“Clean” Raspberry Cheesecake Ingredients: 1 Tub of Organic Quark Cheese (healthy alternative to Phillie Cheese), 375g (we purchase ours from Organic Gertrude’s on Station St in Fairfield) 125g of frozen Raspberries 1/8 of a Cup of Raw Honey 1 packet of Gelatin (follow instructions on the packet) Choice of fruit and cream for garnishing Directions: Take berries out of freezer and allow to thaw, not completely Place in a food processor and process till pureed into frozen granules In a separate bowl use an electric hand beater to whip the Quark until runny and soft Add all ingredients except gelatin Add gelatin Pour into small cups about 85 ml each Place in fridge for 3-4 hours or until set Remove and garnish as desired with fruit and cream Serve Serves 8 Terri Batsakis
