by Caroline Ossorio

Last year around this time, I had the opportunity to interview Chef Jeremy, a Renton Local and the head chef for both Rain City Catering at the Renton Piazza and the Seattle Mariners.

Chef Jeremy taught me how to make Edgar Martinez’s favorite pasta at the player’s kitchen at Safeco Field, a comforting bowl of carbs fi lled with cream, butter, pasta, ribbons of pepperoni and more cream.

It was divine. And with baseball season starting

back up again, I thought it would be fun to catch up over a healthy alternative to the delectable but sloth-inducing pasta that Chef Jeremy and his business partner Chef Kenny at Rain City Catering concocted.

Neighbors with the Renton Chamber of Commerce, they run the Events center at the downtown Renton Piazza.

Chef Jeremy and Chef Kenny have a staff of six fulltime employees, but the other morning we had the kitchen to

ourselves and I was excited to learn their recipe for a tasty and healthy version of Edgar’s favorite pasta in a jiffy.

But just because it’s fast doe snot mean they lose their attention to detail on which they pride themselves, such as making sure to heat dinner rolls.

“I don’t like bread that’s cold with hard butter chips. So we take the time to butter the rolls and warm the bread…it’s

extra steps that take up a large chunk of time but these are the details that really differentiate Rain City Catering from the pack,” Chef Jeremy said.

I took a photo of the simple mis en place that Chef Jeremy had prepared:

Sliced pre-grilled chicken, pre-cooked wheat pasta, veggies, grated parmesan, tomato paste.

The two chefs work together like cheese and crackers: each brings a unique set of skills to the table.

Chef Kenny began to grill the peppers and diagonally cut yellow squash and zucchini, but not for too long.

“Only about a minute on each side to get the smoky grill mark for fl avor,” Chef Kenny said. “We don’t have to take the time to char the vegetables but on a simple dish like this it adds a tenderness and a smokiness to the vegetables, just attention to detail and a little more fi nesse.”

When it comes to taking care of the guest, Chef Jeremy and Chef Kenny are on the same page, verse and chapter.

As Chef Kenny tonged the veggies off the grill, Chef Jeremy heated the pan with a healthy amount of the garlic-infused oil that he keeps on the side of the grill. Every week Chef J crushes and minces fresh garlic into a container and then pours about three cups of olive oil and just lets it sit voila olive infused garlic for his recipes.

“Grapeseed oil is also a healthy alternative,” Chef Kenny added, bringing up the roasted veggies as Chef Jeremy began to sweat some chopped garlic, onions and mushrooms.

Their back-and-forth comes from many years of friendship and is a unique part of their business. They have been friends

since they became neighbors when Chef Jeremy was 3 and Chef Kenny was 5.

And in the best of partnerships, each contributes their unique skill set to create a powerful force, as a result their business has grown. The Renton Event Center is almost booked up for the year, they have a new contract with the Mariners, (Chef Jeremy cooks for the Mariners, Chef Kenny cooks for the opposing team) and they do a robust business of off-site catering.

“When we fi rst started out we came from nothing, so we had our dreams and hit the ground running. We had no idea about pricing, we were just so happy when we got business. We look back on what we charged and were just like, ‘what were we thinking?’”

Along the way they have learned how to be organized in their business and with experience they value what they have to offer.

“We charged so little because we didn’t know and we didn’t value ourselves…now we have learned to be organized—to the penny and tally every minute we spend on what we’re doing and we’ve learned to value ourselves,” Chef Jeremy said.

I watched Chef Jeremy bring the other ingredients together in the sauté pan: the pre-cooked penne noodles, tomato paste, veggies, and chicken stock and pour the pasta onto a plate that Chef Kenny had eased over with. Chef Jeremy sprinkled on parmesan and Chef Kenny wiped a drip of sauce off the side and added chopped parsley.

What can I say? I felt special. And, the dish was delicious; just as good as the coma-inducing comfort food pasta. The wheat noodles lightly coated in a light olive oil, garlicky sauce were al dente, and delicious.

Chef Jeremy loves to make people happy through his food. As I was eating the plate, he was smiling, but I got the feeling he would prefer to make the creamy comfort food that we all love to eat.

I love interviewing self-made people like Chef Jeremy and Chef Kenny from Rain City Catering because I can relate to their journey AND of course there is always a scrumptious plate of food involved.

And at the root of all their success, they are still humble. Their experience, drive and passion always is at the core of whatever they do, in catering and life.

(StatePoint) Whether it’s the warm weather, our country’s birthday or just because school’s out -- summer is the perfect time to celebrate. From Memorial Day to Labor Day, families have the opportunity to head outdoors to enjoy the spirited season with all-American food, fireworks and fun.

Here are some family-friendly ideas for a positively patriotic summer.

PICNICS AND PARTIES

What’s more festive than gathering friends and family for a summer picnic in your backyard or a local park? A summer soiree, complete with food, décor and entertainment, can be done simply. Starting with the menu, in-season fruits from your local famer’s market, like strawberries and blueberries, add patriotic pizazz and fresh flavors to picnic-style snacks. And who can resist American barbecue favorites like hot dogs and hamburgers to round out a delicious day?

No party is complete without decorations. Instead of store-bought décor, tap into kids’ creativity and keep them busy with handmade crafts. Make a bold banner for the backyard, a wreath for the front door, a playful pinwheel or a celebratory top hat for extra flare. Duck Tape is the perfect medium for this type of crafting. It’s available in over 250 colors and designs, including red, white and blue, as well as its U.S. Flag print and other patriotic designs.

Once guests have arrived, keep them entertained with pre-planned games and activities. Turn on the sprinklers to cool down; or have kids decorate bikes, trikes or scooters for an impromptu parade around the neighborhood.

FAMILY-FRIENDLY FESTIVALS

Want to enjoy the experience without being a host? Find a festival instead. There are many options around the country -- but for a truly star-studded celebration, check out this year’s Americana-themed 13th Annual Avon Heritage Duck Tape Festival during Father’s Day weekend.

Located in Avon, Ohio, this special event features a variety of opportunities to celebrate your pride for the USA -- from a one-of-a-kind parade and life-sized patriotic Duck Tape sculptures to hands-on arts and crafts. There’s also an opportunity to

participate in a special fashion show where you can show off your crafting talents, and pride, by modeling outfits made from the sticky stuff. Of course, there are also all-American food favorites, rides, family-friendly games, live entertainment and more -- for a stars and stripes spectacle the whole family can enjoy.

HISTORICAL HAPPENINGS

School may be out for the summer, but that doesn’t mean learning has to stop. Embrace our nation’s heritage by visiting locations with patriotic significance. It’s a great opportunity to educate yourself, and the kids, on the importance of our nation’s beginnings.

Check with your local historical society for nearby historical sites, museums, memorial and monuments, or pack up the car and take a patriotic road trip. Spend some time in our nation’s capital to pay respects to fallen soldiers at the Vietnam Veterans Memorial, tour Yorktown Battlefield at Colonial National Historical Park in Virginia, or honor Lady Liberty in New York City. Wherever you land, it’s clear that our country has a rich history of which to be proud.

From patriotic parties and family-friendly festivals to memorable, meaningful moments, this summer, show off your love for the red, white and blue.

(StatePoint) Whether you are celebrating an anniversary, a new job, throwing a massive party, or just gathering with close friends and family, one of the best ways to toast is with bubbly!

However, when it comes to choosing the right bottle for the festivities, some might not know where to start. Chantelle Pabros, fine wine consultant at Morrell & Company Wine in NYC, offers advice on how to choose the right bottle of bubbles for every type of celebration.

“There are many different kinds of sparkling wine available, such as Cava, Prosecco, etc. Yet, I always advise customers to go with the bubbly classic on special evenings: Champagne. What better way to treat yourself than with something special and iconic?” says Pabros.

To be considered Champagne, a wine must hail from the Champagne region in France, using a combination of Chardonnay, Pinot Noir, or Pinot Meunier varietals, and undergoing strict winemaking restrictions, such as minimal years of aging. There are many Champagnes on the market. Chantelle’s top pick?

“Champagne Taittinger; it’s one of the last remaining family owned and operated marque Champagne houses,” she says. “They are known for the consistent quality of their Champagne and the deep care and experience put behind every bottle. Their signature style is Chardonnay driven, which offers an expressive, toasty style that is both elegant and delicious. Last but not least, you can find it in most wine stores.”

Looking for a Champagne to serve at a large party with friends and family? Pabros recommends Champagne Taittinger’s flagship wine, Brut La Francais NV.

“If you’re new to Champagne, start with this wine. It’s a dry, classic style, widely available, and pairs well with every type of food. Your guests will thank you for making their night so memorable!”

Perhaps you find yourself invited to a dessert party? Bring a bottle of

Champagne Taittinger Nocturne NV.

“This is a sec style Champagne, meaning it has just a touch of sweetness that begs to be paired with desserts. It will go perfectly with any type of dessert, from a raspberry tarte to chocolate cake pops. If you have a sweet tooth, this Champagne is for you,” says Chantelle.

Celebrating a special, intimate night at home with a loved one? Toast with something really special, such as Champagne Taittinger Comtes Rosé.

“If you really want a wow factor, you can’t go wrong with Champagne Taittinger’s tte de cuvee. It has a cult following amongst sommeliers because it is one of the most consistent in quality for this type of Champagne over the last 50 years and it comes in a beautiful bottle. It will most certainly offer a most memorable Champagne experience,” adds Pabros.

For more Champagne information, visit www.taittinger.com.

The right drink will complement your party or occasion. Take care to pick a bubbly that will make your celebration more meaningful and enjoyable.

A Champagne Guide forAll Your Upcoming Celebrations

If you remember your own prom like it was yesterday, you may be surprised to

learn that kids today are celebrating the big dance differently these days.

Here are three major ways the big dance has changed:

• Teens are no longer simply asking their dates to attend the dance with them. Elaborate “promposals” include airplane banner fly-overs and giant duct tape posters.

• Last year, the average household spent $918 on prom, a price tag that’s skyrocketed over the years. Girls are typically spending around $449 between a dress, accessories, professional hair and nails, etc. And while guys generally spend less, they’re still shelling out an average of $282 on prom-related expenses.

• With a look toward college, which has increased in cost by 40 percent in the last decade, many teens are finding creative ways to save on prom expenses, such as wearing Duck Tape. The Duck brand Stuck at Prom Scholarship Contest encourages creative prom-goers to design their own Duck Tape prom wear for the chance to win college

scholarships. Annually, the contest offers more than $50,000 in scholarship dollars and has attracted more than 7,000 entrants over the last 15 years. For more information about the contest, visit www.stuckatprom.com.

While much has changed about prom, music, dancing and lifelong memories are still essential parts of the fun.

Three Fun Facts for theBig Dance

(StatePoint) The face of marriage is changing and so are the ways couples are choosing to celebrate the occasion.

For example, more couples who already have children are celebrating not just their union to each other, but their official union as a family, and the number of same sex married couples has doubled since 2012, according to the U.S. Census Bureau.

“The way people think about weddings has changed dramatically in the last decade, and we have to evolve with those changes,” says Nelson Tejeda, senior vice president and chief merchandising officer of Things Remembered, a leading retailer of personalized gifts.

With 50 years of experience providing personalized wedding gifts and accessories, the experts at Things Remembered have witnessed a lot of transformations through the years. They are sharing a few insights into today’s top contemporary wedding trends.

Rethinking SettingMany brides are thinking outside the box when it comes to

wedding décor. While formal venues with regal place settings once ruled the day; a great portion of weddings now have a chic rustic feel.

Receptions are taking place in barns with exposed rafters, on ranches and in lodges. Elements like placards on simple beige cardstock, burlap table runners and place mats, and rustic drinkware like personalized craft beer glasses and mason jars give receptions a warm, cozy feel.

Additionally, many couples are choosing to celebrate with a tighter knit group of friends and family in far-flung locations.

“Destination weddings give couples an opportunity to spend more on each guest,” says Tejeda. “Rather than a typical wedding favor, guests may expect to receive hotel care packages with high-end toiletries and personalized gifts, like waffle weave robes or monogrammed cosmetic cases.”

BUILDING YOUR HOMEWith so many people living together before marriage, most

couples already have the basics they need when it comes to

entertaining and keeping the house in order. Registries today are an opportunity to upgrade your current assortment of household goods.

“Couples are crafting their own monograms. They incorporate them throughout their wedding, from their invitations to their websites and place settings. Then, after the wedding, they use them to personalize their home décor,” says Tejeda. “Monogrammed cutting boards, towels and wall art have become increasingly popular in recent years.”

CRAFT COCKTAILSBeyond the standard bar offerings, signature drinks

set a tone for the reception and add a bit of personalized cheer.

“Engraved glasses that include the cocktail recipe are becoming a popular wedding keepsake that can be used on anniversaries and future parties, completing the couple’s home bar,” says Tejeda.

Similarly, personalized wedding flutes by Lennox, Wedgwood and Waterford are lending toasts extra meaning while helping couples build their drinkware collection.

For more inspiration on ways to personalize your wedding, visit ThingsRemembered.com/Weddings.

Whether you’re engaged and planning your big day, or you have some weddings on your calendar this year and want to know what to expect, being familiar with contemporary trends can be helpful on everything from picking a gift to choosing décor.

A picture has always been worth more than a thousand words; images capture feelings and retell cherished

memories. Modern technology has increased the value of an image, by making it easier than ever to preserve and share special moments.

While your grandparents may have relied solely on tangible prints to save and share images, today you have access to even more ways to capture, store, share and print memories. These technologies help families and friends feel more connected, regardless of distance. Devices like the Canon Connect Station CS100, a photo and video storage device that can connect to multiple compatible imaging devices, are revolutionizing the 21st century photo album.

Today’s “photo album” is:

• FLEXIBLE - Today, you can snap photos and shoot video on a variety

of digital cameras, from a digital SLR camera like the Canon EOS Rebel T6i or a Canon VIXIA camcorder. The variety of imaging devices make it easier than ever to ensure you never miss the chance to preserve a special moment.

• CONVENIENT - In the early days of digital photography, images

were transferred from the device to a computer through use of a cable or memory card. Today, it’s easy to transfer images from device to device through a variety of means, using products with Wi-Fi and Near Field Communication (NFC) capabilities.

• SHAREABLE - You can send images digitally through a variety of devices. It’s now possible to snap a picture at your child’s sporting event and text or email it immediately to Grandma in another state. Or, you can share entire photo albums wirelessly between users. For example, the Canon Connect Station CS100 allows you to store images on the device wirelessly with the use of a compatible camera or mobile device.

• VAST - A variety of products and services today give you access to an abundance of storage. For a long-term storage solution in the convenience of your own home, this specific Canon device can store about 150,000 photos or 70 hours of Full HD video.

• CREATIVE - Most modern image-capturing devices also come with built-in software to allow you to manipulate images, create video, add effects and more. Once you’ve created the images you desire, it’s easy to transfer them to your preferred storage device, print them out and create physical albums or crafts.

To learn more about the Canon Connect Station CS100 visit www.usa.canon.com.

Graduation marks a major milestone in any student’s life, and the event calls for a celebration to remember. Whether

you’re planning a party in honor of the graduate or commemorating the accomplishment from afar, consider these fun DIY party projects.

Borrow an idea from Kelly Mindell, author of the Studio DIY blog, and look to the yearbook committee for inspiration to make your party decor ultra personal. Graduation Balloon Superlatives feature colorful floating balloons, which bring fun and whimsy to any occasion. The project uses pictures of guests to give each one a special or funny recognition such as “Best Hair” or “Most Likely to be President.” Get creative to recognize all your guests, and have fun watching everyone discover their very own piece of the party.

The best part is this colorful craft can be created anywhere. With a portable

helium tank, you can inflate balloons in all sorts of color combinations for creative uses at home, schools, parks or anywhere you want to celebrate.

For more ideas for honoring this year’s graduating class and all of life’s other celebrations, visit www.balloontime.com, or check out Balloon Time on Facebook, Pinterest and Instagram.

Graduation Balloon Superlatives Supplies:Photos of guestsPrinterThin cardstock (optional)Marker (optional)11-inch (or larger) latex balloonsHelium TankTwine or other stringTape

Instructions: Drop photos from your computer

into a text editing program and crop/resize them to same or similar sizes. Leave a large white border (at least 1/4 inch on sides and top, and about

an inch on bottom) around each photo. Below each photo, type the superlative then print photos. (Or print photos first and trim, leaving same white border. Then handwrite superlatives with a marker.)

If your photos are already printed, cut them down to same size and tape to cardstock. Cut out, leaving the same white border above and write superlatives.

Inflate balloons with the Balloon Time Helium Tank and tie with twine or other string. Attach superlatives to twine using tape.

Let balloons float on ceiling if you’re indoors, or attach weight to bottom of string, behind superlative, and display around party.

Tip: If you want superlatives to be visible from all sides, make two copies of each photo and tape them back to back when attaching to twine. Use a thinner cardstock or paper if you want balloons to float on ceiling. Latex balloons will typically float for 5-7 hours. Temperature, humidity and altitude may affect float time.
