From a demo derby to bullriding from country music toclassic rock by a local favoritethe entertainment venue ofthe 2014 Clayton County Fairhas something for everyone
The rst big event is Thursday July 31 at 830 pm when country crooner Josh Thompson takes the stageKnown for his modern blendof country and Southern rock Thompson is quickly becom-ing a fan favorite from Maineto Washington and all pointsin between His live showshave earned him a solid fanbase and the respect of otheracts who follow his openinglead Thompson has opened
for artists like Brad PaisleyEric Church Justin Moore andLynyrd Skynrd
Thompsonrsquos debut albumldquoWay Out Hererdquo containedpowerful Top 20 tunes like theamped-up ldquoBeer on the Tablerdquoand the prideful title track Hismost recent album producedunder a new label subtly in-corporates new sonic elements ndash pulsing electronic soundsan old-school clavinet drum-machine beats and a gang vocalor two But not so many thatthey overwhelm the core ofthe songs
ldquoTherersquos a lot of overdubsounds kind of track-y beatsthat do create an ambianceand ow through this record to give it some unityrdquo Thompsonsaid ldquoBut the most importantpart of music is the breath you know ndash the air the spaceWhen that gets too muddiedup I start to have a problem with it When it adds thenthatrsquos greatrdquo
One other notably freshaspect to the album is Thomp-sonrsquos voice He pushes the up-per limits of his register nim-bly projecting condence even
as he hits the most vulnerableparts of his audio persona Thompson grew up in
Wisconsin sliding into the con-struction business at the ripeold age of 12 and expecting thatthe rest of his life would be builtaround pouring concrete indriveways and oce buildings
But his focus got derailed whenhe hit 21 He bought a guitar asan o-hours distraction and itsoon became a 247 obsessionHe moved to Nashville in 2005 worked construction to pay thebills but ultimately decided to give music a full-time try
Josh Thompson has foundhis own freedom He does whathe does just because itrsquos who heis And Turn It Up is an albumintended for people who want toamplify their individuality

Re-create fair avors at homeOne of the great things
about the county fair is all of thefun foods available there Andsince much of the time spentthere is spent walking the ex -tra calories are justied rightRightmdashif you plan on walkingan extra 15 miles to work o abag of cotton candy or 3 miles tokeep that funnel cake from nd-ing a place on your hips
Big portions with lots ofsugar and fat calories character-ize many of the foods we tradi-tionally eat at fairs and carnivalsFor many of us attending thefair wouldnrsquot be nearly as muchfun without these tasty treatsSo how much exercise does ittake to walk o our favorite fair
foodsWe burn approximately 100
calories by walking one mile sohere are the distances we needto walk to burn o the calo-ries contained in some of ourfavorite midway indulgencesCaramel applemdash3 miles largecorn dogmdash45 miles cottoncandymdash15 miles funnel cakemdash 3 miles 32 oz soft drinkmdash25miles sno-conemdash25 miles andsoft pretzelmdash3 miles
Does this mean we needto load our picnic basket withcarrot and celery sticks beforeheading to the fair No Witha little planning itrsquos possible tot in many favorite fair foodsHerersquos how
Quench your thirst with asmall soft drink instead of largeBetter yet drink water
Split foods among severalpeople For example share alarge funnel cake with friendsNo one gets overloaded yet ev-eryone gets a taste
Plan times to sit down andeat rather than graze from oneend of the fair to the other
Limit yourself to one treatChoose reasonable serving sizesof lower sugar and fat foods
Vendors have becomemore aware of fair-goers desireto avoid a steady diet of fattyfoods The St Paulrsquos food standfor example oers fruit and vegetable cups
If want to recreate the a- vor of fair food at home hereare a few recipes to get youstarted Wersquove included recipesfor corn dogs with a rich butter-
milk batter old-fashioned funnelcakes and kettle corn

to 365 degrees In a large bowlcombine our cornmeal sugarbaking powder and salt Stir inbacon drippings Make a well inthe center and pour in egg but-termilk and baking soda Mixuntil ingredients are smooth and well blended
Pat the hot dogs dry with
paper towels so batter will stickInsert wooden stick into theend of each hot dog Dip hotdogs in batter one at a timeshaking o excess batter Deepfry a few at a time in hot oil un-til brown Drain on paper towelsbefore serving

County Fair Corn Dogs1 quart oil for deep frying 1 cup our23 cup yellow cornmeal14 cup sugar2 tsps baking powder1 tsp salt2 T bacon drippings1 egg beaten114 cups buttermilk12 tsp baking soda 2 pounds hot dogsWooden sticksHeat oil in a deep fryer
to 365 degrees In a large bowlcombine our cornmeal sugarbaking powder and salt Stir inbacon drippings Make a well inthe center and pour in egg but-termilk and baking soda Mixuntil ingredients are smooth and well blended
Pat the hot dogs dry with
paper towels so batter will stickInsert wooden stick into theend of each hot dog Dip hotdogs in batter one at a timeshaking o excess batter Deepfry a few at a time in hot oil un-til brown Drain on paper towelsbefore serving
Funnel Cakes8 cups vegetable oil112 cups milk2 eggs2 cups our1 tsp baking powder12 tsp ground cinnamon12 tsp salt34 cup powdered sugarIn a deep fryer or heavy

Funnel Cakes8 cups vegetable oil112 cups milk2 eggs2 cups our1 tsp baking powder12 tsp ground cinnamon12 tsp salt34 cup powdered sugarIn a deep fryer or heavy
skillet heat oil to 375 degreesIn a large bowl beat milk andeggs together Combine ourbaking powder cinnamon andsalt Stir into egg mixture untilsmooth Cover the hole of a fun-nel with ngertip Pour 1 cup ofbatter into the funnel Swirl bat-ter in the hot oil starting from
the center and continuing untilthe funnel cake is 6 to 7 inchesround Fry on both sides until golden brown Remove from oiland dry on paper towels Sprin-kle with powdered sugar andserve warm
Kettle Corn 14 cup vegetable oil14 cup sugar12 cup unpopped popcorn
kernelsHeat vegetable oil in a larg -
er pot over medium heat Oncehot stir in sugar and popcornCover and shake the pot con-stantly to keep the sugar from
burning Once the popping hasslowed to one pop every 2 or 3seconds remove the pot fromthe heat and continue to shakeuntil all of the popping hasstopped Pour into a large bowland cool before serving
