Cracker CookiesShared by Suzanne Taitte

Ingredients1 sleeve of Keebler Club Crackers

(the green box)1 ½ cups sliced almonds 2 sticks of butter¾ cup sugar

Procedure: Cover a cookie sheet that has sides with heavy aluminum foil. Arrange the crackers side by side on the foil. If there is still room on the cookie sheet, fold the foil to make a tight fit so that there is no space around the crackers.

Sprinkle the sliced almonds over the crackers.

In a heavy saucepan melt the butter with the sugar over very low heat and stir until smooth.

Drizzle the sugar/butter mixture evenly over the crackers.

Bake at 350 for 15-20 minutes until golden.

Cool thoroughly.

Peel the foil one row at a time and break apart the cracker cookies, which should separate at each cracker’s edge.

Store in an air tight container in away from heat.

Ingredients • 1/2 cup maraschino cherries, drained and finely chopped (1 small jar)• 2-1/2 cups all-purpose flour • 1/2 cup sugar • 1 cup cold butter • 12 ounces pkg white chocolate chips• 1/2 teaspoon almond extract

1. Preheat oven to 325 degrees F. 2. In a large bowl, combine flour and sugar. Using a pastry blender, cut in the butter until mixture

resembles fine crumbs. Stir in drained cherries,

almond extract, and chocolate chips. 3. Shape dough into 3/4-inch balls. Place balls 2 inches apart on an ungreased cookie sheet. Using the

bottom of a drinking glass dipped in sugar, flatten balls to 1-1/2-inch rounds. 4. Bake in preheated oven for 12 to 14 minutes or until centers are set and eggs are starting to tan. Cool for 1 minute on cookie sheet. Transfer cookies to a wire

rack and let cool.

• When making the ‘cookie balls’ she dipped/rolled the entire ball in a little bowl of sugar.

• She did smash the cookie balls with a glass – that part worked out fine for her.
