    Creamy Lemon Tarts

    About This Recipe

    "These are perfect to serve at a get together, this recipe m akes a ton of

    tarts (about 50 m ini tarts) but the recipe can be cut in half if desired. The

    original recipe states to prepare the lem on m ixture on top of the stove, but

    this tends to scorch easily so the second tim e I m ade it, it worked out

    better in the m icrow ave, but you can definitely prepare it on top of the

    stove in a heavy-bottom ed saucepan if desired. Although it is always

    better to use fresh lem on juice, I use the juice of two lem ons and bottled lem on juice to m ake up the 1

    cup, this is very lem ony and tart, so you m ight want to adjust the sugar to suit taste, just add in m ore

    while the m ixture is cooking."

    Ingredients

    6 1/3-7 prepared tart shells, baked and cooled

    1/3 cup white sugar ( add in m ore sugar to taste if desired while filling is cooking)1 tablespoon cornstarch

    1/2 tablespoon lem on zest

    1/4 cup fresh lem on juice

    7/8 egg yolks, slightly beaten

    1/4 cup half-and-half cream

    1/8 cup whipping cream ( unwhipped)

    1/8 cup butter or 1/8 cup m argarine, cut into pieces

    1/8 cup sour cream

    1/4 to taste cool whip frozen w hipped topping, thawed

    Directions

    In the m icrowave (I use m y 8-cup Pyrex m easuring cup for this) or on top of the stove (using a

    heavy-bottom ed sauce pan) com bine sugar, cornstarch, lem on zest, lem on juice, egg yolks, half

    and half and whipping cream (can use 2 cups half and half cream if desired and om it the whipping

    cream ); whisk to com bine.

    M icrowave on HIG H until thick (rem oving about every m inute to whisk/stir).2.

    Cook until thickened.3.

    Stir in butter; whisk until butter has m elted and the m ixture is sm ooth.4.

    Cool to alm ost room tem perature, stirring every so often.5.

    Stir in sour cream until well blended.6.

    Divide evenly between baked tart shells.7.

    Top w ith a dollup of Cool W hip.8.
