Banana Chocolate Chip Muffins with Dark Chocolate and Sea Salt
Serving: 12 muffins time: 35 minutes difficulty: easy
Ingredients:
2 bananas mashed
1/2 cup chocolate chips (can be semi sweet or milk chocolate chips)
1 1/2 cup all-purpose flour
3/4 tablespoon baking powder
1/2teaspoon baking soda
1/4 teaspoon sea salt
2 eggs
1/3 cup canola oil
1 cup sugar
1 teaspoon vanilla extract
1/3 cup plain whole milk yogurt
1/2 cup Dark melting wafers from Ghirardelli for drizzling
Sea salt for sprinkling
Prepare:
Preheat oven to 350oF.
Line a standard muffin pan with 12 paper liners.
In a large bowl, add flour, baking soda, baking powder and salt.
In a medium bowl, lightly beat the eggs.
Add vanilla extract, oil, yogurt, bananas and sugar. Mix well.
Pour this mixture over the flour and mix with a wooden spoon just until combined. Do not over mix.
Fold in chocolate chips.
Fill the muffins liners 3/4 of the way and bake for about 20 minutes or until golden brown.
Let the muffins cool at room temperature before drizzling with melted chocolate.
Sprinkle sea salt on top of chocolate drizzle.
