IND Selain dikenal dengan ribuan pulau, pantai-pantai
yang indah, dan kebudayaan yang kaya, Indonesia juga terkenal dengan makanannya, terutama sambal. Sambal adalah saus pedas yang berupa bumbu. Berbagai variasi cabai adalah bahan utama pembuatan sambal. Saus bumbu pedas ini juga banyak ditemukan dalam kuliner Asia Tenggara seperti di Singapura, Malaysia, dan Sri Lanka. Tapi tidak ada yang melebihi hobi masyarakat Indonesia dalam mengkonsumsi sambal dengan berbagai jenis hidangan karena orang Indonesia menganggap suatu hidangan tidaklah lengkap tanpa sambal.
Untuk membuat sambal, cabai biasanya dicampur dengan rempah-rempah seperti bawang merah, bawang putih, terasi, gula, garam, air jeruk nipis, serai, dan sebagainya, memberikan rasa menggigit di lidah. Semua bumbu dihaluskan, dan digoreng atau disajikan mentah apa adanya. Mengingat banyak masakan Indonesia memiliki karakter hidangan dingin, sambal menjadi populer dengan rasa pedasnya untuk memberikan sensasi panas.
Cabai itu sendiri adalah sejenis buah dari tanaman genus Capsicum, yang berasal dari Amerika dan menyebar ke seluruh dunia mengikuti pelayaran Christoper Columbus pada tahun 1492. Cabai memiliki beberapa khasiat, antara lain mengandung antikoagulan yang dapat mencegah serangan jantung atau stroke yang disebabkan oleh penyumbatan pembuluh darah. Cabai juga mengandung vitamin A dan C yang tinggi. Vitamin C adalah antioksidan, sebuah unsur kimia yang sanggup melawan bahaya radikal bebas.

ENG Apart from being known for its endless
islands, beautiful beaches and rich culture, Indonesia is also famous for its food, namely its sambal. Sambal is a spicy sauce and Indonesia’s staple condiment. Many varieties of chilies are used as the main ingredient of sambal. The condiment is widely known throughout Southeast Asia, in countries like Singapore, Malaysia and Sri Lanka. However, Indonesia sets itself apart with its devotion to eating sambal with any kind of food: Indonesians even often say that a meal is incomplete if served without sambal.
To make sambal, chili peppers are usually mixed with spices such as onion, garlic, shrimp paste, sugar, salt, lemon juice, lemon grass and so on, giving the tongue a dynamic and biting sensation. All the ingredients are mashed, then fried or served raw. Because much of Indonesian food is characterized by cold dishes, sambal has come into popularity by lending its spicy chili flavor to create a hot sensation.
Chilli it self is the fruit of plants from the genus Capsicum, originated in America and spread all over the world following the voyage of Christoper Columbus in 1492. Chilli have some beneficial properties. Capsaicin--the predominant capsaicinoid--works as an anticoagulant which possibly helping prevent heart attacks or strokes caused by blood clot. Chilli are also high in vitamin A and C. Vitamin C is an antioxidant, a chemical substance which is able to eliminated the threat from free radicals.

SAMBAL BAJAKThis sambal comes from Banten, West Java. Made of fried chili, garlic, shrimp paste, nutmeg and other spices, which are all mashed until perfectly blended.

ENG “Mashed chicken” may not sound appealing, but the food stall Bu
Rum has made a hit dish out of just that, called ayam geprek.
Ayam geprek at Bu Rum is a combination of taste and experience. Start with a plate of rice, select from a variety of vegetables including cabbage, jackfruit and green beans. Next choose from tofu, fried tempe, fried egg and the specialty, fried chicken. Add any final touches of garlic or tomato and pick your number of chili peppers. Then watch with awe as an employee grabs your plate and dumps its contents (minus the rice and side dishes) into a giant mortar, takes a pestle and mashes it all—even the chicken—into bite-size pieces. Once thoroughly mashed, everything from the mortar gets thrown back on your plate and voila! ayam geprek.
“Although the presentation is not aesthetically pleasing, it tastes delicious and is one of my favorite Indonesian dishes,” Dean Simmons, UK, says.
Warung owner Bu Ruminah has been serving her special ayam geprek in Jogja since 1982 and has opened up three different food stalls in the city. While other ayam geprek food stalls have started to pop up across the city, Ruminah insists she was the first to bring the dish to Jogja and her stall is the original. Regardless of where it all began, the herd of enthusiastic diners that gather around her ayam geprek serves as testament to its quality.

“Meski penampilannya tidak menarik, rasanya sangat lezat dan ini adalah salah satu makanan Indonesia favoritku,” kata Dean Simmons, pria asal Inggris.

ENG For an ice cream enthusiast such as myself, finding good ice cream in a wide
variety of flavors is like striking gold. Luckily for ice cream lovers throughout the city, Mary Anne’s Artisan Ice Cream & Resto recently opened up on Jl. Kebon Sari 2. Following the success of its ice cream and pancake outlets on Jl. Demangan Baru and Jl. Ring Road Timur 96, the newest location provides an even wider selection of ice cream.
When the Enak team arrived to give the new Mary Anne’s a shot, we stood in awe at the beautiful display of ice cream, available in 54 varieties. After scanning the overwhelming amount of enticing flavors, I finally ordered a crepe filled with three different ice cream flavors: avonutella (a blend of avocado and nutella), mango yogurt and oreo cheese. Incredibly delicious, the combo sent me into a state of sheer bliss. My friend chose the three musketeers flavor, a blend of Skippy peanut butter, Nutella and cheese, which created a nice, luscious taste.
Curious to know more about the restaurant, we ended up chatting with the friendly couple, who we came to know later as the owners of Mary Anne’s: Agung and Anne. They greeted us warmly and told us how it all began. “We both are fans of dessert, especially ice cream. When my wife was pregnant and did not work at the office, she enjoyed exploring ice cream flavors with an ice cream maker as a gift from me. We came up with the idea to have ice cream outlets. With no background in cooking, we did all the experimenting we could, started from reading books, watching a TV program, going abroad to try different countries’ ice creams and more. We now serve homemade ice cream, made from scratch, with an artistic touch,” Agung explained.
After talking at length with the couple, we decided to try another treat they have to offer: signature dishes. “At our other two outlets, customers may enjoy ice cream and pancakes, but here customers can have fine dining in a classic elegant atmosphere in an old colonial building,” Agung said.
Salmon steak and duck breast with champagne sauce finally landed on our table after we ordered. As far as I am concerned, there are several restaurants serving duck breast in Jogja, but this was the first time that I sampled the duck breast with champagne sauce. I found it was so easy to finish the whole dish of tender duck breast, with the sensation of champagne really adding a spark to each bite.
A huge variety of mouth-watering ice cream flavors and savory dishes served in a classic and elegant setting make Mary Anne’s a worthy place to come back to many times.

Saat tim Enak tiba di resto Mary Anne’s yang baru, kami terpukau dengan display 54 varian rasa es krim yang tertata indah. Setelah melihat begitu banyak pilihan rasa yang menarik, aku akhirnya memesan crepe isi es krim dengan 3 varian rasa berbeda: avonutella (kombinasi rasa alpukat dan nutella), mango yogurt dan oreo cheese. Sedangkan temanku memilih varian three musketeer, paduan rasa selai kacang, nutella dan keju, yang menciptakan sensasi rasa yang lezat.
Terdorong oleh keingintahuan kami akan restoran ini, kami akhirnya terlibat perbincangan dengan pasangan muda yang ramah yang kami tahu kemudian adalah pemilik Mary Anne’s: Agung dan Anne. Mereka menyambut kami dengan ramah dan bercerita bagaimana semua ini bermula. “Kami berdua adalah penggemar makanan pencuci mulut,
terutama es krim. Saat istriku mengandung dan tidak bekerja di kantor, dia menikmati eksplorasi rasa es krim dengan menggunakan mesin pembuat es krim hadiah dariku. Akhirnya tercetus ide untuk memiliki outlet es krim. Dengan tidak memiliki latar belakang di dunia memasak, kami melakukan semua yang kami bisa, mulai dari membaca buku, menonton program TV, mencoba es krim di berbagai negara berbeda, dan sebagainya. Kini kami mampu memproduksi es krim kami sendiri, dibuat dari nol dengan sentuhan artistik,” Agung menjelaskan.
Setelah berbincang panjang dengan Agung dan Anne, kami memutuskan untuk mencoba keunggulan mereka yang lain: menu hidangan spesial. “Pada dua outlet kami yang lain, pelanggan bisa menikmati es krim dan pancake, tapi disini pelanggan bisa menikmati santapan lezat di nuansa klasik elegan dari bangunan kolonial kami,” kata Agung.
Steak salmon dan dada bebek dengan saus sampanye akhirnya datang ke meja kami. Setahuku, ada beberapa restoran yang menyajikan dada bebek di Jogja, tapi ini kali pertama aku menemukan dada bebek disajikan dengan saus sampanye. Terasa mudah menghabiskan seporsi dada bebek yang lembut dengan tambahan sensasi rasa sampanye di tiap suapan.
Pilihan rasa es krim yang sangat bervariasi dan hidangan lezat yang disajikan dengan cara yang elegan dan klasik membuat Mary Anne’s menjadi tempat yang istimewa untuk selalu dikunjungi kembali.

ENGWhile cafes are abundant in Jogja, it is not always simple to find a spot that has both a nice brew and chill atmosphere. If searching for a place to sip
some coffee over the morning news, get some work done or hangout with friends, then Ministry of Coffee is worth a visit.
Sitting on Jl. Prawirotaman, Ministry of Coffee is conveniently located near a lot of great lodging and dining options. The two-story cafe offers an open and ambient setting with high ceilings and lots of natural light, with the option to sit outside on the terrace.
While the coffee is where it gets its name, Ministry of Coffee also has a guesthouse, small library and restaurant. Open for breakfast, lunch and dinner, drink some coffee at any time of the day and do not miss the dessert menu, notably the chocolate coffee mousse.
Check out the specialized coffee selection on the menu that includes drinks like Mexican coffee, coffee eggnog and creamy caramel macchiato. Try the espresso vanilla latte though for a sweet treat that still has a strong punch of bold espresso.

ENGTiramisu is a dessert that is
served cold, originating from Tuscany, Italy. The components of tiramisu consist of savoiardi (sponge cake) soaked in espresso mixed with rum, then coated in mascarpone mousse. The mascarpone mousse itself consists of mascarpone cheese, cream cheese, whipped cream, egg yolks and sugar, dusted with cocoa powder. The mixture of these components gives tiramisu its distinctive taste: a blend of espresso, soft cheese and delicious melted chocolate. Tiramisu itself quite appropriately means, “ pick me up” in English.
This month, Melati Yusmarelda presents her favorite recipe for Tuscany Tiramisu developed from authentic recipes of the 17th century. Typically, tiramisu is presented in a cup, but Melati wants to step aside from the mainstream and serve the dish with a concept of modern plating, called deconstructed plating. The idea of deconstruction is to disassemble and rearrange the existing components, leaving a messy impression, but still patterned to have aesthetic value.

disajikan dingin, berasal dari Tuscany, Italia. Komponen tiramisu terdiri dari savoiardi (sponge cake) yang dicelup dalam espresso dicampur dengan rum, dan kemudian di lapisi dengan mousse mascarpone. Mousse mascarpone itu sendiri terdiri dari keju mascarpone, cream cheese, whipped cream, kuning telur dan gula dengan taburan bubuk coklat. Perpaduan dari komponen-komponen ini memberikan rasa tersendiri pada tiramisu: perpaduan antara espresso, keju yang lembut dan coklat leleh yang lezat. Tiramisu sendiri kurang lebih berarti “pilih aku” dalam bahasa Indonesia.
Bulan ini, Melati Yusmarelda menyajikan resep favoritnya untuk Tuscany Tiramisu yang dikembangkan dari resep original di abad 17. Biasanya, tiramisu disajikan dalam gelas, tapi Melati ingin keluar dari mainstream dan menyajikannya dengan konsep “plating”(menata komponen bahan di piring saji) modern, disebut deconstructed plating. Ide dari dekonstruksi adalah mengatur ulang komponen yang ada, memberi kesan berantakan, tapi masih berpola dan memiliki nilai estetika.

LADY FINGER (sponge cake)Ingredients:
115 low-protein flour4 eggs (separate white & yellow)1/8 teaspoon cream of tartar1/8 teaspoon vanilla seeds or1 teaspoon vanilla Jensen80 grams sugar (divided into 2 parts)
Directions:Beat the egg yolks, mix with half of the sugar, keep stirring until looks pale, add the vanilla, set aside.Beat egg whites, cream of tartar, another half of the sugar, keep stirring until stiff, set aside.Combine all of the dough, stir, while pouring the sifted flour (stir without mixer).Put it in a piping bag and put it the oven at a temperature of 180 for 10 minutes.
MASCARPONE MOUSSEIngredients:
250 grams mascarpone cheese50 ounces cream cheese (to taste)300 milliliters whipped cream80-100 grams of sugar4 egg yolks
Directions:Cook the egg yolks and sugar with low heat, stir with balloon whisk until thick, turn off the heat.Put into a mixer bowl, stir gently, add cream cheese, mascarpone.In another bowl, stir whipped cream until stiff, set aside.Combine all of the dough, stir without mixer.
THE FINAL STEPMix coffee, coffee cream and sugar with hot water, add the rum and let it cool.Dip the Lady Finger Sponge into coffee, let it dry.Arrange Lady Finger, mascarpone mousse and chocolate powder in layers.Garnish with chocolate powder, strawberry and mint leaves.
LADY FINGER (sponge cake)Bahan-bahan:
115 gr tepung terigu protein rendah4 btr telur (pisahkan bagian putih dan kuning)1/8 sdt cream of tartar1/8 sdt vanili biji atau 1 sdt vanili Jensen80 gr gula (dibagi menjadi 2 bagian)
Cara memasak:Kocok kuning telur, campur dengan setengah bagian gula, trus kocok sampai terlihat pucat, tambahkan vanilli, sisihkan.Kocok putih telur, cream of tartar, setengah bagian lain dari gula, kocok terus hingga kaku, sisihkan.Campurkan semua adonan, aduk, sambil menuangkan tepung yang telah di ayak (aduk tanpa mixer).Masukkan ke dalam kantong plastik segitiga dan masukkan ke dalam oven pada suhu 180 derajat celsius selama 10 menit.
MASCARPONE MOUSSEBahan-bahan:
250 gr keju mascarpone50 ons cream cheese (secukupnya)300 ml whipped cream80-100 gr gula4 kuning telur
Cara memasak:Masak kuning telur dan gula dengan api kecil, aduk dengan kocokan balon sampai kental, matikan api.Dimasukkan ke dalam mangkuk mixer, aduk perlahan, tambahkan krim keju, mascarpone.Dalam mangkuk lain, aduk whipped cream hingga kaku, sisihkan.Campurkan semua adonan, aduk tanpa mixer.
LANGKAH TERAKHIRCampur kopi, kopi krim dan gula dengan air panas, tambahkan rum dan biarkan dingin.Celupkan Lady Finger Sponge ke kopi, biarkan kering.Tata Lady Finger, mascarpone mousse dan cokelat bubuk berlapis-lapis.Hiasi dengan bubuk coklat, strawberry dan daun mint.

the prestigious Gadjah Wong restaurant. Despite your executive position, you still work in the kitchen. Why not just hire a professional chef so you can stay off your feet?(Laughs), I am not the type of person who can sit still. My hands itch if I’m not holding a pan or knife in the kitchen. But clearly I really like to work hard and want to ensure the best quality for all dishes presented to guests. My husband has also questioned me about when I will stop cooking. And I said, this is my hobby and I’ll keep doing it for all my life.
Tell us how you can be so passionate about cooking.Actually I am always passionate while doing whatever I like. I have always been committed and absolute. Ironically, cooking was the only thing I didn’t want to do when I was a child. I was a tomboy as a kid. I originally come from Klaten,

born as the 11th of 12 children and I was the most tomboyish child among my sisters. My parents were strict and treated us with discipline. At the age of 11, I was given the responsibility to cook for the whole family, in hoping that dealing with the kitchen would make me a little bit more feminine. Initially I was forced to do it. But my parents patiently guided me and supported me not to give up. I had to be patient and diligent, and started enjoying exploring food. Eventually, I fell in love with cooking.
Explain how your career in the culinary world began to when you finally decided to make your own restaurant.For three years I studied cookery at SMKK (equivalent to senior high school), I didn’t only work in the culinary world after graduation. I’ve worked as a waitress, cashier, gymnastics instructor and tailor while continuing my study at Sanata Dharma University. My first working experience in a restaurant kitchen was at Horizon Hotel, Ancol, Jakarta. During the job interview, the interviewer doubted my ability to survive in the tough working environment. But I was determined to try; I told them that in one month I would prove that I am capable. At that time, they would not need to pay me at all. If I disappointed them, they should fire me. In fact, I survived and my coworkers were happy because I was able working in tune with them.
Working in the professional culinary world dominated by men is tough. How can you survive?It’s true; working in the kitchen can be so stressful and full of pressure. It requires muscles to lift heavy and hot pans. But although I have a small body, I am hard working and agile. I am happy to give assistance everyday in cooking, cutting vegetables and meat, cleaning up the kitchen and so on. I love the atmosphere of a fast and dynamic work setting, most of my coworker were male. And since I proved that I am reliable, my coworkers respect me.
Now can you tell us about your own exploration in cooking?When I set up this restaurant in 1997, there was no restaurant in Jogja selling Italian and Indian cuisine. This gave me the idea to present a menu of dishes from those countries. I first learned about Indian cuisine from my friend who is originally from India. I happen to have a keen sense of taste, which is very helpful in getting the right flavor in cooking. In addition, I also explore traditional Indonesian cuisine. So my restaurant is known for its triple “I”: Indonesian, Indian and Italian.

Butuh tenaga extra otot untuk mengangkat panci panas dan berat. Namun saya menikmati dan senang setiap hari membantu memasak, memotong sayur, daging, ayam, ikan dan sebagainya sampai membersihkan dapur. Saya suka suasana kerja yang cepat, semangat dan dinamis, mayoritas rekan kerja saya waktu itu pria. Dengan hasil kerja keras yang baik mereka menghargai saya.
Bisakah diceritakan tentang eksplorasi Anda dalam memasak?Saat saya mendirikan restoran ini di tahun 1997 belum ada restoran di Yogya yang menyajikan hidangan Italy dan India. Saya berpikir dan memutuskan mengambil peluang ini untuk menyediakan makanan tersebut. Pertama kali saya mempelajari masakan India dari teman yang berasal dari India. Kebetulan saya memiliki indera perasa yang bagus sehingga mempermudah saya untuk belajar dan mendapatkan rasa yang tepat saat memasak. Saya juga bereksplorasi dengan masakan tradisional Indonesia dan Italy. Oleh karena itu restoran saya di kenal dengan masakan triple “I” yaitu “Indonesia, India dan Italy.

Banyak sekali pilihan pancakes yang pastinya bikin penggila kuliner yang satu ini, jadi ingin nambah dan nambah lagi. Dengan tatanan ruangan yang vintage dan sedikit temaram membuat tempat ini jadi pilihan wajib buat penggila kuliner yang haus spot-spot untuk nongkrong sambil menghabiskan waktu. Menu favorit yang paling saya suka yaitu chocolate pancakes with ice cream, spaghetti tuna blackpepper and orange juice float.... Yummmyy.....

Epic CoffeeI like the concept of having the showroom of a furniture store turned into a nice warm coffee place. It is a great place to spend the afternoon tasting different Indonesian coffee blends. The food is good quality and tasty, although the size of the portions is small and does not correspond with the very high prices. Friendly staff and very nice environment. I recommend the beef burger and any of the coffee blends. The ice coffee – a vanilla ice cream scoop with a dash of espresso - is delicious.
