Banana Chocolate Chip Muffins A classic.

I find that dark chocolate chips are a nice contrast to

the sweet banana.

Makes about 16 muffins.

Preheat oven to 350.

Line muffin pans with paper liners, or grease.

Mix together 1c sugar

2 eggs

3T milk

3 large bananas, mashed 1/2c canola oil

Mix in another bowl 1t baking powder 1t baking soda

2c flour Make a well in the dry ingredients, pour in the wet

ingredients, and mix together quickly, using as few strokes as possible. Add, stirring very gently 1/2 chocolate chips

Divide mixture among

muffin cups.

Bake 20mins

The secret to moist, tender muffins is in the mixing. Mix wet, mix dry, then gently mix together. It should not take more than twenty strokes with a fork or spoon to amalgamate the mixture. I don't recommend using an electric mixer or processor. Old school is the thing here.
