Step One: Stick the Kettle On

Get some water in the kettle and get it on.

Step Two: Weigh Your Coffee

For this brew guide we’ll be using 42g coffee to about 700g of water which is a ratio of about 1:16 coffee to water. You can play with this, try ratios between 1:15 and 1:20.

Weigh out 42g coffee. If using pre-ground coffee skip to Step Four

Step Three: Grind your coffee

You’ll want to use a Medium to Medium/Coarse Grind Size – should be similar to kosher salt.

Step Four: Prepare The Filter

Chemex recommend using their own brand filters due to the taste they produce. There are, however, other alternatives out there.

Grab one and place it in the top of the Chemex. Open it out in a cone making sure the 3 layered side is facing the pouring spout, this will stop the filter from collapsing and constricting air flow.

Step Five: Clean the Filter and Warm Your Equipment

Boil the kettle and pour the water through the filter slowly, this will wash away any papery taste.

Give the Chemex a swirl to warm the glass, then discard the water.

Step Six: Ready, Set, Bloom

Pour the ground coffee into the filter and give it a shake to level off. Reset your scale to zero.

The kettle should have boiled by now, let it cool for 30 seconds.

Press start on your timer and add 80-90 gram of water to the coffee, make sure you get all the coffee grounds wet. Allow to bloom for 30-40 seconds…… Smell those aromas!!

Step Seven: Pour and Brew

At the 40 second mark continue adding water slowly in a circular motion until you reach about 500g and let the water draw down a little.

After about 60 seconds, top the water up to 700 grams, make sure you pay attention to any darker areas to ensure even extraction.

By the time the water has filtered through the coffee you should be around the 4 minute mark.

Troubleshooting: If your coffee tastes bitter it’s possible you over extracted your coffee and if it’s sour you might have under extracted. If the brew was over extracted, try grinding your coffee coarser next time or finer if under extracted.

Step Eight: Enjoy!

Throw away your filter, give your Chemex a rinse then all that’s left to do is enjoy.
