Tuna Burgers (Serves 4)1 tin of tuna in brine, drained; 1 large onion, finely chopped; 100g breadcrumbs;salt and freshly ground black pepper; 75ml milk; 4 tbsp plain flour for coating; 1 tbsp oil for brushing

1.Thoroughly mash the tuna, and then mix the onion and breadcrumbs. Add seasoning and mix well before stirring in enough milk to bind the mixture.2. Pat the mixture together in a bowl, then cut it into 4 portions. Sprinkle the flour on a clean surface and shape each portion of mixture into a burger measuring 7.5 – 10cm in diameter. Coat the burgers well with flour when shaped.3.Place the burgers under the grill for about 2 minutes

before brushing lightly with oil – this short cooking firms the top of the burgers, making it easier to brush the oil on – then continue cooking for another 5 minutes, until crisp and well browned on top. Turn the burgers and cook as for the first side.

Serving suggestionServe the burgers in toasted

split buns, with lettuce,

tomatoes and cucumber or

Serve with baked beans and a baked potato orFor an Easter treat, serve with pickled onions and curry sauce and Hot Cross Buns.

pushing a wheelbarrow, bending to pull out weeds, squatting to dig holes, all to help burn calories and tone muscles.

5. Kids will learn valuable lessons about patience, responsibility, nurturing, cooporation, creativity, the cycle of life etc.

Persevering with Purpose.....It’s a fact that people enter the business world for their own account, for different reasons. I remember when I decided to pursue a career in law, I had my reasons. In fact when people asked me why I would give up a comfortable government position to become self-employed, I could list the reasons. Whatever those reasons were, not many of them, if any, were big enough to help me make it through the tough times. Tough times are never part of the dreams of starting any business. It is however, part of the reality of growing ones business. So how then, do we persevere, through those challenging times when giving up seems to be the easiest thing to do? I have come to learn that in life, nothing that

we attempt doing ends wrong, it starts wrong. It therefore comes back to the questions of WHY did I start my business? Whatever your reason might be, if it does not coincide with your purpose and passion, you will find it extremely more difficult through those challenging times. Having the skill or qualifications to pursue a certain business career, is never enough. Our skill should be supported by a deep sincere passion to do it and then doing whatever we do should have a purpose. To often in life and business, we tend to concentrate solely on the other "P" - Profit. We tend to forget that our talents and even our ability to do business and create wealth is given to us but not just for us. We all have a responsibility to use that in order to contribute to a better society. So in conclusion, when the challenges of business and life comes knocking and it will, remember that it is our Purpose + Passion that will enable us to Persevere.
