even stationery. As guests enter the cocktail hour, use brightlycolored pinwheels for escort cards.

Thinking about a summer wedding but want to put your owntwist on the season? You can incorporate fresh limes and lemonsinto your overall design. Use soft shades of yellow and green in yourprinted materials and then use real bright fruit in your centerpieces.Or why not create an “upscale” picnic feel with whimsical red andwhite details in a fun outdoor barn location? You can have a freshbaked pie dessert buffet with ice cream to top it off.

In addition to pouring over blogs, inspirationboards and seasonal imagery, I also suggest that cou-ples identify what truly represents them and makestheir love unique. Sometimes this can spark ideasthat you would not typically consider.

Menu:Food is a really creative way to incorporate the tastes and smells of the season. • In the spring, present individual strawberry shortcakes foreach guest instead of the traditional wedding cake. Try crème brûlée in the winter.

• Top a fresh summer salad with delicious berries• Incorporate a warm butternut bisque, maple glaze or

fresh local cheese for a fall-inspired menu Talk to your venue’s event staff and your chef directly to get the

freshest and most seasonal items on your menu.

Try and utilize flowers that are in season no matterwhat the time of year. This will not only help with thebudget, it will allow you to get the feel of the seasonin a soft and beautiful way.

Fall has become one of the busiest seasons for weddings – morecouples are choosing dates between September and November thanever before. People love the idea of a late-summer/early fall celebra-tion because they can enjoy the outdoors without worrying aboutheat and humidity or a major snowstorm.

You can achieve a warm, autumn feel without baskets of applecenterpieces and carved out pumpkin table numbers. Instead, focus

on the rich hues that the season provides and take them to another levelusing jewel tones rather than the usual matte browns and reds. I sug-gest adding small touches of the season: greet guests with some freshlocal apples in their welcome tote, or line an outdoor ceremony withleaves. The possibilities are endless.

She has learned thatbeing a wedding planner takes equal partspatience, compassion, mentoring and a positiveattitude to make the process fun.

Katie’s energy, passion and enthusiasm are hardto match and she undoubtedly brings sparkle toevery wedding she coordinates. For more infor-mation, contact Katie at (518) 275-6813 or visither website at www.katieoevents.com.

Remember there are no rules when it comes to “fitting” the season intoyour wedding day. You can have a spring/summer palette in the winteror fall if you really want to, just keep in mind that certain flowers mightbe available at opposite times of the season. So simply use whites andivory for the flowers and then add the fun colors and accents that rep-resent the season to you!

Music:Believe it or not, music is a great way to infuse hintsof the season. An elegant winter affair could have an authentic “big band”

playing classics from the 30s and 40s (you could then switch itup later in the night with a DJ to play the recent hits).

A light and airy springtime cocktail hour could incorporatea fun solo pianist playing upbeat tunes for guests.

Invite a fun bluegrass band to play the cocktail hour at yourlate summer celebration. Or how about having a strollingItalian acoustic quartet to transport your guests to a summeryevening on the piazza?

Bring in a simple harpist for your fall wedding ceremony tocreate a unique, rich warm sound that keeps it classic and elegant.

More IdeasWinter• Send guests home with a custom coffee

mug filled with hot cocoa, biscotti and marshmallows

• Create a snow globe gift card holder

Spring • Provide seed packets as favors for guests

to plant for the season• Place an individual brightly colored tulip in a

bud vase with escort card attached

Summer • Fill up a white laminate or wooden box with

sea glass and place escort cards on top• Have an ice cream truck drive right up to your

reception space and let guests enjoy a snowcone or ice cream sandwich

Fall• Mini white pumpkins to accent the escort

card table• Place wraps and flip-flops for your guests

in apple baskets• Provide guests with a hot apple cider bar with

creative twists on the usual recipe using cinnamon sticks and salted caramel accents in mason jars

W e always hear stories about “the one thatgot away,” but what about the one thatdidn’t? Some people are lucky enough

to realize they’ve reeled in the catch of a lifetime, andwhen they do they hold on tight. Just ask MatthewCampbell, a local groom who knew he couldn’t possi-bly let his future bride, Ashley Strom, get away.

Their love story begins in sixth grade, when theyboth attended Maple Avenue Middle School.

“Matt asked me out when I was 14, but I was tooyoung to date.” Strom said.

“She made me wait,” Campbell said. His persistence and patience paid off in college,

when they both enrolled at SUNY Adirondack andwound up spending most of their time within the samegroup of friends. As time went on, Campbell and Stromnaturally paired off. They had a lot in common, sharing

similar interests in fishing and a love for the great out-doors, commonalities that eventually set the backdropfor Campbell’s proposal.

Six years into the relationship, Campbell felt the timewas right to ask Strom to be his blushing bride. On June8, 2011, while Strom was attending a Phish concert (anunusual coincidence), Campbell purchased the ring atHannoush Jewelers in Clifton Park before having dinnerwith her parents to ask for their approval. Of course, they said yes.

Knowing that Strom was the catch of his lifetime, hewanted the moment to be special and memorable. So heplanned a getaway to “the small mouth bass capital ofthe world.” It was a trip to end the summer and begintheir lives together.

“I really had no idea what was planned,” Strom said. Sometimes, the best things in life are surprises. While Strom was gearing up for what she thought was

a regular fishing trip with her beau, he was trying tokeep his cool and keep the ring in the tackle box.

The day was as perfect as it could have been. Theweather was ideal, and Campbell’s nerves were undercontrol, as he neared closer to the big moment.

He waited until they were out on the lake. Then, asStrom was looking away, he set up her fishing pole, tiedthe ring to the end of the line and requested her attention:

“I’m looking to get a keeper. Do you think I’d be ableto catch one with this?”

Strom’s initial reaction was one that many womenhave – she was a ‘deer in the headlights.’

“My first words were ‘are you serious?’ she said. Thena minute went by, which probably felt a lot longer forCampbell, before she said “YES!”

Both of their families are very excited about the cou-ple’s September 8, 2012, nuptials. The ceremony isplanned for Campbell’s family property in Wilton, out-doors under a wedding tent. Tents will be provided byAllerdice Rent-all, where Strom is currently employed.Entertainment for the event will be provided by TheRefrigerators, and the couple has chosen Niki RossiPhotography to capture the precious moments of theirnew life beginning.

Congratulations to Ashley and Matt!

Engaged!Dessert For Two

Story by Yael Goldman

Meredith McClain will marry Paul vonSchenk, her perfect match, on Sunday,September 2, 2012.

Their romance is sweet and their story is simple. Meredithand Paul have always been close. They grew up in the sametown, attended the same kindergarten Halloween parade, and orbited the same social circles in high school. But it was-n’t until their freshmen year in college, when the two set outfor faraway campuses, that Meredith and Paul finallybecame an item.

Despite the distance, their young love grew stronger witheach semester, and it wasn’t long before they were lookingback on eight years together.

Paul’s proposal was perfect. It was Valentine’s Day week-end of 2010, and he had planned an obstacle course of aver-sions – all of them romantic, of course.

Photos by Heather Bohm-Tallman

He first asked Meredith to take that Friday off from work. That morn-ing she woke up at 6 a.m. to the tones of Andrea Bocelli streamingthrough the house. Paul was in the kitchen, preparing her a deliciousbreakfast on a special plate. It only took a few forkfuls for the secret tobe revealed – a poem detailing their weekend adventure ahead.

She had a feeling he would propose then and there, but he didn’t. The couple got in their car and headed to New Hampshire for a ski

getaway. As Meredith explained, Paul always took her away forValentine’s Day; she had no reason to expect anything out of the ordinary.

A full day went by, then a romantic dinner and a carriage ride. Still noproposal.

It wasn’t until that Saturday evening, when Paul disappeared upstairsto prepare a dessert that a chill ran up her spine (the good kind!). Untilthat moment, nothing unusual had occurred, as Paul was always roman-tic. The dessert tipped her off – “I thought to myself, ‘I don’t even knowif he can make dessert.’”

It was time. Paul beckoned Meredith, and with each step her heartskipped a beat.

“This is probably the last time I am going to be single,” she thought. And it was.She opened the door to find a room sparkling with pillar candles and

there was Paul, “nervous and cute,” resting on one knee.Meredith, of course, said yes.

The Saratoga Springs couple will say ‘I do’ next September beforetheir family and friends at St. Edward’s Church in Clifton Park. A cele-bration at the Canfield Casino will follow. Nicole’s of Albany will pro-vide the menu, Dehn’s Flowers the arrangements and bouquets, and J.S.Watkins is creating the cake. The couple has selected DJ Andy Pratt ofBigler Productions to entertain and elate their guests.

Meredith, a bride made for wedding couture {see pages 29 and 32},will grace the aisle in an elegant gown from La Reine Bridal of Boston. Her bridesmaids will be dressed by Lily~Saratoga.

Congratulations to Meredith and Paul!

ong-distance has always been part of Emily andJason Matthews’ relationship.

Emily was working at Dolly Parton’s amuse-ment park, Dollywood, and became friends with Jason’sfather, who worked backstage. Jason came home for aweek and the two got acquainted.

“When I met him I immediately thought he wasadorable,” Emily said. But he was about to go to Koreawith the Air Force for a year, and Emily thought their newconnection would quickly fade with the distance betweenthem.

In 2009, Jason, then stationed in Iraq, contacted Emilyand they began emailing daily. When he was dischargedhe moved to New York City, where Emily was pursuingher acting career.

“Pretty much as soon as he got here we started datingofficially,” Emily recalled. “Both of us had never forgot-ten the other person.”

In September 2010 the couple went away for a week-end. Emily had a feeling Jason might propose.

“As soon as we walked into the room there were flow-ers. It was a big bouquet of white flowers from his parentsand it said ‘welcome to the family,’” she explained.

As she turned around, Jason was ready to propose. “Hedefinitely caught me off guard because I figured it wouldbe over dinner or on top of a mountain.”

Emily immediately said yes. “Pretty much since heemailed me from Iraq I knew that I wanted to marry thisboy.”

Emily asked her mother to book the National Museumof Dance, where she had danced growing up, right away.

They had nine months to pull everything together, butthe couple lived three hours away and didn’t have a car. Each month, Emily took the train to Saratoga Springs.

They chose a vintage theme, complete with old familyphotos, Emily’s great-grandmother’s suitcase to collectcards and gifts, and another great-grandmother’s handmadegloves.

“We’ve always been very family oriented,” said Emily’smother, Lisbeth Crockett.

Emily said she loves pink but didn’t want the wedding tofeel like a tea party, so they tempered pale pink with gray.

Invitations were vintage-looking hankies silk-screened bySunflower Graphics in Schuylerville.

Her dress, purchased from Lily~Saratoga, was “beautiful-ly simple,” according to her mother. Three floral pieces atthe waist matched three flowers on the antique gloves. “Thedress had a vintage feel but wasn’t literally vintage,” saidCrockett.

Emily’s bridesmaids lived in California and Washington,D.C. and her maid of honor lived in Richmond, VA. Shedidn’t see some of them until the wedding weekend.

“But I wouldn’t have changed it,” she said, “because theywere the girls I wanted to be with me.”

She found the bridesmaids’ dresses online. They submit-ted their measurements and the finished dresses wereshipped to them.

The couple met their DJ, Jim Diaz of Cool CatEntertainment, after picking out all their songs on his web-site, just so they could get to know him.

Catering was by Lily and the Rose, and included themeal, a small cake and a dessert buffet. “Over half of myclients are destination-bound to Saratoga from elsewhere,”said owner Kim Klopstock. “I like to do tastings and lucki-ly I have a restaurant (Fifty South in Ballston Spa) so thatmakes it very easy for them to come up on a weekend anddo a tasting.”

Klopstock said the dessert buffet has been a growingtrend which allows guests to enjoy their dessert over anextended time. A small cake is provided so the bride andgroom still have an opportunity to feed each other a piece.

The reception was held outside the Museum of Dance, under a tent provided by Big Top Tent Rentals.Photographer Rob Spring captured images of the specialday. Flowers were from Peony Passion in Delanson andarranged by Jody Hayes. Envelopes to mail the silk-screened hankies were purchased from PaperDolls ofSaratoga.

One of the decorations was a map of the United Stateswith a pin marking each city a guest came from, and linesleading to Saratoga Springs.

With the power of the Internet, Emily Crockett becameEmily Matthews on June 18.

RetrospectiveHow will you remember

your wedding day?Planning your wedding is about far more than that special day; it’s

about creating memories that last a lifetime. Selecting the right photog-rapher is the key to capturing the moments you want to look back on. Weconsulted Courtney and Peter Nettleton of PJN Photography to get someadvice on selecting the right photographer for your wedding.

Look for talent and style, but that’s not all! A photograph-er’s talent, skill, experience and style may initially attract you, butyou should also assess their ability to make your day as easy as pos-sible from a photography standpoint. The more comfortable and con-fident you are with your photographer, the more at ease you are goingto be in front of their camera.

Give it a test run. Engagement shoots are a great opportunity toreally experience what it's like to be in front of your photographer’scamera. Likewise, there is nothing like a two-hour photo session fora photographer to see how you react in front of the camera – a lot ofinsight is gained by that interaction.

Lists and descriptions! Give your photographer a list of namesfor formal shots. It will prepare them for a smooth and quick process, and also ensure no one is left out. It’s also helpful to discuss relation-ships and dynamics with your photographer to avoid potentially awk-ward situations.

Kick the clutter. Getting ready photos can be really amazing, butmost brides and grooms forget that clutter can sometimes be distract-ing in photographs. Be aware of your surroundings when planningwhere you are getting ready and try to eliminate obstructions likeplastic bags, hangers, drinking bottles, etc.

Double Up. Two photographers are always better than one. You’llbe able to capture each moment from two different angles and fromtwo artistic perspectives.

All-in-all... Find a photographer whose work speaks to you. Thenarrive at your first meeting armed with inspiration photos, and you’reoff to an excellent start!

What’s inYour Bag?

Enchanted Wedding |35SaratogaTodayNewspaper.com

• Be creative and have fun with your shoe selection! Justlike all of the other details of your wedding, your shoesshould be a reflection of your style.

• Heels can be tricky for an outdoor ceremony – sand, grass and cobblestone are not the most stiletto-friendlysurfaces. Try a pair of heel protectors. Just snap them overyour heels and voila! you can safely wear that fabulouspair of four-inch heels. Buy them for your bridesmaids aswell!

• Give yourself a few trial runs by wearing your shoesaround the house before committing to them for your bigday.

• Once you decide on a pair, make sure you bring themwith you to each of your dress fittings.

• If you have your heart set on wearing a pair of four-inch heels for the ceremony, bring a second more comfort-able pair for the reception.

Building Your

36 | Enchanted Wedding

Your bouquet accents your wedding day, so pickflowers you love! Rena of Rena’s Fine Flowers inSaratoga Springs is an expert at creating uniquedesigns that will express your personality and stylewith fragrance and color. Here, she offers two sim-ple tips to guide your bouquet-building process:

Variety. Instead of sticking with just two or three

varieties in your centerpieces or bouquets, try a wide

mix of blooms coordinated with your color scheme.

You’ll add texture and dimension. Like in the pink and

cream bouquet pictured below: use full, fluffy peonies

on a garden rose base with accents of ranuncula, lizzy,

freesia, fiddle heads and seastar ferns as a collar.

Bouquet

Enchanted Wedding |37SaratogaTodayNewspaper.com

Texture. Work with a variety of textures to make a

statement with your floral arrangements. “Textures

make a bouquet,” Rena said. “For example, you could

start with a base of rich dahlias and ranuncula and

mix in feathery crocosmia and velvety coxcomb. Add

more texture such as viburnum, berzelia, lotus pods,

fiddlehead ferns or wooly lambs ear leaves to make

the arrangement more remarkable.”

Arrangements that Inspire

Enchanted Wedding |39SaratogaTodayNewspaper.com

Think outside the (flower) box.Don’t limit yourself to flowers – there

are plenty of other elements you can

throw into the mix. Use your imagina‐

tion! Accent your floral arrangement

with elements that pair with your

theme or season. For example, if

you’re getting married in the winter,

consider fresh woodland greens, local

berries or pinecones. Or, for a softer

forst‐inspired theme, consider

whispy white feathers. Bejewel the

handle with pearls, gems, or any

other embelishment to add more

sparkle to your bouquet.

Ah, simplicity!Try a full bunch of one variety. This bouquet of Ranuncula budsis simple yet elegant. This isn’t the only variety that looks vibranton its own. Here are a few more ideas to consider as part ofyour seasonal theme:

Roses are great anytime of year

Peonies for a spring bouquet

Tulips can create a soft winter bunch

Dahlias are delightful in fall arrangements

Gerbera Daisies make a statement in summer

from the road by a fieldstone gatehouse and a mile-long path-way, Saratoga National lends itself to imagery of a farawayplace. For Emily and Jacob, a couple that has overcome chal-lenges of distance and war, there was not a more fitting place tofulfill their destiny.

“It was perfect,” Emily said.A frost-kissed ceremony and reception drew from the roman-

tic winter atmosphere in Saratoga Springs to highlight the pow-erful love between Emily and Jacob. With rich and faint blues, graceful white accents, crystalline snowflake embellishments, and a heavy snowfall that blanketed the golf course the dayprior to their wedding, Emily and Jacob’s special day was thewinter wonderland they’d dreamed of.

Their design was understated yet romantic; sophisticated andrelaxed. Symbols of Washington D.C., where the couple madetheir first step toward forever, were sprinkled throughout thesetting – guest tables were named after Washington landmarksand cherry blossoms decorated the edges of their white butter-cream cake.

“It was elegant and simple,” Emily said. For this couple, timing was of the upmost importance. Jacob,

a marine, was deploying to Afghanistan. The planning process posed unique challenges. Jacob was

overseas for the majority of that year, and decisions were madevia email and over the phone.

Emily relied on the expert wedding staff at Saratoga Nationalto plan a flawless wedding they could wholeheartedly enjoy.Starting with a fabulous menu – “It was absolutely delicious,”she said – the team handled all coordination and fine-tunedeach detail to ensure the couple’s special day was seamless.

“We enjoyed our wedding from the moment we got thereuntil the moment we left,” she said.

Make it work, together.Planning a wedding in a long-distance relationship is

tough, especially when there are so many decisions to bemade. Even though Emily and Jacob were separated for themajority of the process, they worked together to create the wed-ding they both dreamed of. Emily did all of the research and nar-rowed down the options for Jacob to pick from. For Emily, thewedding plans were the perfect distraction from the distance: “Itreally made the deployment fly by because I was so busy planningthe wedding and looking forward to him coming home.”

Lillian and Dan began their life together at Saratoga Polo, surrounded by family, friends and the brilliance of autumn. It was raining.

Their theme was inspired by the great Adirondacks in thefall, an ambiance achieved with earthy tones – deep andburnt oranges, soft and rich browns, reds and yellows; wildbunches of hydrangeas, soft calla lilies and bold circusroses; arrangements of gourds, fallen leaves and candles, handmade by Lillian’s aunt.

A menu of delicious hors d’ouevres was designed to fitthe occasion – small, flavorful bites were the perfect com-plement to autumn sentiment. In décor, theme and compa-ny, the couple brought their family into every detail, includ-ing the menu: Lillian’s uncle, a third-generation clam dig-ger, brought a thousand fresh delicacies for the couple toshare.

They wanted their wedding to tell their story, beginningwith their outdoor ceremony, which Aurelia and Aaron wrotetogether, and ending with the fabulous vintage-inspiredreception inside the grand 19th century ballroom.

They found their theme at the Hall of Springs – in the land-scape, the elaborate walkways and fanciful portico, selectingdécor that complemented this grandeur and timeless beauty, while also incorporating aspects of their own personalities.

Savorthe Moment! There’s a lot to keep in mind when designing the perfect

rehearsal and reception dinner menus for your guests, fromchoosing food that will appeal to everyone, avoiding com-

plications with allergies or dietary restrictions, to crafting an eventthat fits your desired theme and tone. We spoke with KimKlopstock, owner of Lily and the Rose, as well as Brian Palazzoloand Jeremy Kane, president and executive chef (respectively) ofClassé Catering, to get their advice on how to create a memorablemenu for your once-in-a-lifetime celebration.

Story by Daniel SchechtmanPhotos provided

74 | Enchanted Wedding SaratogaTodayNewspaper.com

Create an experience. When designing a reception or rehearsal dinner menu, talk

with your caterer about the venue, tone and theme you desirefor your celebration. With a little bit of forethought andplanning, food, location and feel will come together to cre-ate a memorable evening that guests will be talking about foryears to come.

No one should go hungry.Design a menu from which all guests can find something

to enjoy for the main course. For large parties with a widespectrum of different tastes and preferences, the safest betwhen selecting entrée menu items typically includes a beefdish, fish dish and a vegetable-based dish.

Make it personal. While it’s usually best to play it safe with the main course,

the salad, desserts, cocktails and appetizers are a great placeto be a bit more creative with your selection. Include an eth-nic dish made just the way mom used to, a raw bar loadedwith vegetarian food, special pastries, desserts and more. The sky’s the limit!

Your venue sets the tone. Use it to your advantage! For those who enjoy dancing,

consider doing away with the traditional sit-down dinner.Instead, Klopstock suggests designing food stations strategi-cally placed throughout the venue to encourage guests tomove around the space and dance more. For those who havechosen a more formal venue where dancing isn’t as much ofa priority, a sit-down dinner may be more comfortable.

Savor the moment. Make sure you give yourself time to eat. Between greet-

ing guests, hitting the dance floor, giving and receivingtoasts, and, of course, stealing away for a private momenttogether, it is easy to forget about the wonderful menu youhave planned.

Tasty tips for menu planning

Enchanted Wedding |77SaratogaTodayNewspaper.com

Plan for the season.“Seasonality greatly affects how food for a wedding is

planned,” said Kane. For a spring or summertime wedding, keep it light! Think mangos, local berries, asparagus andchutneys – no heavy sauces. For a fall or winter celebration, squashes and pumpkins are right at home on the menu, adding a warm splash of color to a table that can dare to bea bit heartier.

Keep in mind allergies and dietary restrictions. If one of your guests is allergic to peanuts, it’s important

to speak with your caterer to avoid any potential conflicts.Special precautions can also be taken ahead of time to avoidany cross contamination, which will allow guests to find anitem that safely fits within their needs.

Variety is the spice of life. The rehearsal and reception dinners are very different

events – keep the menus different and exciting too! “Createdifferent vibes for each event,” said Palazzolo. “Rehearsaldinners in many cases are casual-fun events where the fam-ily wants to host an interactive social event.” For the lessformal rehearsal dinner, consider small plate barbeque, gourmet street food or your favorite comfort foods. Guestswill appreciate the contrasting menus when they get to thereception dinner, which traditionally tends to feature a rich-er, more robust and formal selection.

Get your families in on the action!Have an aunt, cousin or grandparent who makes special

homemade cookies or a unique dessert that they wouldn’tmind sharing with your guests? Ask if they would like tomake a special batch for your wedding celebration, addingthat one-of-a-kind personal touch to your evening. Add aname card in front of their thoughtful addition to let every-one know who made the goods when compliments start flying.

Don’t forget about breakfast.“Breakfast the morning after is my favorite time, because

now that you’re saying goodbye, you get to rehash andrecap all the wonderful experiences you’ve had over yourwedding weekend,” said Klopstock. For breakfast, keep itcasual. After all the fun from the late night reception cele-bration, the breakfast meal is a great time to relax, reflectand wish all your guests well before they go. Keep the menulight – and make sure to include plenty of coffee!

Just Desserts

Do your homework. With so many available designs, fla-vors, color schemes, sizes, and formats to choose from, takesome time to study what’s out there to help you get a bettersense of what you like best before heading to the baker.“I ask my girls to bring in three, four or more pictures of cakesthat they like,” said Debbie Alberino, co-owner of the LakeGeorge Baking Company.

Coordinate colors. If you prefer going the traditionalroute of having a white frosted cake, consider adding a splash ofcolor on the inside!

Make it your own. “The wedding cake should really emu-late the bride and groom,” said Alberino. The wedding day isyour day – so get as creative with flavors, colors, formats andfrosting as you’d like. If you can dream it, then you can do it.

Stand the test of time. The multi-tiered, classical whitewedding cake is great for a formal, traditional celebration – buttraditional isn’t code for boring. Use frosting to create delicateshell boarders, swirl patterns, pearl drops and beautifully intri-cate edible flowers to make your cake a work of art.

Bling it up. Frosting artistry isn’t the only way to add somepizazz to your wedding cake. “Some of my girls are using pea-cock feathers, gems, jewels or broaches to dress up their cake,”said Alberino. Add fresh flowers to the mix fora colorful, delicate touch.

Flavors galore. There are a mil-lion and one flavors you can choose, from the traditional white or angelcake varieties to vanilla, chocolate, espresso, cinnamon or even pineap-ple for the brave and the bold.Consider adding a layer of fruit fillingin the center as a pleasant and surprisingtwist.

The perfect wedding cake, whether elaborateor understated, reflects the unique personali-ties of the bride and groom. You can custom tai-lor this decadent dessert to your heart’s con-tent, or use fun alternatives to the traditionalwedding cake for an exciting twist. Variety is the spice of life. Cupcakes are a great alternativeto the traditional wedding cake, a hot wedding day dessert trend thatcan be as simple or extravagant as you’d like. “Cupcakes are a mod-ern way to express yourself for your wedding day. Individual serv-ings, unique designs and alternate flavors for every guest allow youto have your cupcake and eat it too!” said Laura Margaret, owner ofStomach Cakes.

A cheesecake for every season. Cheesecake can add arich, decadent flavor to your wedding day celebration. This treatcomes in a variety of flavors and can be served in individual serv-ings, as a complement to the wedding cake, or as the filling for themain cake itself.

“Our lemon-blueberry cheesecake with a sponge cake crust isgreat for a spring or summer wedding,” said Susan Watkins, co-owner of J & S Watkins Homemade Desserts. “Our caramel applecheesecake is very popular in the fall, and our eggnog rum or cran-berry walnut cheesecake is perfect for a wedding around the holidays.”

Many couples are doing away with the weddingcake tradition entirely, opting instead for minidesserts like cheesecakes with individual liners, cakepops, fruit pies, cupcakes or even candy stations.

Cake on a stick. A miniature cake dipped in white chocolateicing and served on a popsicle stick, cake pops are a fun alternativefor those looking to shake up the wedding cake tradition. “Cake pops can be decorated any way you’d like,” said AlissaWoods, owner of Cake By Alissa. “And they can look really coolwhen you set them up. They also make really great favors, and caneven act as a place setting or centerpiece for your tables.”

Pie not? Whether you’re looking for pumpkin and apple pies tocomplement a fall wedding, or blueberry and strawberry rhubarbpies to go with a spring or summer celebration, fruit pies are adelightful treat sure to please you and your guests. Looking forsomething different and unique? Try the pumpkin spice cake fromthe Lake George Baking Company, made from scratch with butter-milk and filled with vanilla mousse in the center.

For the sweet tooth in all of us. Candy stations are anoth-er popular alternative. There’s so much to choose from - chocolatecovered fruits, decorative truffles and bon-bons, gummy candies, mints, even cookies and gum balls! But above all, “it’s all about thecolors,” said April Bruno, owner of Jo-Anne’s Candy House inWilton, “especially if you display them in decorative vases or vessels.” And, of course, variety.

Personalize your candy with custom-made wrappers to add thatunique touch to your stations, complete with a special message orsignature from the bride and groom.

Have fun! “Enjoy the journey,” said Alberino, “and have funwith designing your cake. Whatever you want to do, it’s all up toyou!”

• Select a song that fits, one that reminds you of your love for one another.

Lucy is a couple of years younger than Rory, which ofcourse is hardly that much of a difference now that thetwo are in their late 20s. But as teens attending

Saratoga Springs High School, the age difference was just wideenough to ensure that both their paths never really crossed. Aftergraduating, Rory went off to SUNY Albany, Lucy to FIT inNew York City. Absolute strangers with hundreds of milesbetween them, it would seem that Lucy and Rory were destinedto remain strangers.

But life has a funny way of working out, and mutual friendswith mischief in their eyes are sometimes all you need to givethings a push in the right direction.

“About a month before I met him, I had been planning toopen up my store here,” said Lucy, owner of Lucia Boutique onBroadway. “It was originally going to be just a summer venturetype of thing,” she says, and laughs. “I don’t know why I everthought that would work.”

Lucy still remembers the exact date she and Rory were firstintroduced – “February 10, 2006,” she says, unprompted. Before mutual friends introduced the pair, Lucy planned to stay

in Saratoga only for the summer. But after meeting Rory, itbecame clear rather quickly that, business or no business, Lucywould be sticking around for more than just a season.

“We both immediately got along so well,” said Lucy. “Themore and more we got to know each other, the more we fell inlove. There was never really any question.”

“It happened very quickly for me,” said Rory, who suddenlyfound himself going to extraordinary lengths to spend as muchtime as possible with Lucy.

in Rome, distance that had once kept the pair separate andunknown seemed like hardly any hurdle at all. For the firsttime in his life, Rory found himself boarding an airliner andcrossing the Atlantic, where he met up with Lucy for eightdays of sightseeing and gallivanting through one of theworld’s most romantic locations.

But for Rory, “It was just another opportunity to spendtime with Lucy. Being away from each other for threemonths was a little difficult,” he admitted, “and so goingover to Europe and visiting with her was just a great oppor-tunity for me.”

Rome set the stage for the couple, who four years latertrekked back to Europe to visit the Cliffs of Moher inCounty Clare, Ireland. Surrounded by the breathtakingscenery high up on the hills, Rory found himself nervousand out of breath.

“I had bought the ring at Finkle Jewelers here and decid-ed to try and sneak it through customs hidden in my boot,”said Rory, who after skirting security planned to propose toLucy in Ireland.

The setting couldn’t have been more perfect.“I remember thinking, as I was struck by the beauty of the

setting, that if he was going to propose this would be a greatplace,” said Lucy.

One year later, June 11, 2011, Lucy and Rory Moran weremarried in a retrofitted family barn, draped with sparklingcrystal chandeliers and bursting with close family andfriends. The two have rarely been apart since.

Travel, food, and traveling for food have become some-thing the new couple loves to do together. In fact, Rory, whoplans to open a new restaurant called Comfort Kitchen inthe near future, already has a dish set to commemorate hisnew wife and their common interests.

“It’s named after the first meal she made for me, completewith figs and local goat cheese,” said Rory. “I call it: TheLucy Salad.”

A Halloween RuseThrough

the Years{Tales of love, marriage and family}

“Everytime we would go out or see people that we knew, they’d tell us about how great the Halloween party was. I wouldalways look at him and he would go, ‘I know, I didn’t inviteyou,’” said Jill.

It was largely their existing friendship that helped the couplesurvive the initial stumble. But it didn’t hurt that the next year,Dan pulled out all the stops for Jill’s first Halloween party.

Dressed as a couple from the roaring 20s, Dan had to excusehimself from the festivities for a moment to pick up his brotherfrom the airport.

“That was the ruse, anyway,” said Dan. A little while later a limousine pulled up to the curb outside

Dan’s party. “The limo just waited there until I went outside to see who

might be pulling up,” said Jill, “and then he popped out in frontof everyone with this big ring that he had made and he proposedto me that way. It was great! I really had no idea!”

Humor has played a huge role in Dan and Jill’s relationship. The couple laughs easily and often with each other, and theirgood-natured jibes and digs are always underscored withwarmth and affection. Still, marriage isn’t something that justhappens, the couple admits. It’s something that needs to beworked at from both sides, something that takes both care andattention.

“At the beginning, she really didn’t have much experiencewith handling money, so setting up a household budget wasdicey. But I was amazed at how good a cook she was, and thatmade all the difference,” said Dan. “I’d put her spaghetti andmeatballs up against anyone’s!”

“His confidence about where he was going was always soattractive to me. He always thought a lot about himself!” Jilljokes. “But after marriage, I was pleasantly surprised that duringdisagreements, he’s the perservering one, the one that stays andinsists on working things out.”

“Bottom line – get those spaghetti and meatballs!” Dan jokedback.

It all began with a little red dress. “I knew then,” saidDan, thinking back to a day over 20 years ago whensparks began to fly. “I said to myself – this is the

woman that I’ll marry.”“He still asks me if I have that dress!” said Jill. The marriage between Dan and Jill Snyder is firmly rooted in

friendship, a solid foundation that has only helped to strengthentheir bond for well over a decade as man and wife. But when theduo first started dating, the transition from casual friends tosomething more was, admittedly, a little rocky.

“Before Dan and I got together, Dan would always throw thebest Halloween parties,” said Jill. “But when we first started dat-ing (it was in September), he did not invite me to the party forthat first year.”

It was, Dan admits, an error on his part, and one that it tooksome time to live down.

Humor is the secret ingredient inDan and Jill’s relationship.

Forever and Always{Tales of love, marriage and family}

E d and Veronica Stevens have much to be proud of –two daughters, two sons, eight grandchildren, threegreat-grandchildren and 55 years of marriage – but

none of that would have been possible if the pair hadn’t agreedto meet on a blind date nearly 60 years ago.

“Our first date was chaperoned roller skating,” said Ed, whofirst met Veronica in 1952 while both were attending SaratogaSprings High School.

“There were immediate sparks,” added Veronica, as shelooks over at her longtime husband and smiles. Somehow, afterover half a century of marriage together, those sparks still fly.

It wasn’t long before the couple was engaged. Ed was still ajunior in high school when he proposed to his young bride-to-be. Just a few years later, in July of 1956, the couple was wed.

Looking back at the Stevens’ wedding photos, it’s hard not tobe struck by how young and fresh-faced the couple looks. Withmuch of their lives ahead of them, both were still in the processof discovering who they were and, in many respects, what theyeach wanted out of life. One’s answer may not always have

coincided with the other’s, and yet somehow, after all this time, the Stevens have not only made their marriage work – they’veseen it flourish and grow with each passing year.

“Well, to make a marriage work, it all has to be grounded inlove, of course,” said Veronica. “But the common interests thatwe enjoy together such as travel and golf – it’s those things thatkeep us together,” said Ed, finishing Veronica’s thought.

“Not to mention involvement in your children’s activities,”Veronica chimed back in. “From our son’s baseball to ourgrandson’s basketball, all of that really binds us together as afamily.”

Shared activities are still a huge part of what keeps theStevens’ marriage strong and true, from golfing trips to MyrtleBeach to road trips down country drives and tiny side streets. But it’s work, not just leisure, that has also kept Ed andVeronica as close as they are today.

In 1986, the couple founded the business EBI – ExcelsiorBeverages, Inc., a family business they operated together forseven years.

“It was great having the whole family involved with the busi-ness,” said Veronica, “particularly around the holidays, when youwouldn’t believe the activity!”

Family is, of course, the most important part of Ed andVeronica’s life together. After 55 years spent building, raising andsupporting their family, both find it a source of immeasurable joywhen everyone comes together for the holidays.

“We’re just so happy that the whole family has stayed mostlylocal,” said Veronica, who noted that the furthest away a familymember lives is Fort Edward. “It leads to the most wonderful hol-iday gatherings, something we used to host, but now – even bet-ter, I get to go and enjoy them!”

Even the grandchildren have mostly decided to make theSaratoga region their home, something the couple finds constantstrength and happiness in.

“Family is the biggest thing in life,” said Veronica, surroundedby portraits of her children, grandchildren, great-grandchildrenand more.

“It’s without a doubt the most important thing there is,” Edagreed.

F airy tales really do come true. Just askPatty Riggi. Her autumn wedding at theHall of Springs surpassed every girlish

fantasy – it was beyond her most outrageous dreams.Vincent Riggi, Patty’s doting Prince Charming, also

absorbed the enchantment of the day, for he too got hiswish. He wanted his bride to feel like a princess at theirwedding, and she most certainly did. In fact, Patty saysbeing married to Vincent makes her feel like a princessevery day.

This fairy tale begins on the morning of October 29,2011, when Patty was slipping into an exquisite weddinggown, custom designed by Lea-Ann Belter Bridal, aToronto designer represented locally by Something BleuBridal. She was a vision in off-white silk satin. The dresswas a modified mermaid with a sweetheart neckline andfluted skirt, featuring delicate lace, hand-embellished withSwarovski crystals and a detachable train. Patty’s hairpiecewas custom made by Tessa Designs with hand-wiredSwarovski crystals to match her gown and jewelry. Shelooked and felt like a princess bride.

The day unfolded with a ceremony and proceedingreception at the Hall of Springs, located on the grounds ofSaratoga Performing Arts Center.

They chose the venue for its size and atmosphere. Withhigh vaulted ceilings and marble floors, the Hall of Springswas ideally suited for their 320 guests and the romanticTuscan-themed décor that transported them across the seato Italy. Carpeting and drapes were installed to enhance theatmosphere and create the perfect environment for the 14-piece band that graced the ears of all in attendance.

“Perfect doesn’t even describe it,” she said.Outside, an oxcart overflowing with a bountiful harvest

of gourds, apples, mums and flowering kale greeted well-wishers with the promise of a memorable evening.

A fountain and spiral topiaries on the car-peted walkway beckoned guests inside.

Thirty thousand roses adorned the interi-or, forming fragrant, delicately-hued arch-es in a chapel created especially for theceremony.

Both Patty and Vince included their fam-ily in the ceremony and celebration.

Patty’s brother, Frankie Eckardt, walkedher down the aisle – a runner embellishedwith the couple’s initials and the date – toher father, who gave her away. Patty’ssons, Johnny and Robert, were ushersalong with Vince’s sons, Adam andMatthew. Her daughter, Nicole, was themaid of honor. Vince’s twin granddaugh-ters, Sophia and Josephine, were flowergirls and his grandson, Adam, was the ringbearer. Ronald Riggi, Vince’s twin brother, was the best man.

A two-hour cocktail reception followedthe beautiful ceremony and included a pigroasted right outside the Hall of Springs, asushi bar, Italian cuisine and seafood.

Deep red roses nestled in a weatheredwagon held place cards to direct guests totheir tables for the surf and turf dinner.Seasonally colored centerpieces inter-spersed with candles graced the tables.

The Sicilian cassata wedding cake withcannoli filling was adorned with ornategold rosettes and leaves. Instead of a brideand groom topper, it was crowned with a

golden vase of flowers. In addition to the Italian cake, guests had a

myriad of desserts to choose from in a specialroom.

Guests danced to a variety of music, fromswing to Italian to disco. “Regardless of whatage you were, they played the music that youwould get out and dance to,” said Patty.

Beneath glowing chandeliers, the couplegracefully danced for the first time as husbandand wife. With his classic black suit and herfloor-length gown, the two glided around thegleaming floor, which was accented by a large, flowing R.

Guests weren’t the only ones dancing.Ricardo Sopin and Iraida Volodina from ArthurMurray Dance Studios, who had taught Pattyand Vince their wedding dance, entertained thecrowd with their artistry. The dancers performedon “Dancing With the Stars” in 2010. Volodinaalso made Patty’s short party dress.

As the evening wound down, the newlywedshad a surprise. The team that created the fairytale wedding had arranged for a fireworks dis-play. And, adding to the magic, during the fire-works delicate snowflakes began to float fromthe sky.

With all the excitement and decadencebrought to their special day, Patty’s favorite partof the wedding was seeing all their family andfriends when they arrived at the Hall of Springs.

With seven siblings and a multitude ofextended family, Patty was pleased that herlarge family could be together for such a happyoccasion, some of them traveling from afar.Adding sweetness to the occasion, Patty’s par-ents, Robert and Mary Eckardt, celebrated their57th wedding anniversary the day before.

With her family beside her and PrinceCharming in her heart, Patty became Mrs. Riggion a perfect autumn day in Saratoga Springs.

“I was very happy that day,” said Patty.“I still am.”
