DirectionsRoux: In a large saucepan over medium heat,combine 1 1/2 cup of butter and flour. Cookstirring, until flour taste disappears or until a goldenbrown color, about 7 minutes. Season with salt andpepper to taste. Remove from heat and set aside.

In a large sauce pan over medium heat, cookshrimp shells and onion in 1/4 cup of butter untilonions are translucent. Stir in garlic, paprika,tomato paste and Worcestershire sauce and cookfor 8 minutes mixing everything well together. Addbrandy and burn off the alcohol. Let simmer forabout 4 minutes. Strain through a fine wire meshor a cheesecloth. Take the strained ingredients andadd them back to your flour and butter saucepan.Add the cream and simmer in saucepan stirringvery well so nothing sticks to the bottom. Cookyour medium-diced shrimp with 1 3/4 tsp. ofbutter in a separate saute pan over medium heatuntil translucent. Add to the soup and enjoy.

Garnish with fresh chives and a little swirl of extravirgin olive oil. A toasted baguette is always goodfor dipping. Serves 6.

With the gift-giving season upon us, we oftenhear, “It’s the thought that counts.” While youmay indeed be thinking fondly of friends andloved ones when giving gifts this holidayseason, how often do you really take the timeto pick a thoughtful gift? When we give agift, do we ever consider how much symbol-ism we wrap up with the package?

Let’s consider, for a moment, how much sym-bolism is in a bottle of wine.

You can convey much more than ordinaryseason’s greetings this year with wine; a greatbottle symbolizes the fellowship and connectionwe feel with others. A gift that can be enjoyedwith family and close friends, or can commemo-rate a special time and place with absent lovedones, a bottle of wine is no ordinary stockingstuffer. Scouring your local wine shop for thatrare vintage for a special somebody can bemore rewarding than standing in line for thelatest (and soon to be outdated) gadget.

Wine also captures wonderful moments in time.

1. Don’t go to parties hungry.

If you’re going to a party in the evening, besure to eat a healthy lunch and snack in theafternoon.

2. The choice is yours.

Instead of focusing on what you cannot orshould not have, think about makinghealthier choices.

3. Start with veggies and nuts.

When you arrive at the party, scan the foodtable and go for the veggie tray first and maybea small handful of nuts. Then decide whichitems you might want to sample.

4. Avoid mindless eating.

7. Exercise can erase some “mistakes.”

Offset extra calories with an additional exerciseclass, walk on the treadmill or other form ofphysical activity.

8. Walk it off.

Go for family walk instead of sitting on thecouch after a big meal.

9. Take time to de-stress.

Practice relaxation techniques, such as deepbreathing and/or treat yourself to a massageduring the hectic holiday season. Exercise isalso a great way to de-stress and re-energize.

10. Focus on family and friends and fun – not food.

PELICAN – The Brown Pelican is enter-taining to watch. They feed on mid-sized fishthat they capture by diving from above andthen scooping or dipping the fish into theirpouch, which acts as a flexible dip net.Most of their prey has little commercialvalue. Please obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws.

Travel the pathways at speeds that allow for the safety of pedestrians and other users.

Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles.

Please do not ride on roads where a pathway is available.

Please ride single file and keep a safe distance from other bicyclists.

WATCH OUT FOR MOTORISTS! Motorists must yield to pedestrians and bicyclists within marked crossings, but they may not see you.

Please yield to pedestrians. When resting or stopped, please move off the pathway.

Most sections of the pathways are not illuminated. If you must bike at night, please wear light-colored clothing or carry a flashlight. Bicycles must have a

red rear reflector and a headlight when biking at night.

When approaching slower pathway users from behind, please sound yourwarning device, or call out, “Passing on your left.” Always pass on the left.

Bicyclists should always wear a helmet, especially children 12 and under.

Make eye contact and use hand signals. Assume other bicyclists and motorists don’t see you. Hand signals tell motorists and other path users what you intend

to do and will ensure everyone’s safe enjoyment of the pathways.

Be courteous, alert and predictable.

A sense of calm pervades the salt marsh and thebeach. Shorter days and cooler temperaturesforetell the arrival of winter. Whether you callHilton Head Island home – or some far awayplace – everywhere surrenders to seasonalchanges.

The dolphin population has thinned – migrantshave moved out and are likely cruising theCarolina coastline. Local watermen have stowedcrabbing and shrimping gear and now are busyharvesting oysters. Eagles have re-establishedpair bonds and nests, laid eggs and patientlyawait the hatching of their chicks.

I love to be on the water throughout the winter.The water seems so clear, nature seems sorelaxed. Life in the salt marsh is not nearly asexuberant as in summer, and I know that thisenvironment is preparing for the spring. Like afield gone fallow. Resting.

Offshore, all sorts of cool animals are laying inwait.

On a recent walk on the beach, I noticed severalabandoned carapaces (shells or coverings) ofHorseshoe Crabs. Perhaps you’ve seen them too.

Most noticeable are the remains of the adults;brownish and oval in shape, the carapace canmeasure up to 15 inches across. Within thespecies, females are generally larger than themales. Males are identified by the shallow curveon the front end of the carapace – shaped thisway so the male can easily rest on top of thefemale during mating. As I flip over my find, I seethat the body and legs are long gone.

Expired horseshoe crabs wash up on the beachand provide valuable food for the myriad col-lection of godwits, terns and gulls. Smallercarapaces can also be found now and then –as it grows, the horseshoe crab molts and will

Winter is on its way and so are our migratorywaterfowl. Soon our freshwater ponds will bedotted with birds. One of the most attractive isthe Hooded Merganser; their white and blackhoods are hard to miss.

Hooded Mergansers (Lophodytes cucullatus) aresmall diving ducks. Native to North America,dispersed throughout Canada and the UnitedStates, they can be found in forested wetlandsand swamps while breeding.

As they are short-distance migrants, during thewinter they are more commonly seen in coastalareas. While Hooded Mergansers are seenyear-round in South Carolina, the highestconcentration is found on the Great Lakes.

All Merganser species have sawbill beaks –long, slender and serrated with a hook at theend – perfect for controlling slippery fish,crustaceans and aquatic insects. HoodedMergansers have excellent eyesight underwater, allowing them to be great hunters. Anictating membrane, analogous to goggles,protects their eyes from debris.

As mergansers are diving ducks, their feet arelocated further back towards their tail. Whilethis makes it difficult for them to walk on land,it aids in their diving abilities. This foot posi-tion allows them to tip the larger portion oftheir body into the water and then use theirwebbed feet to propel themselves further down.

This time of year is great for spotting HoodedMergansers forming mated pairs.

They begin the breeding process over winter,gathering in ponds in small groups. The malesdevelop a large white patch on their hoodsand flare these feathers to attract females.After a series of dances, which may includebobbing heads and extending of wings,

males and females establish their relation-ship. They will winter together here in ourfreshwater ponds before heading furtherinland to nest.

Hooded Mergansers prefer nesting in cavitiesanywhere from 10 to 50 feet up in the air. Theyuse cavities in trees, hollowed out by WoodPeckers, as their most common nesting area,but have also been known to use Wood Duckboxes. Females will add some of their downfeathers to the nesting area and lay anywherefrom nine to 11 eggs. The male HoodedMerganser leaves the female shortly after thestart of incubation.

The female incubates the eggs for an averageof 33 days. Within 24 hours of the chickshatching, the mother encourages them out ofthe nest. They will go directly to the water, wherethe chicks instinctively know how to dive andcatch insects.

As a form of defense against predators, chickswill dive underwater or freeze in place. MotherMergansers have also been known to feigninjuries to draw attention away from her chicks.The chicks generally leave their mother fiveweeks after their hatching. Once they reachthe age of two, the cycle begins again.

Although mucky and smelly, the salt marsh is an important part of theLowcountry.

In actuality, the salt marsh produces more food for the environmentthan rain forests. The green grass that dominates the marsh is calledsalt marsh cord grass or Spartina. When this cord grass dies eachwinter and decomposes, its nutrients are released into the marsh mud,creeks, streams and even into the ocean. These nutrients begin thefood chain for the entire Southeastern coastal area.

Mastering the golf swing is by no means asimple task. However, the frustration experi-enced by many weekend hackers stems fromthe lack of knowledge as to the science of golf,as it does the appreciation of precise mechanics.

Once you know how a golf swing is supposedto behave, you can begin to try to perfect andemulate it. Until you know how the relationshipbetween ball, club and science is supposed towork, you won’t know what you’re trying toexecute.

So let’s forget swing planes, hip turns and wristhinges for a moment and examine the first ofthree most crucial scientific aspects of under-standing the golf swing – the trampoline effectbetween the ball and clubface.

The Trampoline Effect

If you’re standing on a trampoline and youpush down with your legs, what happens next?The trampoline pushes you back up. Keep thisin mind the next time you’re standing over agolf ball.

When a club comes down and its face makescontact with the ball, two things occur. First,the ball compresses, and then the clubfacecompresses. When the face then trampolinesback out after compression, the ball is launchedslingshot-style into the air.

Because the ricochet action between the balland clubface happens at a speed too fast forthe human eye, it can be difficult to trust. Asa result, recreational golfers often try to “sweep”or “scoop” their shots, because they do not

understand or trust that the trampoline actionoccurs as a result of a downward strike.

It isn’t the strength of your arms and hands thatcreates distance and velocity, but the convergedelasticity of the ball and clubface.

The Smashing Tees Drill

By “smashing tees,” you can prepare yourselfto better enable the trampoline effect to workits magic.

Place a tee in the ground as though you werepreparing for a drive. When you swing with aniron, focus on striking the tee. This will forceyou to maintain a downward trajectory, insteadof inadvertently scooping the ball and losingthe trampoline effect.

Move the tee a little lower with each success-ful swing, still focusing on striking the tee.Continue the drill until the tee is essentiallyburied.

At this point, a ball placed in the same posi-tion will be ricocheted with greater distancebecause of the trampoline effect.
